- Beat cream cheese in small bowl with electric mixer on medium speed until creamy. Add milk, lemon peel and juice; mix well.
- Spoon evenly into 8 dessert glasses; cover. Refrigerate at least 1 hour.
- Place fruit in medium bowl. Add sugar and prepared orange drink; toss to coat. Spoon evenly over desserts; sprinkle with coconut.

- Heat oven to 400°F. In large bowl, beat flour, butter and powdered sugar with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on high speed about 2 minutes or until creamy. Stir in almonds. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake 12 to 15 minutes or until edges are golden brown. Cool completely, about 30 minutes.
- In large bowl, mix cream cheese, granulated sugar and vanilla with spoon. Reserve 1/2 cup of the pineapple. Stir remaining pineapple into cream cheese mixture.
- In chilled medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Fold whipped cream and marshmallows into cream cheese mixture. Spread over crust. Cover and refrigerate at least 4 hours until set but no longer than 48 hours.
- In 1-quart saucepan, place cornstarch. Gradually stir in reserved 1 cup pineapple juice. Cook over medium heat, stirring constantly, until thickened and bubbly. Cook and stir 2 minutes longer. Cool completely, about 30 minutes. Fold in reserved 1/2 cup pineapple, the papaya and kiwifruit. For servings, cut dessert into 5 rows by 3 rows. Serve with fruit mixture. Store covered in refrigerator.

- Heat oven to 400ºF.
- Spray tortillas lightly with cooking spray; sprinkle with cinnamon. Place in single layer on parchment-covered baking sheet. Bake 5 to 7 min. or until crisp. Cool.
- Grate enough lemon peel to measure 1 tsp. zest; reserve for later use. Squeeze 1 tsp. juice from lemon; toss with mangos, bananas and kiwi in medium bowl.
- Process cottage cheese, dry pudding mix, milk and reserved lemon zest in food processor until smooth. Spoon into separate medium bowl; gently stir in 1/2 cup COOL WHIP.
- Spread tortilla chips with pudding mixture just before serving; top with fruit salsa and remaining COOL WHIP.

- For the pudding, combine sugar, cornstarch and salt in a saucepan. Over medium heat add the coconut milk, whisking until thickened. Add the vanilla extract and cook/whisk another 3 minutes. Pour pudding into a bowl, cool to room temp, and refrigerate until firm.
- Preheat oven to 350 degrees. Spray 2-8” layer cake pans with cooking spray and set aside. Sift the flour, sugar, baking soda, and salt into a mixing bowl. Whisk the almond milk, extracts, oil and vinegar together, and then add to the dry ingredients and whisk to combine. Bake cakes for 30 minutes or until toothpick put into cake center is clean. Remove cakes to cooling rack and cool completely before removing from pans. Cut cakes in half horizontally and set aside.
- In a tall, glass serving bowl, place 1 cake half-layer on the bottom, and drizzle with a little fruit juice. Spread the cubed mango over the cake. Spread 1 cup of pudding over the fruit. Sprinkle ¼ of the toasted coconut and macadamia nuts over the pudding. Repeat process, using kiwi on this layer. Repeat process, using pineapple on this layer. Finish with remaining half-layer of cake.
- Make the coconut whip cream by first removing the lid of a refrigerated can of coconut cream. Scrape out the thickened cream into a chilled mixing bowl, leaving any liquid behind. Beat the thickened cream for 30 seconds to 1 minute until creamy. Add ¼ cup of powdered sugar and beat for 1 minute. Adjust sweetness if needed.

- Fill each cooled bowl with generous 2 tablespoons filling; top with whipped cream, and garnish with pineapple, nuts and coconut. Serve immediately. Store any remaining bowls in refrigerator.
