BACON-WRAPPED TURKEY ROLL

Bacon-Wrapped Turkey Roll image

Yes, turkey is the star on Thanksgiving, but a bacon-weave layer over the top makes it extra-special for the holiday. Even better, the bacon bastes the meat as it cooks, infusing it (and the stuffing within) with flavor and keeping it from drying out.

Categories     main-dish

Time 2h30m

Yield 12 servings

Number Of Ingredients 5

2 boneless, skinless turkey breasts (about 3 pounds each)
21 slices bacon (about 1 1/2 pounds)
3 cups of your favorite stuffing or one 6-ounce box stuffing mix, prepared according to package instructions
1 cup favorite gravy
1/2 cup cranberry sauce

Steps:

  • Preheat the oven to 400 degrees F. Set a wire rack on a baking sheet.
  • Lay 1 turkey breast smooth-side down on a cutting board. There will be a thin side and a thick side. At about the midway point between them, slice horizontally into the thick side to within 2 inches of the outer edge so that you can open that side like a book and have 1 long piece. Pound the turkey with a mallet to an even thickness of about 1 inch. Repeat with the remaining breast.
  • Place a large piece of parchment on a work surface. Arrange 12 slices of bacon horizontally on the parchment in 6 lines, with 2 slices of bacon slightly overlapping per line. Arrange the 6 lines so they are touching but not overlapping, with the ends lining up to form a rectangle. Working with the remaining 9 slices, weave the bacon in an over-under pattern by lifting alternating slices of the horizontal bacon lines and vertically placing a slice of bacon over or under as needed to create a woven lattice design.
  • Place the turkey breasts horizontally on the bacon, overlapping slightly. Scoop the stuffing into the center of the turkey. Holding the bacon and turkey, roll them up away from you, making sure the roll ends up seam-side down. (Use the parchment to help you keep the bacon and turkey together as you roll.) Tie with twine in 3 spots across the roll and once lengthwise. Transfer to the prepared baking sheet.
  • Bake until the internal temperature registers 155 degrees F on an instant-read thermometer, 1 hour 40 minutes to 1 hour 45 minutes. Let rest for 10 to 15 minutes.
  • Slice and serve with the gravy and cranberry sauce.

PROSCIUTTO-WRAPPED TURKEY ROLL

Prosciutto-wrapped turkey roll image

Combine turkey breast, garlic cream cheese and prosciutto with our retro roll. It's a fabulous alternative to a classic roast turkey this Christmas

Provided by Barney Desmazery

Categories     Dinner, Lunch, Main course

Time 1h45m

Yield Serves 8-10

Number Of Ingredients 7

2 x 150g packs garlic and herb cream cheese
1 tbsp wholegrain mustard
½ lemon , juiced
1 ½kg boneless, skinless turkey breast
16 slices of prosciutto
small bunch sage leaves
1 tbsp olive oil

Steps:

  • Beat the cream cheese, mustard and lemon juice together in a bowl, then season with a little salt and pepper and set aside.
  • Butterfly the turkey breast by cutting into one side of it so you can open it like a book. Cover with cling film and use a meat mallet or rolling pin to gently bash it out to a rectangle about 3cm thick, trimming the edges to neaten it up. You can reserve this trimmings to use in another recipe, such as a turkey curry.
  • Lay a large sheet of baking parchment on your work surface. Lay the prosciutto over it, overlapping the slices to make a rectangular shape larger than the turkey, then place 8 sage leaves all the way down the centre of the prosciutto in a line, lengthways. Lay the turkey, skinned-side down, on the prosciutto and spread liberally with the cheese mixture. Use the edge of the baking parchment to lift and roll the prosciutto and turkey, tucking and rolling it as you would a roulade, to form a long log. Tie at intervals with string. If chilling, wrap well in cling film and put in the fridge. Can be prepared up to this point, then chilled for up to two days.
  • To cook, heat oven to 200C/180C fan/gas 6. Remove the cling film and put the turkey roll seam-side down on a baking tray. Brush with a little oil and roast for 1 hr, or until the prosciutto has crisped up and the meat is cooked all the way through (a digital probe should read at least 70C). Scatter over additional sage leaves, if you like, and leave to rest for at least 15 mins before carving.

THE COMPLETE LIST OF SUSHI ROLLS, RANKED - THE DAILY MEAL

From thedailymeal.com
  • Saba roll. As previously mentioned, strong-tasting fish is an absolute must for satisfying and delicious sushi rolls. This is why mackerel, known as saba, is so good in a roll, as Matt Foreman, a sushi chef, explains to Thrillist.
  • Uni roll. Sushi often relies on serving marine species that are overfished and endangered. As highlighted by the World Wildlife Fund, many species, such as bluefin tuna, are suffering immense population decline, with stocks over 97% smaller than they once were.
  • Iwashi roll. There is a tendency in the western world to favor mild-tasting fish when eating sushi. In fact, some of the world's most popular sushi rolls — such as salmon and escolar — have achieved popularity thanks to this very fact (via Thrillist).
  • Unagi roll. Eel forms an important part of Japanese cuisine and is featured heavily in sushi. This is largely because the meat is celebrated for its savory flavors and delicate texture, per Tofugu.
  • Ikura roll. Japan is a large consumer of salmon roe, importing around 20,000 tons annually from the United States and Russia, as reported by SeafoodNews.com.
  • California roll. As the most famous example of Americanized sushi, the California roll has elicited strong responses ever since it was invented in North America during the 60s (via Britannica).
  • Tako roll. Octopus might not be the first thing you think of ordering when in a sushi restaurant, but maybe it should be. Not only does octopus offer something different from the usual fare of tuna and salmon, but it is also an ideal option for those who want to eat sushi without having to consume raw flesh.
  • Salmon roll. Salmon is a hugely popular fish that can be found in restaurants around the world. As National Geographic reports, Americans alone eat 450,000 tons of the fish every year.
  • Kappa maki. To a lot of people, sushi means fish and, more specifically, raw fish. However, vegetarian sushi also has a long history both in Japan and abroad.
  • Spicy tuna roll. A flavor not often found in traditional Japanese sushi rolls is chili, as the spice is thought to overpower the delicate flavor of the raw fish and vinegared rice.
