1/3 pound ground turkey breast
1/3 pound ground turkey dark meat
1 tablespoon fresh cilantro, chopped
1 tablespoon thinly sliced green onion
1 tablespoon fresh parsley, chopped
1/3 teaspoon cumin
1 slice sourdough bread, diced and dried out overnight
1 large egg, whisked
4 tablespoons corn kernels
Kosher salt and freshly ground black pepper
1 tablespoon grapeseed oil
1 roasted red bell pepper, chopped
1 clove garlic minced
2 tablespoons fresh cilantro, chopped
1/3 teaspoon apple cider vinegar
Kosher salt and freshly ground black pepper
1 tablespoon grapeseed oil
2 tablespoons corn kernels
1 tablespoon diced red bell pepper
1/2 tablespoon diced red onion
2 teaspoons lime juice
Kosher salt and freshly ground black pepper
2 tablespoons fresh cilantro, 1 chopped and 1 left whole for garnish

Steps:

  • For the turkey and corn meatballs: Preheat the oven to 350 degrees F.
  • Combine the turkey breast, dark meat, cilantro, green onions, parsley, cumin, bread, egg, corn and salt and pepper to taste in a large bowl until well mixed. Form into 3 balls.
  • Heat the grapeseed oil in a skillet over medium heat. Sear the meatballs until browned all over, 3 to 5 minutes. Transfer to the oven and cook to an internal temperature of 165 degrees F, about 12 minutes.
  • For the roasted pepper sauce: In a skillet over medium heat, saute the roasted peppers, garlic, cilantro, vinegar and salt and pepper to taste in the grapeseed oil until the peppers are soft, 5 to 6 minutes. Transfer to a blender and puree until smooth. Taste and season.
  • For the corn salsa: In a mixing bowl, combine the corn, bell peppers, onions, lime juice and 1 tablespoon of the cilantro. Season with salt and pepper and set aside.
  • To serve: Place the pepper sauce on a plate. Add the salsa and then the meatballs. Garnish with some extra cilantro leaves.

These juicy meatballs with a tender, light texture are packed with flavorful herbs. The meat mixture is softer than you might expect, thanks to the addition of ricotta, but sacrificing a perfectly round shape is worth it. 2 tablespoons extra-virgin olive oil
2 tablespoons canola oil
3/4 cup finely ground fresh breadcrumbs (from 3 to 4 slices white bread, crusts removed)
1/2 cup milk
1 pound ground turkey (93/7 ratio)
1/2 cup whole milk ricotta cheese
2 tablespoons grated Parmesan
1 clove garlic, grated
1/4 cup packed parsley leaves, finely chopped (about 2 tablespoons chopped)
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
  • Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
  • Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

2 tablespoons olive oil
1 onion, finely chopped
1 rib celery, finely chopped
1/2 small red bell pepper, seeded and finely chopped
2 cloves garlic, finely chopped
1 pound ground turkey
1/2 cup quick-cooking (not instant) oats
1/2 cup grated Parmesan, plus more for serving
1 teaspoon Worcestershire sauce
One 10-ounce package frozen chopped spinach, thawed and excess moisture squeezed-out
Kosher salt and freshly ground black pepper
4 cups prepared marinara sauce
Warm cooked spaghetti, for serving

Steps:

  • Heat the oil in a large wide pot over medium-high heat. Add the onion, celery, bell pepper and garlic and cook, stirring frequently, until soft, about 5 minutes. Transfer to a large bowl and cool. Reserve the pot.
  • Meanwhile, add the turkey, oats, Parmesan, Worcestershire, spinach, 1/2 teaspoon salt and 1/4 teaspoon pepper to the cooled vegetables. Mix well and form into 24 small meatballs.
  • Pour the marinara into the reserved pot and bring to a simmer. Add the meatballs, cover and cook, turning once or twice, until cooked through, about 8 minutes.
  • Serve the meatballs and sauce over spaghetti and serve Parmesan on the side.

2 pounds ground turkey breast
2 teaspoons salt-free garlic and herb seasoning or poultry seasoning
1 egg white
Salt and ground black pepper
2 (15-ounce) cans tomato sauce
2 cups reduced-sodium chicken broth
1 cup chili sauce
1/2 cup cider vinegar
1/2 cup brown sugar
2 teaspoons dried thyme
Mashed Red Potatoes, recipe follows
Steamed Broccoli, recipe follows
8 medium red potatoes, cut into 1-inch pieces (skin on)
6 whole cloves garlic
1 cup light sour cream
4 tablespoons chopped fresh chives
2 cups broccoli florets
2 tablespoons water
Salt and pepper
Lemon wedges
In a microwaveable bowl, add broccoli florets and water. Cover and cook in microwave 2 to 3 minutes, or until crisp tender. Season with salt and pepper, to taste. Serve with lemon, if desired.

Steps:

  • In a large bowl, combine turkey, garlic and herb seasoning, egg white and 1/2 teaspoon each salt and black pepper. Mix well and shape mixture into about 32 meatballs. Place meatballs in bottom of slow cooker.
  • In a medium bowl, whisk together tomato sauce, broth, chili sauce, vinegar, brown sugar, and thyme. Pour mixture over meatballs.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. Season, to taste, with salt and black pepper. Serve half of the Meatballs with Mashed Red Potatoes and Steamed Broccoli. Refrigerate the other half for Turkey-Stuffed Zucchini Boats later in the week.
  • Place potatoes and garlic cloves in a large saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Boil 8 minutes until potatoes are fork-tender. Drain and return potatoes and garlic cloves to pan. Mash in sour cream until desired consistency. Fold in chives. Season, to taste, with salt and pepper.

