This is a simple recipe that everyone loves. For a quick Mediterranean macaroni and cheese, omit the basil. Easily doubled, too!

2 tablespoons butter
1 cup uncooked orzo pasta
1 (14.5 ounce) can chicken broth
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
salt and pepper to taste
2 tablespoons chopped fresh basil

Steps:

  • Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
  • Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
  • Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.

2 tbsp white wine vinegar
1 tbsp olive oil
1 tsp Dijon mustard
1 tsp Italian herb mix ((or make your own with basil, parsley, oregano))
1 garlic clove (, minced)
1/2 tsp salt + black pepper
1 tbsp olive oil
4 x 110 - 120g/4oz chicken breasts (, skinless and boneless (Note 1))
1/2 tbsp olive oil ((if required))
1 small onion (, finely chopped (brown, white, yellow))
1 garlic clove (, minced)
1 red capsicum / bell pepper (, chopped)
1 1/2 cups risoni / orzo pasta ((Note 2))
400 g / 14 oz can crushed tomato
3 cups chicken stock / broth
1 tsp Italian herb mix
Pinch of red pepper flakes ((chilli flakes) (optional))
Salt and pepper
1/4 cup (3 tbsp) grated parmesan cheese (optional)
1 cup basil leaves

Steps:

  • Mix Marinade ingredients together in a large bowl. Add chicken and mix to coat. Marinate for 1 hour - 24 hours (See Note 3 to skip marinating).
  • Heat oil in skillet over medium heat. Add chicken and cook for 4 minutes on each side, or until cooked. Transfer to a plate and cover with foil to keep warm while resting.
  • Turn heat up to medium high. Add oil if required.
  • Add onion and garlic, cook for 2 minutes. Add capsicum and cook for 1 minute or until onion is translucent.
  • Add risoni, tomato, chicken stock, Italian herbs, red pepper flakes, salt and pepper. Mix and bring to simmer, then lower heat to medium low or so it simmers gently.
  • Cook for 9 - 10 minutes, stirring frequently (otherwise it will stick).
  • Take it off the stove when the risoni is just cooked (touch under is ok, finishes cooking in residual heat very quickly). It should still be saucy (see video).
  • Stir through parmesan and basil - excess liquid will evaporate in this step.
  • Spoon risoni into serving bowls, top with chicken. Serve with extra parmesan and basil.

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

1/4 cup plus 2 tablespoons good olive oil

2 tablespoons unsalted butter
1/4 teaspoon crushed red pepper flakes
1 (28-ounce) canned plum tomatoes, with their juice

1 quart chicken stock or water

Steps:

  • Preheat the oven to 400 degrees F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
  • In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Pass through a food mill fitted with the coarsest blade. Taste for seasonings. Serve hot or cold.

1 onion, chopped
2 celery sticks, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
400g can chopped tomatoes
400g can chickpeas
150g orzo pasta
700ml vegetable stock
2 tbsp basil pesto
crusty bread, to serve

Steps:

  • Heat 1 tbsp olive oil in a large saucepan. Add the onion and celery and fry for 10-15 mins, or until starting to soften, then add the garlic and cook for 1 min more. Stir in all the other ingredients, except for the pesto and remaining oil, and bring to the boil.
  • Reduce the heat and leave to simmer for 6-8 mins, or until the orzo is tender. Season to taste, then ladle into bowls.
  • Stir the remaining oil with the pesto, then drizzle over the soup. Serve with chunks of crusty bread.

8 ounces dry orzo pasta, substitute with any pasta variety
3 tablespoons olive oil
1 tablespoon minced garlic (3 to 4 cloves)
1/4 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like the pasta
12 ounces tomatoes, chopped (2 medium or 12 to 15 cherry tomatoes)
1/2 cup shredded parmesan cheese, plus more for serving
1 cup basil leaves, torn into pieces
Salt and fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil, add the orzo and cook according to the package directions - usually 8 to 10 minutes. Before draining the cooked orzo, reserve 1/3 cup of the pasta water (we use this to make the sauce).
  • Add olive oil, garlic, and red pepper flakes to a large, deep skillet. Turn to medium heat. When the oil bubbles around the garlic, add the cooked orzo pasta, tomatoes, basil, and parmesan cheese.
  • Pour in two tablespoons of the reserved pasta water and cook, stirring often, for one minute. Over the minute, the sauce should begin to coat the pasta. If it seems dry, add a splash more of the reserved pasta water and cook a few more seconds. Taste for seasoning and adjust with a bit of salt if needed.
  • Serve with extra basil, parmesan, and fresh ground black pepper on top.

