Traditional Newfoundland Sunday Dinner. The tradition of Jigg's Dinner dates back to when the explorers first discovered the new founde land. There are many theories on how this tradition got its name. Some say it is based on a comic strip character named jiggs - a man who loved his corned beef and cabbage.

Number Of Ingredients 6

1 piece salt beef (You can buy salt beef in tubs or smaller individual pieces in vacuum-sealed packages)
1/2 head cabbage, quartered
1 medium turnip
10 carrots, chopped in chunks
10 potatoes, cut into quarters or halves depending on size
1 bag yellow split peas

Steps:

  • Equipment 1 large stock pot 2 pudding bags (The amounts listed above below are based on serving 5 people.) When planning to make Jigg's Dinner, the salt beef and the split peas should be soaked overnight to remove the excess salt.
  • The next day, dump out the water in which the salt beef was soaking.
  • Place the beef in the stock pot and put enough water in just to cover the beef.
  • After an hour of soaking, test the water.
  • If it is extremely salty, dump out that water and soak the beef for another hour.
  • If the water is fine, fill up the pot with water and set it to boil!
  • The split peas that have been soaking overnight, must be drained.
  • Then, place the peas in the pudding bag (again make sure to wet it), tie it properly and drop in the boiling water.
  • Both of the puddings should take close to two hours.
  • Now comes the count down for the vegetables.
  • The following is a guideline of cooking times for each of the vegetables: Cabbage 40 minutes (1 hour and 20 minutes into the boil).
  • Turnips& Carrots 30 minutes (1 ½ hours).
  • Potatoes 20 minutes (1 hour and 40 minutes).
  • At the 2 hour mark everything should be cooked and it's just a matter of scooping and sorting the vegetables.
  • Slice the Dark Molasses Pudding.
  • Mash the pease pudding.
  • Then it's time to eat.
  • HINT: serve with roast of chicken, turkey or beef.
  • Pickled beats, stuffing& gravy along with home made buns or bread Whatta Scoff!
  • Left over veggies fry up great next day as hash.

  • Fish ‘n Brewis. Fish ‘n Brewis came about from the need to feed people on long sea voyages with imperishable foods. Brewis (pronounced “brews”) is thought to be a Middle English term for bread soaked in fat.

  • Toutons. Toutons are fried bread dough, traditionally eaten for breakfast with molasses. Alternatively, they can be used to make breakfast sandwiches.
  • Bakeapple. It’s not a baked apple, it’s a bakeapple! It is thought to be have evolved from baie qu’appelle which means “what is this berry called?” in some form of archaic French, likely the old Norman/Breton dialects of Western Newfoundland, a.k.a “Newfoundland French” (as opposed to Quebecois or Acadian French).
  • Pea Soup. Newfoundland-style Pea Soup is made from yellow split peas and leftover salt beef, with chunks of potatoes, turnips, carrots, and doughboys (dumplings).

  • Jiggs Dinner. Named after an Irish immigrant comic strip character, if you’ve got Irish relatives you’ve definitely had a ‘Jiggs Dinner’: salt beef, spuds, carrot, cabbage and turnip all boiled to within an inch of their lives and pretty much the perfect thing on a rainy Sunday.
  • Cod tongues. Think of it more as a foodie nose-to-tail (or in this case tongue to fin) rite of passage; after all, it’s fashionable AND sustainable to eat what Anthony Bourdain called ‘the nasty bits’.
  • Scrunchions. I feel that someone, somewhere was achingly hungover when scrunchions were invented: cubes of pork backfat, fried gently till the fat has rendered and they become salt-spangled porky puffs of pure joy.
  • Bakeapple. Also known as cloudberries, this terrifically tart berry grows wild in peat bogs and is a little like a sour raspberry. You’ll find bakeapples popping up on the breakfast table in jams and arriving at dessert time in a pie.
  • Oyster leaf. The name of this curious wild-growing herb is a bit of a giveaway. It tastes exactly like an oyster: briny and fresh, but with a crunchy consistency.
  • Touton. Pronounced tow-ton, this is a deep-fried ball of dough, usually served with treacly black molasses. Eating it will make you happier than you ever knew was possible.
  • Caribou moss. Another cheffy hand-foraged ingredient that comes from the tundra. You need to soak it with baking powder to strip it of its toxic acidity, but then it can be candied, brined, dried to a crunchy chip or a dozen other things to add a taste of place to a Newfoundland meal.