4 ounces sweetcorn (a little less than 1 cup or 100g ,fresh or frozen)
3 slices day-old white bread, crusts removed
1 lb ground turkey breast (500g) or 1 lb ground turkey (500g)
1 egg
4 scallions or 4 spring onions, finely chopped
2 tablespoons finely chopped parsley
2 1/2 teaspoons ground cumin
1 1/2 teaspoons black pepper
1 garlic clove, crushed
sunflower oil, for frying
4 red bell peppers, quartered with the white parts and seeds removed
3 tablespoons olive oil
1 teaspoon salt
1 ounce cilantro, leaves and stalks (about 12 sprigs or 25g)
1 garlic clove, peeled
1 small mild chile, de-seeded
2 tablespoons sweet chili sauce
2 tablespoons cider vinegar or 2 tablespoons white wine vinegar

Steps:

  • Preheat the oven to 400°F (200°C). In a roasting tray, toss peppers with 2 tbsp of the olive oil and 1/2 teaspoon of the salt, then roast in the oven for 35 minutes or until soft. Transfer the peppers to a bowl and cover with cling film to cool. (You can peel them if you want but it's not necessary.) Place them in a blender or food processor with their roasting juices and add the rest of the sauce ingredients. Process until smooth, then taste and adjust the salt if necessary. Set aside.
  • For the meatballs, place a heavy, non-stick frying pan over a high heat and throw in the corn kernels. Toss them in the hot pan for 2-3 minutes until lightly blackened. Remove and leave to cool.
  • Soak the bread in cold water for a minute, then squeeze well and crumble into a large bowl. Add all the rest of the ingredients except the sunflower oil and mix well with your hands.
  • Pour a 1/5 inch (5mm) depth of sunflower oil into your heavy frying pan. Allow it to heat up well and then fry about a teaspoonful of the turkey mix in it. Remove, let cool a little and then taste. Adjust the amount of salt and pepper in the uncooked mixture to your liking.
  • With wet hands, shape the turkey mix into balls, about the size of golf balls. Cook them in small batches in the hot oil, turning them around in the pan until they are golden brown allover. Transfer to an oven tray, place in the oven at 400°F and cook for about 5 minutes. When you press one with your finger, the meat should bounce back. If unsure, break one open to check that it is cooked inside. Serve hot or warm, with the pepper sauce on the side.

1 tbsp rapeseed oil
1 onion , finely chopped
2 carrots , finely diced
2 celery sticks, finely diced
2 garlic cloves , thinly sliced
1 fennel bulb , halved and thinly sliced, fronds reserved
500g carton tomato passata
500ml reduced-salt chicken stock
2 tbsp chopped parsley
broccoli and potatoes or pasta and salad , to serve
400g pack lean turkey breast mince
4 tbsp porridge oat
1 tsp fennel seed , crushed
1 garlic clove , crushed
spray of oil

Steps:

  • Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, carrots, celery, garlic and fennel, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the passata and stock, cover and leave to simmer for 20 mins.
  • Meanwhile, tip the mince into a large bowl. Add the oats, fennel seeds and leaves, the garlic and plenty of black pepper, and mix in with your hands. Lightly shape into 25 meatballs about the size of a walnut. Spray or rub a non-stick pan with a little oil and gently cook the meatballs until they take on a little colour. Give the sauce a stir, then add the meatballs and parsley. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with broccoli and baby potatoes in their skins, or pasta and salad.

This recipe was my introduction to couscous, and I've never looked back. The first time I made it, I did accidentially use israeli couscous (don't try it!). The cinnamon is very subtle, and the meatballs are very complex in flavor. This is very healthy, and tastes sooo good!

1 cup onion, chopped
1 cup chicken broth
2/3 cup whole wheat couscous
1/2 teaspoon salt, divided
1 cup Baby Spinach
3/4 lb lean ground turkey
1/4 cup egg substitute
1 tablespoon steak sauce
3/4 teaspoon cinnamon
3/4 teaspoon ground cumin
1/4 teaspoon black pepper
1/2 cup water
2 tablespoons tomato paste

Steps:

  • Spray large skillet with cooking spray. Sauté 3/4 cup onion until tender.
  • Bring broth to a boil in small saucepan over high heat, stir in couscous and 1/4 tsp salt. Cover and remove from heat. Let stand 5 minutes. Stir in onion and spinach. Set aside.
  • Meanwhile, combine turkey, egg substitute, remaining 1/4 cup onion, steak sauce, cinnamon, cumin, remaining salt and black pepper in medium bowl. Mix well. Shape into 1 inch balls (makes approximately 24).
  • Spray skillet with cooking spray. Over medium high heat, add meatballs and cook until no longer pink, roughly 7 minutes.
  • Add water and tomato paste to skillet, whisk until blended. Bring to a boil and reduce heat to low. Add meatballs. Cook until meatballs are hot.
  • Serve meatballs and sauce over couscous mixture.
