This recipe calls for cheddar cheese, but you can switch in any favorite. Add a few strips of cooked bacon if you wish.

Steps:
- Preheat oven to 350 degrees. Cut bread horizontally. Lightly toast in oven, cut sides up. Top with cheese (1 slice on each side), and continue to cook in oven until cheese melts, 1 to 2 minutes. Meanwhile, fry eggs in butter; season with salt and pepper.
- Place eggs on bottom half of bread. Top with tomatoes and basil. Sandwich with top bread half, and press down slightly. Wrap tightly in parchment.

An ELT is like a BLT, but with one obvious caveat - it uses eggs instead of bacon. The runny, creamy yolk gives the sandwich a rich, buttery appeal while the crisp lettuce and fresh tomato keep things on the lighter side. Lather the bread with homemade basil mayonnaise and you've got a meal fit for breakfast, lunch and dinner.

- Step 1: Mix 3 tablespoons mayonnaise, 3 tablespoons basil, 1 teaspoon Dijon mustard, ¼ teaspoon salt and ¼ teaspoon pepper in a small bowl. Set aside.
- Step 2: Heat a small nonstick skillet over medium heat until hot. Spray with nonstick spray or olive oil. Crack 2 eggs into the skillet. Reduce heat to low, cover the pan and cook until egg yolks are medium set, 3 to 4 minutes.
- Step 3: While the eggs cook, toast 4 bread slices.
- Step 4: Spread mayonnaise mixture on one side of each piece of toasted bread. Top 2 bread slices with 2 lettuce leaves and half of the tomato slices. Top with fried egg and then add the second piece of bread to make a sandwich. Serve with plenty of napkins.

- Core the tomatoes and slice each tomato and each ball of mozzarella into 1/4-inch thick slices.
- Place the sliced ciabatta loaves on a work surface, and spread each half evenly with 1/8 cup pesto. Place 4 slices of tomato and 3 slices mozzarella side by side on the top of each half loaf and sprinkle with salt and pepper. Place 4 basil leaves on top of each sandwich.
- Slice each half loaf crosswise into 4 serving portions, making sure that each piece has a slice of tomato, mozzarella and a basil leaf.
ITALIAN EGG SANDWICH

- Heat 2 teaspoons of oil in a heavy small skillet over medium heat. Crack the egg into the skillet. Sprinkle with salt and pepper. Cover and cook until the white is firm and the yolk is almost set, about 4 minutes. Season with salt.
- Meanwhile, toast the bread until golden brown. Rub the garlic over the toast. Sprinkle with the Parmesan. Spoon the drained marinara sauce over the Parmesan. Top with the egg. Place the open-faced sandwich on a plate and serve.
- In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
