A well-balanced meal in a bowl! Goes well with a nice slice of Italian or French bread. This is a FAVE to take to work or school for lunch with both my teenaged daughters and son! I vary how much meat, pasta, and salad I use depending on how many servings I need. If you want to make it in advance or have leftovers, don't add the dressing and croutons beforehand. Mix croutons right before packaging and send dressing on the side. I make this whenever I have leftover steak!

1 (9 ounce) package cheese tortellini
1 pound flank steak
garlic powder to taste
salt and pepper to taste
1 tablespoon olive oil
2 heads romaine lettuce, torn into bite-size pieces
2 (2.25 ounce) cans small pitted black olives, drained
1 cup Caesar-style croutons
2 small fresh tomatoes, chopped
1 (8 ounce) bottle Caesar salad dressing

Steps:

  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 7 to 9 minutes, until al dente, and drain.
  • Preheat the oven broiler. Season steak with garlic powder, salt, and pepper; rub with olive oil. Place steak in a baking dish, and broil 5 minutes on each side, or to desired doneness. Slice diagonally into thin strips.
  • In a bowl, toss the cooked tortellini, lettuce, olives, croutons, tomatoes, and dressing. Top with steak strips to serve.

1 package Tortellini
4 lbs Top sirloin (or your favorite meat)
Romaine Lettuce (chopped)
1/2 cup buttermilk
1/3 cup mayonnaise
1/3 cup sour cream
2 tbsp parmesan cheese
3 tbsp pesto ((adjust for taste))

Steps:

  • Set meat in your favorite marinade overnight. You can use steak, or any type of meat. We used top sirloin as it is less expensive and tastes great after a night of marinating.
  • Cook tortellini according to package directions.
  • Cut and grill your sirloin to desired doneness. Slice up meat in small pieces and set aside.
  • Mix all dressing ingredients in a small bowl.
  • Add tortellini to salad. Top with steak and dressing. So delicious!

1 cup halved cherry tomatoes
1/3 cup halved pitted black olives
1/2 cup chopped cucumber (thinly sliced and quartered)
1/2 cup quartered marinated artichoke hearts, chopped, plus 1 tablespoon marinade
4 ounces fresh mozzarella cheese, cut into 1/2-inch cubes
2 tablespoons red wine vinegar
1 1/2 teaspoons Italian seasoning
3 tablespoons extra-virgin olive oil
1 1/4 pounds skirt steak, cut into 4 equal pieces
Freshly ground pepper
2 scallions, thinly sliced on an angle

Steps:

  • Bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs; drain and set aside. Meanwhile, combine the tomatoes, olives, cucumber, artichokes and reserved marinade and the mozzarella in a large bowl. Add the vinegar, Italian seasoning and 2 tablespoons olive oil and toss well.
  • Season the steak generously with salt and pepper. Heat a large skillet over medium-high heat; add the remaining 1 tablespoon olive oil and heat until shimmering. Add the steak and cook until well browned, 3 to 5 minutes per side for medium rare. Remove to a cutting board and let rest, 5 minutes. Slice the steak.
  • Add the scallions and cooked tortellini to the tomato mixture and toss until coated. Season with salt and pepper. Divide among bowls and top with the steak.

I'm not sure where I got this recipe from, but I have had it for over 30 years. I usually garnish the top of the salad with crushed tortilla chips. Serving size is approximate (depending on appetites) as a side dish. NOTE: Cooking time is time it takes to cook the tortellini.

1 (15 ounce) can red kidney beans, drained and rinsed
1 medium tomatoes, seeded and coarsely chopped
1/2 green pepper, coarsely chopped
2 tablespoons olives, sliced
1/2 cup salsa (you pick the heat, but I use "medium")
1/3 cup thousand island dressing
1/2 teaspoon cumin

Steps:

  • Cook the tortellini. Drain and rinse with cold water.
  • Combine beans, tomato, pepper and olives in a large bowl. Add tortellini and toss.
  • Make the dressing - combining the salsa, thousand island salad dressing and cumin.
  • Just before serving, pour dressing over the tortellini salad mixture and toss.

½ teaspoon garlic salt
¼ teaspoon granulated onion

1 (9 ounce) package refrigerated cheese tortellini
1 tablespoon salted butter
3 each portobello mushrooms, quartered
1 tablespoon salted butter
1 clove garlic, minced
1 tablespoon all-purpose flour
1 cup fat-free half-and-half
1 cup freshly shredded Parmesan cheese
1 pinch grated nutmeg

Steps:

  • Season filet mignon on both sides with garlic salt, granulated onion, and pepper. Set aside.
  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes.
  • Meanwhile, set a grill pan over medium high-heat. Melt butter in the hot pan. Add filet and quartered mushrooms. Cook the filet for 3 minutes per side. Cook mushrooms for 1 to 2 minutes. Remove filet, cover, and allow to rest.
  • Meanwhile, for the sauce, melt butter in a saucepan over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Push garlic to the side of the pan and stir in flour until smooth. Slowly add half-and-half, stirring until sauce thickens. Stir in Parmesan cheese and nutmeg.
  • Cut filet into strips. Distribute tortellini among the plates, drizzle with sauce, and top with steak strips and mushrooms.

1 tablespoon Dijon mustard
2 garlic cloves, minced
