CHICKEN CHOW MEIN CASSEROLE
An easy-to-prepare flavorful casserole that makes great use of leftover chicken.

Steps:
- Grease 1½ quart casserole and set aside. Preheat oven to 350°F.
- Melt butter in skillet over medium heat. Sauté garlic, onion, celery, red pepper, and mushrooms, stirring constantly, for 3-4 minutes, just until the onions are transparent.
- Combine the chicken broth and soup together in bowl or large measuring cup. Stir in the ground ginger and Parmesan cheese. Transfer the sautéed vegetables to large bowl and add the chicken, soup mixture, cashew pieces, and water chestnuts. Mix together. Carefully fold in 1½ oz chow mein noodles. Transfer mixture to prepared casserole and sprinkle with remaining 1 oz chow mein noodles.
- Bake for 30-35 minutes, or until casserole is hot and bubbly.

- In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.

- Preheat oven to 375 degrees.
- Melt butter over medium heat in a medium-large sized pot. Add onion and celery, and saute 1 minute. Add flour and cook, stirring, 1 minute more. Add milk or cream in a gradual stream, stirring constantly to incorporate. Stir in chicken broth and soy sauce. Cook until simmering and thickened, about 6 minutes.

- Start boiling water for the 2 boil-in-a bag rice packets. In a large skillet over medium/high heat, saute the ground beef until almost fully browned. Add the onion and celery and saute for 5 more minutes.
- In a separate large bowl, combine the cream of mushroom, cream of chicken, water, soy sauce, worcestershire sauce, red pepper flakes (exclude chow mien noodles).

- Melt butter in the wok or saute' pan. Saute' onion, celery, and carrots in butter until tender-crisp. Approximately 20 minutes. Saute' in the chopped turkey. Add 1 1/2 cups poultry broth or stock. Add the rinsed bean sprouts and heated through and simmering. Combine 2 Tbsp. water, 2 Tbsp. cornstarch and the soy sauce product in a small bowl. Add to the vegetable mixture and stir until thickened. Add mushrooms and water chestnuts if you're using and heat to serving temperature. Serve hot over Chow Mein Noodles for Chow Mein. Or Serve over rice for Chop Suey.
TURKEY CHOW MEIN WITH FRESH VEGETABLES
Steps:
- Gather the ingredients.
- Mix together sauce ingredients, whisking in cornstarch last.
- Cook noodles according to package directions.
- Heat a wok or frying pan over medium-high to high heat.
- Add 1 tablespoon of oil. When oil is hot, add mushrooms and stir-fry for a minute.
- Remove from pan, add more oil, and stir fry celery and red bell pepper.
- Remove from pan, add more oil, and stir fry onion and garlic.
- Add turkey to pan. Cook for a minute, then add other vegetables back into pan.
- Stir in bean sprouts.

I thought I would start out with one of my simple recipes. Here is an easy skillet meal to help use up all that leftover holiday turkey we all have. Of course, you can substitute chicken or pork also.

- Preheat the oven to 375F. Lightly spray the inside of a 9 by 13-inch casserole dish with cooking spray.
- Add the butter to a large, deep skillet over medium heat. Once melted, add the celery, carrot, red bell pepper, and onion, and turn the heat up to high. Cook, stirring constantly until the vegetables are starting to soften, about 3 to 5 minutes.

- For the turkey filling: Heat the EVOO in a large, deep skillet over medium-high heat and melt in the butter. Add the turkey and cook, crumbling the meat, until browned. Season with the Worcestershire and some salt and pepper. Add the celery, carrots, onions, potatoes and thyme and cook, partially covered, to soften the vegetables, 8 to 10 minutes. Stir in the flour and cook for 1 minute; add the stock and cook to thicken. Stir in the peas until warmed through. Transfer the mixture to a casserole dish.
- For the stuffing: Heat a large skillet over medium heat and add the butter. When melted, add the celery, apples, bay leaf and onions. - 1. Stir broth slowly into Bisquick; pour into an ungreased 1 1/2 quart casseroles. (Mixture will be slightly lumpy- that's a good thing). Stir in remaining ingredients, except noodles.
