1 (8 ounce) can tomato sauce
8 fluid ounces water
1 (4 ounce) can diced green chile peppers
½ onion, chopped
1 (1.25 ounce) package taco seasoning mix
1 clove garlic, minced
12 (6 inch) corn tortillas
1 cup shredded lettuce, or to taste
½ cup Cheddar cheese, or to taste
½ cup diced tomatoes, or to taste
¼ cup chopped green onion, or to taste
¼ cup chopped cilantro, or to taste
2 tablespoons sliced olives, or to taste

Steps:

  • Preheat a large skillet over medium-high heat. Add turkey; cook and stir until browned, about 5 minutes. Add tomato sauce, water, green chile peppers, onion, taco seasoning, and garlic; simmer, stirring occasionally, until thickened, about 30 minutes.
  • Spoon turkey mixture over tortillas. Top with lettuce, Cheddar cheese, tomatoes, green onion, cilantro, and sliced olives.

1- 1 1/4 pound lean ground turkey
1 tablespoon olive oil
2 teaspoons granulated beef bouillon
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 tsp EACH smoked paprika, onion powder, garlic powder, dried oregano
1/4-1/2 teaspoon cayenne pepper
2 tablespoons water
1/4 cup Homemade Salsa (or your favorite store bought)
salt to taste
tortillas or taco shells (( Love La Tortilla Factory))
cheese
lettuce
Tomatoes
avocaodes
Guacamole
hot sauce
salsa
sour cream

Steps:

  • Heat olive oil in a large skillet over medium-high.
  • Add ground turkey and all of the seasonings and cook until almost cooked through, but still slightly pink then add salsa and water simmer an additional 5 minutes or until cooked through and reduced. Taste and add salt or additional cayenne or hot sauce to taste.
  • Divide filling between tortillas and serve with your favorite toppings such as tomatoes, avocadoes, lettuce, etc

1 small yellow onion, chopped (1 cup)
1 pound ground turkey (dark and light meat)
1 tablespoon chili powder
1 teaspoon coarse salt

1/2 head iceberg lettuce, shredded
1 medium red tomato, cored and chopped
10 hard taco shells
Sour cream, for garnish

Steps:

  • Heat oil in a large saute pan over medium-high heat. When oil shimmers, add onion and cook until onion becomes translucent. Add turkey and cook, breaking up meat with the side of a spoon, just until meat is cooked through, 3 to 4 minutes.
  • Stir in chili powder, salt, and tomato paste and cook 1 minute. Add broth and simmer, stirring occasionally, until liquid becomes thick and clings to meat.
  • Divide meat mixture, cheese, lettuce, and tomato among taco shells and serve immediately with optional sour cream, pico de gallo, and avocado.

28 oz diced tomato, 1 can, drained
2 cups rice, cooked
1 can black beans, drained, rinsed
1 can corn
1 jar salsa
1 lime, sliced into wedges

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add the peppers and onions and season with salt and pepper, to taste. Cook, stirring occasionally, until vegetables have softened. Remove from pan, set aside.
  • Add ground turkey to hot skillet. Break apart with a wooden spoon to separate.
  • Season with taco seasoning, stir, cooking until meat has browned and cooked through.
  • Stir in tomatoes. Bring to a gentle simmer for about 5 minutes. Remove from heat.
  • To assemble the taco bowls, add a base of rice to 4 food storage containers. Top each with a scoop of black beans, corn, salsa, cheddar cheese, cooked peppers and onions, and taco meat. Garnish with fresh cilantro and a lime wedge.

Approximately 1-pound leftover turkey meat (or 1-pound precooked turkey or chicken)
2 tbsp butter
1 large red onion, chopped fine
1-7 oz. can chopped green chilies, drained
1 - 1-1/2 cups vegetable or chicken stock
Paprika to taste
Adobo to taste
Cumin to taste
Light red chili powder to taste
1 tbsp Worcestershire sauce
The juice of 1 lime
Salt and pepper to taste
White corn tortillas
Sour cream and chopped green onions for garnish

Steps:

