Made with just a few simple ingredients, these delicious spinach and feta spanakopita triangles are a fun appetizer recipe to make at home.

Steps:
- Heat olive oil in a large skillet over medium heat. Add the onions and cook, stirring regularly, until it starts to soften, about 5 minutes
- Add the garlic and dill. Cook with the onions, stirring frequently, until caramelized and soft, about 5 more minutes. Set aside and allow to cool.
- Squeeze the defrosted spinach to drain all the water possible. You should end up with around 1 cup of spinach. Transfer to the skillet on top of the onion mixture.
- Add the parsley, green onions, lemon zest, ground pepper, feta cheese to the skillet and stir to distribute mixture evenly.
- Preheat the oven to 375° F. Line a baking sheet with parchment.
- On a clean surface, roll out the phyllo pastry. Cut into 2 ½-3" wide strips lengthwise using a pizza cutter. Cover the pastry with a barely damp towel to prevent it from drying out.
- On a clean surface, layout 1 layer of phyllo pastry and brush it down with a small amount of butter using a pastry brush and very gentle motions.
- Place a second layer of pastry directly on top of the first and brush that with a small amount of butter.
- In one corner of the pastry layers, place 1 heaping tablespoon of filling mixture. Squish it into an approximate triangle that nearly reaches the edges.
- Fold the corner of the pasty with the filling over to reach the nearest opposite edge of the pastry. Then, roll the filling triangle towards the empty end of the pastry. Again, fold the triangle to the nearest opposite side. Repeat these last two steps until you reach the end of the pastry rectangle.
- Place the triangle on the prepared baking sheet and cover with a damp towel. Repeat the assembly with all the pastry sheets and filling. The triangles can be placed fairly close together on the baking sheet, about ½".
- Bake for 20-25 minutes until golden brown and crisp.
- Remove from the oven and allow to cool for 10 minutes before serving.

TURKEY SPANAKOPITA BURGER
Ridiculously Good Turkey Spanakopita Burgers are the best burger you'll ever eat. They're full of classic Greek ingredients like feta, Kalamata olives and healthy spinach that keep them moist and elevate ho-hum ground turkey to juicy, satisfying, burger perfection.

- Heat a large skillet over medium heat. Add olive oil and onion and sauté for about 5 minutes, stirring frequently. Add garlic and cook for 30-60 seconds, stirring frequently. (You don't want the garlic to burn. By the way, if you like garlic like I do, use the 4 cloves.)
- On a cutting board, chop spinach quickly. I grab a fistful, roll it, and cut it into ribbons. You don't get points for finesse with this recipe, so don't overthink it. Add spinach to skillet and cook and stir for another 1-2minutes, just to wilt. Remove mixture from pan to a bowl and allow to cool.
- In a large mixing bowl, place turkey, oregano, pepper, paprika, coriander, thyme and red pepper flakes. (If you have a low stock of herbs and spices, just use the oregano and paprika and call it a day.) Blend, using hands. Add olives, cheese and cooled spinach mixture and blend lightly, using hands, until ingredients are relatively evenly distributed.
- Using hands, form mixture into 4-5 patties, place in a flat covered container and refrigerate for an hour and up to overnight. This allows the burgers to firm up a bit, otherwise they are very soft from all the add-ins.
- When ready to cook, heat a skillet over medium heat, add a tablespoon of olive oil to the pan, add patties and cook for about 5 minutes on each side. (Internal temperature should be 160F degrees, which you can check with an instant-read thermometer if you like.)
- Serves 4-5.

- Position rack in center of the oven and preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
- Place the spinach in a wire-mesh strainer or colander, place over a sink and drain well. Use your hands or a paper towel to squeeze the excess water out of the spinach.
- Place the spinach in a medium mixing bowl. Add the salt, pepper, oregano, parsley, and basil. Stir in the beaten egg, olive oil, and lemon juice. Add the feta cheese and mix well to combine. Set aside.
- Gently unfold the phyllo dough.* Lay 1 sheet of phyllo on a large cutting board and gently brush with the melted butter. Place a second phyllo sheet on top of the first and brush with butter. Repeat 2 more times until you have a stack of 4 phyllo sheets with butter brushed between the layers.
- Using a sharp knife, cut the phyllo sheets lengthwise into 3 strips. Place 2 tablespoons of the spinach filling 1 inch from the bottom end of each strip.
- Take the bottom right corner of the strip between your thumb and finger and fold over the spinach filling to the left to make a triangle. Gently pull up the bottom left corner and fold up to make a second triangle. Continue folding until you reach the top. Place the triangle, seam side down, on the prepared baking sheet. Brush the completed triangle lightly with butter.
- Repeat with the remaining strips and phyllo sheets until all of the filling is used.
- Arrange the triangles 2 inches apart on the baking sheet. Bake for 15 minutes, until golden and heated all the way through. Remove the spanakopita from the oven and cool slightly on the baking sheet.
- Serve warm or at room temperature.

- Place oven rack in center of the oven and preheat to 400 degrees F.
- Preheat a small pan over medium to medium high heat. Add oil and onion and saute 5 minutes. Place onion in a bowl. Add chopped dry, defrosted spinach and season with salt, pepper and nutmeg. Add feta to the bowl and combine it with spinach. Add beaten egg and sour cream to the bowl and combine with cheese, spinach and onion.
- On a large work surface, place 1 sheet of phyllo. Paint half of the sheet with a little melted butter, paying extra attention to your perimeter. Fold sheet in half. Pile 1/4 of your spinach mixture into a log shape working 2 inches from bottom and each side. Tuck bottom up and fold both sides in, then roll and wrap upwards until you reach the edge of the dough sheet. Each pastry will resemble an egg roll. Paint the seam and the ends of the roll with butter and set roll seam side down on a cookie sheet. Repeat and make 4 rolls. Bake 15 minutes or until lightly golden all over and serve.

I'm always looking for a good turkey/chicken burger and this is WONDERFUL. Juicy, full of flavor and not a bland thing about it. Serve with a yogurt cucumber sauce if you like. Works very well on the George Foreman.

- Preheat oven to directions on the package and bake fries until crisp.

Add in feta crumbles then chicken or turkey, grill seasoning and a drizzle of extra-virgin olive oil. Mix and form into 4 patties, 1-inch thick. Raise heat on pan to medium-high. Add patties and cook 6 inches on each side.
- Season the sliced cucumbers and tomatoes with salt and pepper. Toast rolls, if you prefer.
- Place remaining chopped cucumber, the crushed clove of garlic, yogurt, 1 teaspoon oregano and juice of 1/2 lemon in a food processor. Add a little salt and process the sauce until smooth. Transfer to a small dish and serve with the fries as a dipping sauce. Rinse out the processor bowl and return to base.
- Place red peppers, parsley and olives in food processor, season with salt and pepper and process until a paste forms. Place cooked burgers on roll bottoms. Top the burgers with sliced cucumber, tomato, reserved red onions, shredded arugula and hot peppers, if using. Slather roll tops with red pepper and olive paste and serve with chips of choice.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
- Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.

- Mix together the cream cheese and Dijon mustard until smooth. Spread each tortilla with about 2 tablespoons of the cream cheese mixture, spreading to within 1/4 inch of the edge of the tortillas.
