Nothing screams fall like healthy Stuffed Acorn Squash recipe with ground turkey, kale and the perfect blend of spices. This show-stopping autumn inspired meal is comforting, colorful and loaded with earthy flavors; it's fancy enough for the holidays yet easy enough for a simple weeknight meal!

3 smaller acorn squash (about 1.5 lbs each)
1 tbsp avocado oil
Pinch of salt and ground black pepper
1 medium onion (finely chopped)
3 garlic cloves (minced)
1 tbsp avocado oil
1 lb ground turkey (extra lean)
3 cups spinach and/or kale (packed and coarsely shopped)
2 tbsp tomato paste
2 tsp dried rosemary
3 tbsp parsley (finely chopped)
1/2 tsp salt
Ground black pepper (to taste)
3/4 cup any hard cheese (shredded & divided)

Steps:

  • Preheat oven to 450 degrees F. To cut squash open, place a rubber mat under the cutting board and a towel on top. Place squash on the towel and cut through using long serrated knife, cut all around. You might get some help from a meat tenderizer but I found it wasn't necessary. Now scoop out the seeds.
  • Place squash cut side up on a large baking sheet. Brush with 1 tbsp of oil and sprinkle with salt and pepper. Bake for 30 minutes.
  • In the meanwhile, prepare the stuffing by first placing large skillet on a low-medium heat. Add remaining avocado oil and tilt the skillet to coat. Add onion and garlic; cook until translucent, stirring occasionally. Now add turkey and cook for another 7 minutes, stirring and breaking into pieces. Add remaining ingredients (except cheese) and cook for a few more minutes. Remove from heat and stir in 1/2 cup cheese.
  • Stuff opening of each pre-roasted and cooled until safe to handle squash half with stuffing, dividing evenly. Sprinkle with remaining cheese. Return to the oven and bake for another 25 minutes or until tops start to turn golden brown. Serve hot.

2 acorn squashes
2 cups leftover turkey, diced
1 medium onion, diced
1 carrot, diced
3 stalks celery, diced
3 cloves garlic, minced
1 tablespoon fresh rosemary, minced
2 eggs
1 tablespoon olive oil, plus more for drizzling
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Using a sharp knife, slice off the top and bottom of an acorn squash to create flat surfaces. Slice the squash in half and scoop out the seeds with a spoon.
  • Place the squash halves on a baking sheet lined with parchment paper. Drizzle the squash with olive oil and sprinkle with salt and pepper.
  • Bake for 40 minutes, until the squash is tender and easily pierced with a paring knife.
  • Then heat the oil in a large skillet over medium-high heat.
  • Toss in the onion, carrot, celery, salt, pepper, and rosemary and sauté until the vegetables are completely tender, about 8 minutes.
  • Sprinkle in the garlic and sauté until fragrant, about 1 minute.
  • Pour in the turkey leftovers and stir the mixture so that everything is evenly mixed.
  • Pour the mixture into a large bowl and let it cool about 5 minutes.
  • Crack in the eggs and mix so that everything is evenly coated.
  • Spoon the turkey mixture into the squash halves.
  • Bake for 20 minutes, until the turkey mixture has browned slightly. Then serve.

1 pound ground turkey
⅜ cup Italian-seasoned bread crumbs
½ onion, diced
2 tablespoons ketchup
1 large egg
½ teaspoon salt
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
¾ cup shredded mozzarella cheese
1 ounce chopped baby spinach
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
1 ½ teaspoons Dijon mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray (such as Pam®).
  • Mix turkey, bread crumbs, onion, ketchup, egg, salt, garlic powder, and onion powder together in a large bowl.
  • Spread meat mixture over a sheet of parchment paper to form a large square or rectangle. Sprinkle mozzarella cheese and spinach over 1/2 of the meat mixture. Fold other 1/2 of mixture gently over filled side. Press together and shape into a log. Transfer to the prepared baking sheet.

