Number Of Ingredients 7

2 cups soy milk or skim milk
2/3 cup roughly chopped firm tofu (about 2 1/2-ounces)
1/2 cup frozen roughly chopped papaya
1/2 cup frozen roughly chopped pineapple
1/2 cup frozen roughly chopped mango
1 tablespoon honey, plus more to taste
1/4 teaspoon vanilla extract

Steps:

  • Place all the ingredients in a blender. Blend, pulsing the machine if necessary, until smooth. Make sure the honey is dissolved. Serve immediately.

1/2 cup old-fashioned rolled oats
1 small banana, peeled and broken into 4 pieces
1 1/2 cups plain unsweetened coconut milk beverage
Juice of 1/2 small lemon (about 1 tablespoon)
1/2 teaspoon pure vanilla extract
Kosher salt
3/4 cup frozen unsweetened mango cubes
3/4 cup frozen unsweetened pineapple cubes
Fresh pineapple wedges, for garnish

Steps:

  • Add the oats to a blender, cover and blend to a fine powder. Add 2 ice cubes, banana, coconut milk, lemon juice, vanilla and 1/8 teaspoon salt, cover and blend until smooth. Add the mango and pineapple, cover and blend until smooth, at least 1 minute.
  • Pour the smoothie into two large chilled glasses and garnish with a pineapple wedge.

From Simple and Delicious - very nice smoothie that is not overly sweet or overly tart...I found it to be a nice balance. They suggested using club soda but I did not see that so substituted a lemon-lime soda which seemed to work (it was even diet!). Please note - to prepare this you use half of all ingredients in the blender at a time so it will take two rotations to make all 6 serviings.

1 (8 ounce) can crushed pineapple, undrained
1 medium mango, peeled & cut into chunks
1 cup fresh strawberries, halved
2 medium kiwi fruits, peeled and quartered
1 tablespoon honey
14 ice cubes
1/2 cup carbonated lemon-lime beverage, chilled (or club soda)

Steps:

  • Place half of all ingredients in blender (except the soda!); cover and process until blended.
  • Stir in 1/4 c soda and pour into chilled glasses then serve immediately.
  • Repeat with the 2nd halve of all ingredients.

1 (14 ounce) can coconut milk
1 (20 ounce) can pineapple chunks in juice
1 ripe mango
1 tablespoon brown sugar (optional)

Steps:

  • Chill can of coconut milk in the fridge.
  • Open can of pineapple and place two to three chunks of pineapple into each square of ice cube tray, pour remaining juice into tray over the chunks. Freeze until solid.
  • Peel mango and chop into pineapple chunk sized cubes and freeze in a ziplock bag or plastic freezer container.
  • Once fruits are frozen, pulse in food processor or blender until you have small, fine bits. I use six pineapple cubes and 1/4 of the mango per serving.
  • Add coconut milk until desired consistency and add brown sugar.
  • Leave leftover fruits in freezer for next time and leave coconut milk in a sealed jar in the fridge for future use.
  • I have also added one frozen banana to the mix and/or a handful of frozen strawberries.