1 cup dry orzo pasta ( uncooked)
2 Turkish cucumbers, sliced ( about 2 cups) or use English cucumbers
1 cup cherry tomatoes, halved
handful baby arugula ( optional, or sub baby spinach)
1 cup basil ( packed down tight, about 2 ounces)
2 fat garlic cloves
zest from one medium lemon
2 tablespoons fresh lemon juice
1/3 cup olive oil
½ teaspoon salt, more to taste
¼ teaspoon cracked pepper

Steps:

  • Cook orzo in generously salted water. Drain and rinse with cold water, until cooled.
  • Place basil, garlic, and lemon zest in a food processor. Pulse repeated until uniformly chopped. Add lemon juice, oil, salt and pepper. Pulse a couple more times, until combine, but not smooth.
  • Place cooled orzo into a bowl and toss with the flavorful basil lemon sauce. Add any additions you like- cherry tomatoes, cucumber, chickpeas, snap peas, goat cheese, avocado, nuts, seeds, arugula, etc.
  • Orzo will soak up much of the salt after it sits, so make sure to taste for salt right before serving. I'll usually add another ¼ teaspoon. Adjust lemon adding more to taste.

12 ounces chicken sausage (cut into rounds)
1/2 medium onion (chopped)
3 cloves garlic (minced)
1 cup uncooked orzo pasta
1/4 teaspoon Italian seasoning (or more, to taste)
2 cups chicken broth
1 (14 fluid ounce) can tomato sauce
2 cups broccoli (cut into small florets)
1/2 red bell pepper (chopped)
Freshly grated parmesan cheese (optional, to taste)
Salt & pepper (to taste)

Steps:

  • Prep your ingredients. You can either slice the chicken sausage into rounds or take it out of the casings (just be careful as some chicken sausages totally disintegrate if you take it out of the casings).
  • Add the oil and chicken sausage to a soup pot. Sauté for 5 minutes over medium-high heat.
  • Add in the onion and continue cooking for another 4 minutes.
  • Stir in the garlic and orzo and cook for around 30 seconds.
  • Stir in the Italian seasoning, chicken broth and tomato sauce. Once it starts to bubble, add in the broccoli and bell pepper. Continue cooking for 10 minutes, uncovered, stirring fairly often (the orzo may stick to the bottom of the pot). You will likely need to turn the heat down a bit (to medium or even medium-low). It should gently bubble vs. furiously boil (you don't want the liquid to reduce too much before the pasta has cooked).
  • Season with salt & pepper as needed and serve immediately with freshly grated parmesan cheese if desired.

Steps:

  • In a small saucepan, saute the carrot, celery, onion, basil, oregano, and thyme in oil for 8-10 minutes or until vegetables are crisp-tender.
  • Add in the soup and broth; bring to a boil.
  • Stir in orzo; decrease heat; simmer, uncovered, for 10-12 minutes or until orzo and vegetables are tender.
  • Taste and adjust seasoning with salt and pepper, if needed.

I'm always on the lookout for a good vegetarian entreé, and since I love orzo and tofu I tried this recipe. My son is not too fond of feta cheese so I left it out of his portion, but the rest of us enjoyed it just as written. Note: after making this a few times I decided to try goat cheese and it was really good -- my son even liked it!

2 tablespoons olive oil
2 garlic cloves, minced
1 bunch green onion, chopped
14 ounces extra firm tofu, diced
3 medium tomatoes, diced
2 tablespoons lemon juice
2 teaspoons dried basil
2 cups orzo pasta
salt and pepper
4 ounces crumbled feta cheese or 4 ounces goat cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add orzo pasta and cook for about 5 minutes, until tender. Drain.
  • Heat olive oil in a large frying pan or wok over medium-high heat. Fry the garlic and green onions for 30 seconds until fragrant. Add the tofu and continue cooking until golden brown.
  • Stir in the tomatoes, lemon juice and basil; cook for another minute. Combine with the cooked orzo pasta and season to taste with salt and pepper. Serve with the crumbled feta cheese sprinkled on top.