  • If using leftover chicken or turkey, separate meat from carcass and tear into bite-sized pieces. A combination of light and dark meat is preferred.
  • If using fresh chicken or turkey, either roast, grill or boil meat first, then shred with a pair of forks. you won't get the right consistency if you just try to cook the meat in the pan.
  • Saute onions in butter with a pinch of salt in a large skillet over medium-high heat, stirring frequently, until onions are translucent. Add green chilies and cook until the aroma turns slightly sweet. (They are packed in vinegar, this needs to be cooked off.)
  • Add turkey and approximately 2/3 cup stock. season with salt, pepper and adobo powder. Reduce heat to medium low and cook for about 5 minutes to allow the meat to heat through. Test for seasoning.
  • Add remaining spices a little at a time, starting with about a teaspoon of each and increasing each a bit at a time until the mixture has the flavor and heat levels that you prefer. (I don't like to give exacts with any seasoning blend like this. use your judgment and go with whatever heat levels you like!)
  • Add Worcestershire sauce, and lime juice. Simmer, stirring often, for an additional 5-10 minutes or until turkey or chicken meat is falling apart in the skillet. Add stock as needed to keep the mixture moist, but not wet.
  • Reduce heat to low and allow to simmer while you prep the rest of the ingredients.
  • The tortillas can be cooked on the stovetop on a lightly greased griddle with just a tiny bit of oil over medium heat, in the microwave in a microwave-safe tortilla warmer or stacked, wrapped in foil in a 350 degree oven for approximately 15 minutes, or until heated through and pliable. (I prefer either of the first two methods) tore tortillas in a tortilla warmer or wrapped in aluminum foil until serving or they will become brittle.

400g pack turkey mince
100g long grain rice , rinsed
420g can kidney bean in water, rinsed and drained
600ml chicken stock
140g frozen sweetcorn , defrosted
small bunch coriander , chopped
8 taco shells
½ iceberg lettuce , shredded
150ml pot soured cream
grated cheese and guacamole , to serve

Steps:

  • Heat the paste in a frying pan with a lid. When hot, add the mince and cook until browned, breaking it up well with a fork. Stir in the rice and beans, and mix well, then add the stock.
  • Cover and simmer for 20-25 mins until the rice is tender, then stir in the sweetcorn and scatter over the coriander. 1/4 cup golden raisin, chopped
2 tablespoons chili powder
2 teaspoons cumin

1 cup tomato sauce
2 cups shredded monterey jack pepper cheese
1 romaine lettuce hearts, shredded
2 firm plum tomatoes, diced
1/2 cup green pimento stuffed olive, chopped

Steps:

  • Preheat the oven to 375°; place 8 large taco shells on a rimmed baking sheet and bake 6-7 minutes or until crisp but not brown; remove from oven.

1 pound turkey scallops

4 corn tortillas
1 cup refried black beans
1/4 cup red salsa
1/4 cup pickled shallots
1 avocado, sliced

Steps:

  • Combine turkey scallops in a mixing bowl with oil, salt and pepper. Heat the grill or dry cast-iron pan over high heat until smoking. Sear the turkey slices about 1 minute per side. Transfer to a cutting board. Chop into 1/2 inch strips and reserve in a bowl with the juices from the board.
  • To make tacos, toast the tortillas. For each serving, stack 2 tortillas and spread with a layer of black beans. Top with seared turkey strips, a tablespoon each of salsa and pickled shallots, and avocado slices. Roll and serve hot.

A delicious alternative to pork or beef, these tacos are made with a medley of veggies, Monterey Jack cheese and turkey sausage meat.

2 Tbsp olive oil
½ small onion, diced
1 cup zucchini, diced
¼ cup mild salsa, plus more for passing at the table
8 oz raw turkey sausages
½ cup shredded Monterey Jack
8 corn tortillas
1 ripe avocado
Salt and pepper
4 leaves iceberg lettuce, shredded
1 wooden spoon
1 medium saute pan
2 medium bowls
Paring knife (use with an adult)
1 fork
1 microwave

Steps:

  • Heat the oil in medium non-stick skillet over medium heat. Add the onion and cook until soft, about 4 minutes. Add the zucchini, the salsa, and a couple tablespoons of water. Cover, cook for 5 minutes, or until the squash is tender. Transfer the vegetable mixture to a bowl with a spoon.
  • Squish the sausage meat from its casing into the same skillet. (Discard the casings.) Break the meat up with a wooden spoon. Cook the meat over medium heat for 3 to 5 minutes or until it loses its color. Add the meat to the vegetables. Add the cheese and stir. Set aside.
  • Cut avocado in half. Using a spoon, scrape the avocado from the skin into another bowl. Smash the avocado with a fork and season with salt and pepper.
  • Wrap the tortillas in moist paper towels. Heat in the microwave for 1 minute or until warm. Lay out the tortillas and divide the turkey mixture evenly on top. Top with lettuce and avocado, fold the tortillas over and serve with salsa.
