TUSCAN CHICKEN SOUP

Steps:
- Preheat the oven to 425 degrees F.
- Lightly coat the bread with oil on both sides and place on a baking sheet. Bake until toasted and browned, about 10 minutes.
- Heat the butter and olive oil in a soup pot over a medium-high heat. When the butter has melted and the oil is hot, add the chicken, onion and garlic and cook until the onion starts to brown and the chicken is almost cooked through, about 5 minutes.
- Add the tomato paste and stir until everything is well coated. Add the canned tomatoes, tomato puree, chicken broth, beans, honey and oregano. Season with salt and pepper, then stir well and bring to a simmer. Simmer until the flavors are combined, about 10 minutes.
- Tear the toasted bread into large chunks and place in the bottom of 8 soup bowls. Add the marinated artichoke hearts to the soup and stir to combine. Ladle the soup over the bread. Top each bowl with half a ball of burrata, an oregano sprig and a drizzle of olive oil.
TRANSYLVANIAN CHICKEN SOUR SOUP
From my Romanian collection of Sour Soups. In some parts of Transylvania,sour soups are being seasoned with vinegar,everyone adds to its bowl. I omit the vinegar from the recipe,but try it if you want see what's it like. I usually make it with chicken thights,but any parts that can go in it,except breast. Here leftover parts from the chicken are sold specially for soups: wings,backs,necks,sometimes heads and feet(remove after boiling). If celery root is not available,the stalks will do just fine. That's what I do,anyway. When I don't have time for dicing,I just throw everything in the food processor and grate them.

Steps:
- Boil the chicken. Remove the foam.
- Add the carrot,celery,onion and red pepper.
- When the veggies are soft,add the tomatoes.
- 10 minutes,before removing from the stove add the bacon and parsley.
- Remove and serve hot.
- If feeling brave,season your bowl of soup with vinegar.

ASIAN HOT AND SOUR CHICKEN SOUP
Tofu may be replaced for the chicken if desired, make this as spicy as you like by adjusting the chili flakes, 1/4 teaspoon for mild heat, 1/2 teaspoon for medium heat, 1 teaspoon for very spicy :)

- In a medium saucepan combine the chicken broth, mushrooms, bamboo shoots, sliced ginger, garlic, soy sauce and chili flakes; bring to a boil, reduce heat to low and simmer while you assemble the other ingredients.
- Place the chicken strips in a bowl and toss with the sesame oil.
- In another bowl stir together the cornstarch and vinegar; set aside.
- Increase the broth heat to medium-high and return to a full boil; add in the coated chicken slices and return to a boil again, then drizzle in the egg while stirring slowly to create long strands of egg.
- Stir in the vinegar/cornstarch mixture; simmer over medium heat stirring occasionally until the chicken is cooked through and the broth has thickened slightly (about 3-4 minutes).
- Garnish the top with chopped green onions.
- Delicious!

LITTLEMAFIA'S ROMANIAN SOUR SOUP(CIORBA)
Ciorba is a sour soup from Romania enjoyed by the people especially in winter. It can be done by sauteeing the veggies or without and can add vermicelli noodles in the end. Serve with sour cream.

- Cut all the vegetables in cubes.
- Sautee the onion, add the rest of veggies.
- Add the water and the stock.When it's almost done add the tomato paste, chopped parsley. Season with salt, pepper and lemon juice according to your taste. Add little by little so it's not too sour.

- Cut the meat up in pieces and boil it in 2-3 liters of water with the onion and salt.
- Remove foam.
- In a separate bowl, beat the egg yolks with the sour cream and add one laddle of soup, little by little.
- Add the egg mixture to the soup.
- Remove from the stove and add the chopped parsley.
- Season with lemon juice.
- Serve hot.

LITTLEMAFIA'S ROMANIAN BEEF SOUR SOUP
Lovage is the secret to a good Romanian sour soup. Celery leaves are an OK substitution but it's not exactly the same thing. I grow my own lovage leaves in a flower pot. If sauerkraut juice is not available season the soup with lemon juice and make up the amount with water. Traditionally, borsh is added to make the soup sour,which is fermented wheat bran. Cooking time depends on how quick the meat is boiling.

- Bring to boil the beef cut into medium sized pieces together with water and salt.
- Remove the scum several times, then add some salt.
- Clean and chop or grate the veggies and add them to the soup.
- Later add the tomatoes . Let it boil for another 10 - 15 minute.
- Separately boil the pickled cabbage juice then add it to beef soup.
- Add the noodles.
- Boil the sour soup for another few minutes, add the tomato paste, put salt and lemon juice to taste.
- When is cooked, add parsley and lovage leaves.

Another Asian soup for our Zaar tour 4. Hot and sour soup is one of the most popular soups in Chinese restaurants. I found this one in a chicken book. Wipe the mushoms caps and stalk before cooking as they have a strong flavour.

- Drain and squeeze the mushrooms and thinly slice them discarding the hard stalk.
- Thinly slice the bamboo shoots, tofu and chicken or pork.
- Mix the cornflour with 1 1/2 tbsp water to make a paste. Set asaide.
- Bring the stock to a rolling boil and add the mushrooms, tofu bamboo shoots and chicken. Bring back to a boil and simmer for 1 minute.
- Add the soy sauce, wine and vinegar.
- Bring back to a boil and add the paste add the peppe and season with salt.
- Serve hot and sprinle the spring onions.

LITTLEMAFIA'S ROMANIAN MEATBALLS SOUP
I'm opening a series of Romanian soups,especially sour soups called Chiorba or Borsh.Very popular here, some people eat them everyday. This one is called Chiorba de perisoare. I mentioned that it's optional the sour cream & egg yolks step. It makes the soup richer, even if you skip it the taste is still good.

- To make the meatballs, mix together all the ingredients. Then take a little of this mixture and make little balls (the size that you like - my mom makes them quite big while I prefer them small).
- Fry the chopped onion in oil .
- Add the chopped or grated onion,carrot,parsley and celery root.
- Add the water , salt and leave to boil for 10 - 15 minutes, then add the meatballs to the soup, one by one.
- Simmer until the meatballs rise - about 30-45 minutes .
- Add the parsley .
- Turn off the heat and cover for 15 minutes.
- This step is optional :In a separate bowl, mix 2 egg yolks with the sour cream. Add the egg/sour cream mixture into the soup.
- To season the soup add fresh lemon juice - adjusting to taste.
- Add the chopped parsley,the celery and the lovage leaves.
- Serve with sour cream.
