These easy smoked Cornish hens are the perfect size to split between two people, or keep one all for yourself! Use your favorite seasoning rub and customize these according to each person's favorite!

6 Cornish hens
2-3 tablespoons avocado or canola oil
6 tablespoons rub

Steps:

  • Fire up your Traeger or other wood-pellet grill according to factory instructions and preheat to 275°.
  • Rub down your hens with the oil, and then coat liberally with your choice of rub. Our recommended rubs are listed below in the products section, but any of your favorite rubs will do.
  • Place the hens breast side down on the grill, and smoke for 30 minutes at 275°.
  • Flip the hens over so they are breast-side up, and turn the grill up to 400°. Cook at 400° until 165° internal temperature.
  • Pull and let rest for 10 minutes before serving.

Grilled Herbed Cornish Game Hens image

I found this one in a 2002 issue of Fine Cooking. I am posting here so I don't lose. Sounds easy and delicious.

4 -6 Cornish hens
kosher salt & freshly ground black pepper
1/2 cup extra virgin olive oil
2 large garlic cloves, flattened
2 tablespoons fresh thyme, minced
1 tablespoon fresh rosemary, minced
2 tablespoons fresh lemon juice

Steps:

  • Heat a grill to high. Remove the backbone of each hen. Turn the hens skin side up and press on the breast bone to flatten. If desired you can cut through the breast to half the hens. Rinse each hen and dry.
  • Spread the hens out flat on a large shallow baking sheet and sprinkle both sides with salt and pepper. Bend the wings under the breasts to protect them from burning.
  • Pour 1/4 cup of the olive oil into a small bowl and add the garlic, a generous amount of pepper, and all but 1 teaspoon each of the thyme and rosemary. Brush the hens liberally on both sides with the seasoned oil and more pepper.
  • Grill the hens skin side down, uncovered, until the skin develops nice grill marks (rotate a quarter turn after first 3 minutes to create a crosshatch pattern). Turn the hens over and sear on the second side, again uncovered for about 4 minutes. Sprinkle the skin side with the reserved herbs and salt, reduce the heat and close the lid. If using a charcoal grill, move to side of coals to cook indirectly. Cook until the hens are tender and the skin is crisp and golden. A instant-read thermometer inserted into the thick part of the thigh should read 180 degrees, 10 to 15 minutes.
  • Put the hens on a large serving platter. Whisk together the remaining 1/4 cup oil and the lemon juice. Serve the hens drizzled with the lemon oil. Serve immediately.

2 Cornish hens, split
1/2 cup butter
1/4 cup all-purpose flour
2 cups chicken broth
1/2 cup dry sherry
1 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Brown hens in the butter in a large skillet over a medium-high heat.
  • Then place with breast up in a 13x9 baking dish.
  • Add flour into the skillet stirring until smooth.
  • Cook 2 minutes; stirring constantly over medium heat.
  • Slowly stir in the broth and sherry; cook over medium heat, constantly stirring, until mixture is thickened and bubbly.
  • Stir in salt and pepper.
  • Pour sauce over hens and bake at 350 degrees for 1 hour covered.

4 tablespoons butter
3 tablespoons honey
4 teaspoons chili powder
1 tablespoon orange juice
2 Cornish hens, halved
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Melt butter and stir in honey and chili powder; mixing well.
  • Stir in orange juice, salt and pepper and remove from heat.
  • Cut each hen into two halves.
  • Rinse well and pat dry with paper towels.
  • Place hens in baking dish, skin side down, and place in oven for 6-8 minutes.
  • Turn hens over and baste generously with all of the mixture.
  • Bake for approximately 45 minutes or until well browned.

  • Sprinkle Salt on each Hen.

  • Mix butter, wine and the tarragon in a bowl.
  • Pour 1/4 of the mixture over each hen.
  • Bake at 350 for 30 minutes.
  • Pour 1/2 of the remaining butter mixture over each hen and bake 25 more minutes.
