EASY BAKED ALMOND TURBOT FILLETS

Steps:
- Preheat oven to 425°F (220°C).
- Beat egg and milk together.
- Mix breadcrumbs, oregano, salt and pepper.
- Dip turbot fillets into the egg/milk mixture then coat with breadcrumbs mixture. Layy coated turbot fillets side-by-side in a greased baking pan.
- Mix lemon juice, water and melted butter and pour over turbot fillets sprinkle with minced almonds and onions.
- Bake into preheated oven, uncovered, for approximately 10 minutes or until the flesh is flakes or is no longer translucent.
WHOLE TROUT EN PAPILLOTE
Steps:
- Preheat oven to 400 degrees. Cut 2 sheets of parchment paper large enough to completely cover the fish when folded. Wash and dry the trout. Using a knife, score the fish on 1 side by cutting slits into the flesh just until you feel the bone. Season the trout generously, inside and out with salt and pepper. Spread 1/4 cup of the onions on each sheet of parchment. Place fish on top, scored side up. Stuff the inside of the fish with herbs. (It?s ok if they stick out a bit). Top each fish with 1 1/2 tablespoons of the shallot butter. Cover with the lemon slices. Drizzle 1 tablespoon white wine and 1/2 tablespoon olive oil over each fish. Fold the parchment over the fish. Starting at 1 end, fold the paper on itself, making sure to completely seal it. At the end, fold it underneath itself. Repeat. Place fish on large baking sheet and cook for about 12 to 15 minutes. To serve, place trout en Papillote on a platter. Cut the parchment at the table to ensure that all the aromas stay inside the package.
- In a food processor, combine all ingredients until mixed. Place whipped butter mixture onto a sheet of plastic wrap and roll into a log. Freeze until ready to use. Butter will keep in the freezer for at least a month.
OVEN BAKED (BREADED) TURBOT
It's been a while since I've found Turbot in any store, but found some in Trader Joe's and decided to bake it in the oven. I've made my own bread crumbs for this one out of some stale bread I had in the fridge. I plan to serve some fruit salsa with this fish for Easter.

- 1. Preheat oven to 450'F. Place a large cookie sheet coated with cooking spray into the oven and heat it as the oven heats up.
- 2. Meanwhile cut the fish into chunks. Beat up your egg and coat the fish with it. Mix the breadcrumbs with the herbs, paprika and pepper in a shallow bowl.
- 3. Remove the cookie sheet from the oven. Dip the fish into the egg then into the breadcrumb mixture.
- 4. Put the fish on the cookie sheet and bake in the hot oven turning once at the 10 minute mark, then finish baking.
- 5. Serve warm with tartar sauce or home made salsa.
- 6. Enjoy!
ORANGE ROUGHY IN PARCHMENT

- Preheat the oven to 425 degrees F.
- (220 degrees C.). Cook the
- carrots in 1/2 cup of water for 5 minutes.
- Drain and set aside. Cut the parchment or foil into 2 large pieces, big enough to wrap each fillet in.
- Place one half of the carrots and peapods in the center of the foil.
- Place a fillet on top of the vegetables.
- Pour one half of the lime juice over the fillet and sprinkle with paprika.
- Scatter some of the sliced olives and capers over the top of the fillet. S prinkle some of the chopped parsley on top of the capers.
- Fold the edges of the parchment or foil to completely enclose the fillet and seal them.
- Place on a baking sheet and bake 8 to 10 minutes.
- To serve, place the packet on a serving dish, and cut a slash in the top.
- Open slightly to let the steam escape and serve.

HERB-ROASTED FISH
Steps:
- Preheat the oven to 400 degrees.
- Place the fish fillet on a piece of parchment paper and sprinkle it with the salt and pepper. Drizzle the lemon juice and olive oil over the top of the fillet. Lay the thyme on top and place the olives next to the fillet.
- Beat the egg together with 1 tablespoon of water for an egg wash. Brush the egg wash around the edge of the parchment paper and fold it in half. Carefully fold the edge of the parchment paper under and around the fish to make a package. Place the package on a sheet pan and cook for 12 to 15 minutes, until the fish is cooked through. Serve hot in the parchment paper.
