These are a low-calorie, low-carb, but very tasty, light alternative to a tuna wrap sandwich! Try to choose larger leaves of lettuce with no tears or holes; lettuce leaves are replacing the tortilla in a traditional wrap sandwich. Cheese is optional, but even a little adds a lot of flavor.

1 (6 ounce) can chunk light tuna, drained
2 tablespoons chopped onion
1 tablespoon light mayonnaise
salt and ground black pepper to taste
3 leaves green lettuce, rinsed and patted dry
2 tablespoons finely shredded low-fat Cheddar cheese

Steps:

  • Combine tuna, mayonnaise, onion, salt, and pepper in a bowl.
  • Lay lettuce leaves out. Divide tuna mixture among the leaves, placing it in the middle of each leaf. Sprinkle Cheddar cheese over the tuna. Roll leaves up to create wraps.

5 oz tuna, 2 cans, drained
1 large avocado, diced
1 cup carrot, finely chopped
2 ribs celery, finely chopped
¼ cup red onion, finely chopped
¼ cup dijon mustard
1 tablespoon lemon juice
½ teaspoon garlic powder
salt, to taste
pepper, to taste
4 whole wheat tortillas
4 leaves green leaf lettuce
1 cup cherry tomatoes, halved

Steps:

  • In a large bowl, add the tuna and avocado. Use a fork to smash the avocado and tuna together.
  • Add the carrots, celery, red onion, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir to combine.
  • Lay a tortilla flat on a plate. Lay a lettuce leaf on the tortilla. Scoop ¼ of the tuna mixture into the center of the lettuce and spread down the middle. Top with cherry tomatoes and carefully roll the the tortilla to create a wrap. Repeat with the remaining ingredients.
  • Enjoy!

9 tablespoons extra virgin olive oil
1 1/2 tablespoons white wine vinegar
1 pinch caster sugar
1 bunch mint
1 1/2 kg peas, in pod (approx. 500g podded weight)
assorted salad leaves
2 heads chicory lettuce
3 ripe avocados

Steps:

  • First make the dressing: put the oil and vinegar and a pinch of sugar into a large bowl and then put in a decent handful of chopped mint.
  • Stir well so all is amalgamated.
  • Cook the podded peas for a short time in salted boiling water, just so they are ready, but not soft.
  • Taste after 2 minutes and then keep tasting.
  • Pour peas in colander and then straight away into the bowl of dressing and let steep for an hour or up to a day.
  • Just before serving, stir in about a packetful of mixed salad, the chicory which has been separated into it leaves and the avocado, which should be cut into bite size chunky slices.
  • You may need to drizzle a bit more oil after tossing.
  • serve this on a big plate.
  • Sprinkle with more mint.

  • DRESSING: Slice an avocado in half, and remove the peel and pit. Mash one side of the avocado to get 3 tablespoons mashed avocado. Dice the other side to get about 1/4 cup of diced avocado and set aside. Add the 3 tablespoons mashed avocado to a small bowl. Add in the 1 tablespoon lemon juice, 1/3 cup mayo, 1 teaspoon Dijon mustard, 1 teaspoon olive oil, and salt and pepper to taste.
  • SALAD: Finely dice the celery, pickles, red onion, and parsley. Add the 3 tablespoons celery, 3 tablespoons pickles, 2 tablespoons red onion, and 2 tablespoons parsley to the bowl with the tuna and diced avocado. Add the dressing on top and gently stir to combine. Taste and adjust seasonings to taste. Add extra mayo here if you want a creamier salad (1-4 tablespoons extra).
  • SERVE: Serve in a croissant roll with lettuce, in a lettuce wrap, with pita chips, etc. -- however you'd like to enjoy it! Best enjoyed same day and shortly after making it; the avocado begins to brown after about an hour or two.
