CHILAQUILES ROJOS (TRADITIONAL MEXICAN BREAKFAST DISH)

Chilaquiles Rojos (Traditional Mexican Breakfast Dish) image

Provided by Food Network

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 17

10 ripe Roma tomatoes, quartered
8 serrano chiles, left whole, stems removed
5 cloves garlic, peeled
1 white onion, peeled and quartered
4 tablespoons oil
Salt
Chicken base, for seasoning
6 ounces tomato puree
8 ounces cooked and shredded chicken
3 ounces chopped fresh cilantro, plus cilantro sprigs for serving
6 ounces tortilla chips, strips or squares are best
6 ounces sour cream
1 onion, sliced into rings
12 ounces crumbled queso fresco cheese or panela cheese
Prepared guacamole, for serving
Prepared refried black beans, for serving
Prepared pico de gallo salsa, for serving

Steps:

  • Grill the tomatoes, chiles, garlic and onions until they have a slightly blackened skin. Do not burn!
  • Bring 6 cups water to a boil with the blackened veggies until they are cooked through and soft inside.
  • Pour the veggies with the hot water and a little added cold water into a food processor and process. Don't blend too much, you want the mixture to be chunky.
  • In a large pot, heat up the oil until smoking. Then (carefully!) add a small amount of the sauce mixture and let it burn away for 1 minute (this is for a nice smoky flavor). Then slowly add the rest of the mixture and season with salt and some chicken base.
  • Add the tomato puree for color, and mix well. Add the shredded chicken and cook until it is heated through. Add the cilantro. Add the chips and serve immediately on 4 plates. Top each plate with some sour cream, sliced onions, queso fresco and a sprig of cilantro.
  • Serve with guacamole, refried black beans and pico de gallo on the side.

COAL MINERS PASTIES

Coal Miners Pasties image

Coal miners in the Midwest would take these for their lunch. They keep warm rather long wrapped in a towel. Some housewives would stuff one end with a savory filling, and the other with a sweet one. That way you could have your dessert with your dinner! For a true coal miner meal experience, be sure to roughly chop the potatoes.

Time 1h30m

Yield 6

Number Of Ingredients 10

4 cups all-purpose flour
2 teaspoons salt
1 ½ cups lard
10 tablespoons ice water
2 pounds top round steak, cut into 1/4 inch cubes
5 red potatoes, peeled and chopped
3 turnips, peeled and cubed
1 ½ cups chopped onion
1 teaspoon freshly ground black pepper
1 tablespoon salt

Steps:

  • Place the flour, 2 teaspoons of salt, and the lard in a bowl. Quickly rub the lard into the flour with your fingertips until it resembles small peas. Pour in the ice water, and form into a ball. Add more water if it feels too dry. Divide the dough into 6 balls, and wrap in plastic. Chill one hour.
  • In a bowl, combine the meat, turnips, potatoes, onions, remaining 1 tablespoon salt, and pepper.
  • Preheat the oven to 400 degrees F (205 degrees C).
  • Roll out one of the balls on a floured surface to about 1/4 inch thick. Using a cake pan, trace a 9 inch circle in the dough; cut out the circle. Place about 1 1/2 cups of the meat mixture into the middle of the circle. Fold the edges of the circle up to meet along the top of the meat filling, and crimp the dough along the top to seal. Repeat until all dough is used up. With a spatula, transfer the pasties to an ungreased sheet.
  • Bake the pasties for 45 minutes, or until golden. Serve hot or at room temperature.

  • Huckleberries. You’ll see many locals hiking in the northwestern mountains with empty milk jugs or light weight containers for huckleberry picking. High-elevation forests are the perfect growing grounds for these round, purplish berries that make muffins, pancakes, ice cream, jams, and cobbler taste so good.
  • A Cinnamon Roll From Wheat Montana Farms and Bakery. There are thousands of wheat farms across the state, including Wheat Montana Farms and Bakery, which has been owned and operated by the same family for three generations.
  • Bison Burgers, Stews, and Steaks. The largest land mammals in North America, bison herds can be found throughout Montana’s wide open spaces. As such, bison meat has long been a staple in Montana.
  • A Montana-Style Sub Sandwich. A foot is simply not long enough when it comes to a sub sandwich crafted in Montana. Luckily, you can get a 17.5-inch sandwich at the Pickle Barrel, located in Bozeman (original digs), Livingston, and Billings.
  • Trout. Montana is home to a variety of fish species, but the most popular is trout: rainbow, brown, brook, lake, bull, and cutthroat. While there are regulations in place for fishing and eating your catch, you can easily dine on trout in restaurants throughout the state.
  • Elk Steaks and Burgers. Big game meat is widely eaten across the state, and restaurants regularly offer elk steaks and burgers year round. Said to be leaner and higher in protein than beef, elk burgers are eaten with the traditional toppings of lettuce, onion, and tomato.
  • Flathead Cherries. Few things signal the start of summer better than Flathead cherries. Grown near Flathead Lake in temperate, northwest Montana, these cherries are dark red and totally delicious.
  • A Steak Dinner. Montanans love their steak, and if there was an official state food, this would be it. Agriculture is a chief economy in Montana and the cattle industry is still king.
  • Rocky Mountain Oysters. From late March through June, many ranches across the state brand cattle and remove the testicles of bulls. Once cleaned, breaded, and fried, the testicles—or Rocky Mountain Oysters—are served up with dipping sauces.
  • Local Pizza. Pizza seems to be associated with local cuisine throughout America and Montana is no different. First opened in Bozeman more than 20 years ago and now in 10 different cities across the state, Mackenzie River Pizza Grill and Pub claims to have the “best pie from the big sky."