1 small onion, finely chopped
2 cups cubed cooked turkey
2 cups cooked stuffing

2 acorn squash (medium to large)
1 lb turkey sausage, casings removed
1 cup dried cranberries (eyeball it)
1 onion, chopped
1 green bell pepper, chopped
1 (8 ounce) package sliced mushrooms
6 sprigs thyme, leaves removed
2 garlic cloves, minced
1 (8 1/2 ounce) package cornbread, cooked according to directions and crumbled
grated cheese (I used Knight's vail, but mozzarella or other mild cheeses would work)
salt and pepper

Steps:

  • Preheat oven to 400.
  • Cut the stem off the acorn squash so they stand up straight. Cut the squash in half and place cut side down on oiled baking sheet. Bake for 30 minutes while the stuffing cooks.
  • Heat oil in large skillet over medium high heat. Add onions, peppers, mushrooms, garlic, and thyme. Season with salt and pepper. Saute until tender.
  • Add sausage to vegetables and cook through. Season to taste.
  • Add vegetables and sausage to crumbled cornbread. Mix in the dried cranberries.
  • Stuff each squash half with the stuffing mixture and top with cheese. Cover with foil and continue baking for about 30-40 minutes or until squash are tender.

¾ cup chicken stock
1 cup yellow onion, finely diced

  • Preheat the oven to 375°F (190°C). Grease a 9 x 5-inch (22 x 12 cm) loaf pan with butter and line the pan with a piece of parchment paper, leaving overhang on the 2 long sides.
  • Melt the butter in a large pan over medium heat. Add the onion, celery, carrots, ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon ground sage. Cook for 4-5 minutes, or until the vegetables are tender. Transfer to a large bowl and let cool for 15 minutes.

  • Let cool in the pan for 10 minutes, then use the parchment to carefully lift out the meatloaf and transfer to a cutting board. Cut into 1-inch-thick slices and serve immediately.

This makes a substantial vegetarian - or vegan if you leave out the cheese - Thanksgiving main dish. It is another riff on the native American tradition of the Three Sisters - corn, beans, and squash. I used acorn squash here, and it serves as a vessel for the sweet and pungent bean, corn and tomato filling. Acorn squash comes in various sizes; the larger ones, which are sometimes all I can find, take almost an hour to soften and cook through; the finished squash can be cut in half or even into thirds if too big for one serving. With everything that comes on the Thanksgiving sideboard, that will probably be the case. I always bake the squash for about 20 minutes before cutting it in half; they soften up a little bit, which makes it much easier to cut.

4 large or 6 smaller acorn squash
3 tablespoons extra virgin olive oil, plus additional for basting
1 medium onion, finely chopped
1 red pepper, diced
1 28-ounce can chopped tomatoes with juice, pulsed to a coarse purée in a food processor
2 tablespoons tomato paste
2 tablespoons mild honey, maple syrup or pomegranate molasses
2 tablespoons red wine vinegar, sherry vinegar or apple cider vinegar
Salt to taste
1/2 teaspoon cayenne
3 cups cooked pintos, black beans or red beans, or 2 cans, drained and rinsed
1 cup corn kernels
2/3 cup breadcrumbs
2 ounces / 1/2 cup Gruyère, grated

Steps:

  • Heat oven to 375 degrees. Place squash on a baking sheet and bake 20 minutes, until soft enough to easily cut in half. Wait until cool enough to handle (about 15 minutes), then cut in half (stem to tip) and scoop out seeds and membranes.
  • Meanwhile, heat 2 tablespoons of olive oil over medium heat in a large skillet and add onion. Cook, stirring often, until it begins to soften, about 3 minutes. Add red pepper and a generous pinch of salt and cook, stirring, until tender, about 5 minutes. Add tomatoes and tomato paste and cook, stirring often, until tomatoes have cooked down slightly, about 5 minutes. Add honey, maple syrup or pomegranate molasses, vinegar, salt and cayenne, and bring to a simmer. Simmer 8 to 10 minutes, until thick and fragrant. Taste and adjust seasonings. Stir in beans and corn and simmer another 5 minutes.
  • Oil 1 or 2 baking dishes or a sheet pan that will accommodate all the squash. Season cavities and cut sides of the squash with salt and pepper and brush with olive oil or melted butter. Fill with bean mixture. Mix together bread crumbs, Gruyère and remaining olive oil and sprinkle over the filling. Brush exposed edges of squash with oil. Place in the baking dish or on baking sheet and cover tightly with foil. Bake large squash for 45 minutes, check smaller squash after 30 minutes. The flesh should be easy to penetrate with the tip of a knife. Uncover and return to oven for 5 to 10 minutes, or until breadcrumbs and cheese are lightly browned. Serve hot or warm.
