EASIEST FROM-SCRATCH NO-TOMATO ENCHILADA SAUCE
This is my favorite enchilada sauce. It's easy, ingredients are always in my kitchen, and tastes great! It can be doubled, tripled, quadrupled, depending on your needs.

NO TOMATO PASTA SAUCE
My husband can't eat tomatoes so I came up with this so we could have Italian once in a while! Serve over cooked pasta or use instead of canned tomatoes or sauce in any recipe - just change the spices! I now use this as a base for chili, goulash and pizza too!

Steps:
- Place carrots and beets, one can at a time, into a blender and blend until smooth. Heat olive oil in a skillet over medium heat. Cook and stir garlic and onions until onions are translucent. Stir in pureed carrots and beets then add the bay leaf, Italian seasoning, and red wine vinegar. Cover and cook until the sauce begins to boil. Remove lid and reduce heat to low. Simmer for up to 4 hours, or at least 30 minutes.

NO BEANS, NO TOMATOES, NO FOOLIN' CHILI
I am one who wouldn't know what to do if my chili didn't have beans in it. Keeping an open mind, I tried this and thought it was excellent. Sometimes, you can teach an old dog a few new tricks.

Steps:
- In a big skillet, heat 2 tablespoons oil over medium-high heat.
- Add in the beef (in batches, if necessary); cook, turning often and adding more oil if needed, until meat is browned on all sides.
- Transfer to a 4 quart slow cooker.
- Add the remaining oil to the skillet; lower heat to medium.
- Add in the onions, bell peppers, and jalapenos; stir/saute for about 7 minutes or until onions are softened.
- Add in the chili powder, garlic, oregano, cumin, and salt; stir for 30 seconds.
- Remove skillet from heat; add in beer; stir, scrapping up the browned bits on the bottom of the skillet.
- Pour the vegetable mixture into the slow cooker.
- Cover and cook on LOW for 6-7 hours or until meat is tender.
- Skim fat from the surface of the chili.
- Thicken the chili by stirring in the cornmeal and cooking uncovered, for 15 more minutes.
GENOVESE MINESTRONE (NO TOMATOES)
This recipe is a combination of several recipes. The search began because my mother-in-law can't eat tomatoes so the flavour base had to be something else. Cooking time of 40 minutes seems a bit extreme for spinach but it works. For vegetarians, simply omit the pancetta.

Steps:
- Heat olive oil over medium high heat in a dutch oven. Add garlic, onions, celery and carrots and sauté until onions begin to soften.
- Add broth, wine, black and green beans, spinach, squash, oregano, salt and pepper. Bring to a boil, cover, reduce heat and simmer for 40 minutes. Add in pesto and adjust salt to your liking.
- If making ahead, simply stop at this point, then reheat the vegetable mixture and continue with the recipe.
- While vegetables are cooking, sauté pancetta until crisp. Reserve rendered fat to add to the vegetables if you wish. Cook the pasta according to package directions and stir in to the vegetables.
- To serve, ladle soup into bowls and top with the pancetta and parmesan.

- If using an oven, preheat it to 325 degrees.
- Place the flour in a large bowl, add the meat, and stir to coat.
- Transfer the coated meat, shaking off the excess flour, to a plate.
- Place the oil in a large skillet and set over med-high heat.
- Add the meat and cook, stirring often, just until browned on all sides, about 5 minutes.
- Transfer the browned meat to a 6-quart slow cooker or heavy Dutch oven with a lid and add the beef broth, marinade, potatoes, carrots, onions, Italian seasoning, salt, and pepper.
- If using a slow cooker, cover and seal the pot and cook until the meat and vegetables are tender, 7-8 hours on LOW, 3-4 hours on HIGH.
- If using a Dutch oven, cover and bake until the meat and vegetables are tender, 2 hours.
- Transfer the stew to a large serving dish and serve.

Steps:
- Combine all of the above ingredients and form into a loaf shape. Place in butter-flavor sprayed pie plate.
- Bake 50 minutes in 350 degree oven.
- Spread remaining cream of mushroom soup over the top of baked meatloaf, return to oven for an additional 10 minutes.

BASIC NOMATO SAUCE (TOMATO FREE TOMATO SAUCE)
This recipe comes from the Interstitial Cystitis Network site at www.ic-network.com/bev/april00. We enjoy it just as much in spaghetti and enchiladas as tomato sauce. One batch makes the equivalent of 2 larges cans of tomato sauce (4 cups) so I use half the batch and freeze the other half in a freezer bag for next time. I find that I have to add about 25 percent more spice than I did when I used tomatoes.

- Take out the bay leaf, blend well till smooth and use as you would tomato sauce, spicing appropriately for the dish you're using it in.
TOMATO-LESS SPAGHETTI SAUCE
I'm allergic to tomatoes and I'm always craving spaghetti so I found this recipe and it is really good. My husband likes it better than regular spaghetti sauce. I'm anxious to try it in lasagna. I also add a can of black olives and a can of mushrooms for texture.

- Place peppers, onion and garlic cloves into a 9" x 13" pan.
- Drizzle with olive oil and toss well.
- Put in oven and roast for about 45 minutes.
