I love ambrosia of all kinds. This one I got out of a magazine. I love the toasted coconut, it just give it another level of taste. Cook time is chill time.

1 (20 ounce) can pineapple tidbits
1 (3 1/2 ounce) package instant coconut cream or 1 (3 1/2 ounce) package vanilla pudding mix
1/2 cup heavy cream, whipped
4 tablespoons flaked coconut, toasted
maraschino cherry, optional for garnish
cherry juice, optional for garnish

Steps:

  • Drain pineapple, reserving juice; set pineapple aside.
  • In a mixing bowl, whip the heavy cream.
  • In seperate bowl, combine pineapple juice and pudding mix and beat on low, or hand whisk for 2 minutes or until thickened.
  • Fold in whipped cream.
  • Stir in pineapple and 3 Tablespoons of the toasted coconut.
  • Transfer to serving bowl.
  • Garnish with remaining Tablespoon of toasted coconut, cherries and cherry juice.
  • Chill for at least 2 hours.

I first tasted this at a local market, I finally asked for the recipe. I make it for all our family get togethers, and they love it. I do not use fruit cocktail cans because the pears & grapes turn brown and make the salad sour and bad!

2 (11 ounce) cans mandarin oranges
1 (20 ounce) can pineapple chunks
0.5 (16 ounce) package of sweet coconut flakes
1/2 cup sour cream
1 (8 ounce) container Cool Whip, thawed

Steps:

  • First pour out all the juice from the mandarin and pineapple chunks.
  • Put fruit in large glass bowl.
  • Stir in sour cream and coconut flakes, and fold in the Cool Whip.
  • Chill for one hour and serve.

4 1/2 cups fresh pineapple, "medium, peeled, cored, and cut into bite size pieces
11 ounces mandarin oranges, canned and drained
1 medium mango, peeled, seeded, and cut into 1/2 inch pieces
1 cup frozen dark sweet cherries, thawed, pitted, unsweetened
2 tablespoons Amaretto (optional)
2 medium bananas, cut into 1/2 inch slices
1 cup flaked coconut
1/2 cup macadamia nuts or 1/2 cup sliced almonds, chopped

Steps:

  • In a large bowl combine pineapple, oranges, mango, cherries, and amaretto.
  • Transfer mixture to an ungreased 3-quart casserole.
  • Bake in a 350 degree oven, uncovered for 15 minutes.
  • Stir in bananas, sprinkle with coconut and macadamia nuts or sliced almonds. Bake for approximately 15 minutes or until fruit is heated through and coconut/nuts are golden brown.
  • Serve warm, spooning liquid in bottom of casserole over fruit.

Very refreshing in the morning, this is something a litle diferent, but if your up for a taste, you will be hooked, atleast its good for you, eh?

1 cup arborio rice (this is the Italian rice risotto is made with)
2 cups water
1 (15 ounce) can coconut milk
1 (8 ounce) can pineapple chunks (save juice)
1/4 cup sliced almonds
1/4 cup raisins
1 cup cubed firm banana, about 1/2 inch pieces

Steps:

  • Bring water with rice to a boil in medium sized sauce or soup pan on high heat.
  • Once it comes to a boil, turn heat to medium low and simmer uncovered.
  • stirring frequently for creaminess.
  • While rice is cooking prepare rest of ingredients.
  • As water is absorbed in rice add pineapple juice from can and keep cooking.
  • When that is absorbed add the can of coconut milk.
  • As that gets absorbed, but while still creamy, add rest of ingredients.
  • Heat for another 2-3 minutes and serve when rice is tender.
  • This should be still juicy and creamy without being runny.
  • This is good served warm or cold.

1/4 cup water
2 tablespoons white rum
2 tablespoons fresh lime juice
2 cups cubed peeled ripe mangoes (about 2 mango)
2 cups cubed peeled kiwi fruits (about 6 kiwifruit)
2 tablespoons sweetened flaked coconut, toasted

Steps:

  • Combine sugar and water in a small saucepan.
  • Bring to a boil, and cook 1 minute or until sugar dissolves.
  • Remove from heat; stir in rum and lime juice.
  • Cool completely.
  • Combine mango and kiwifruit.
  • add rum syrup, tossing gently.
  • Serve in martini glasses.
  • sprinkle with coconut.

1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) pineapple tidbits, drained
1 cup miniature marshmallows
1 cup sweetened shredded coconut
1 cup sour cream

Steps:

  • In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.
