This Cafe Rio copycat recipe for Creamy Tomatillo Salad Dressing is creamy, tangy, and just the teeniest bit spicy.

1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup milk
1 teaspoon dried dill weed
1/2 teaspoon dried parsley
1/2 teaspoon dried chives
1/4 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon fine sea salt
1/8 teaspoon finely cracked pepper
1 teaspoon freshly squeezed lemon juice (adjust to taste)
1 jalapeno (halved with stem and seeds removed)
1 garlic clove
1 tomatillo (husk removed)
1 large handful cilantro (about 1 cup loosely packed)
1 medium lime (juiced, 1-2 tablespoons - adjust to taste)

Steps:

  • Place all ingredients in the blender and blend until smooth. Transfer to an airtight container. Refrigerate until ready to serve. Enjoy!

I'm mostly posting this here so I don't lose it again but this is really, really good dressing. I think there's a bunch of Costa Vida resturants out west but I went to the one in Portland, ME and am now hooked!

Number Of Ingredients 12

3 tomatillos, medium, cut into quarters
2 tablespoons lime juice
1 cup cilantro, fresh
5 scallions (white and ends)
2 garlic cloves, crushed
1/4 teaspoon salt (or to taste)
1/2 cup buttermilk
1/2 cup mayonnaise
1/2 cup sour cream
1 ounce ranch dressing mix (I use 1 pkt. Hidden Valley mix)
1/4 teaspoon cayenne pepper
1 jalapeno, chopped

Steps:

  • Put all ingredients in the blender and blend well. If you like it a little more mild, use less cayenne pepper and less of the jalepeno seeds. I usually only use 5-6 seeds & a tiny piece of the core. My mom uses the whole pepper seeds and all.
  • "Cooking" time does NOT include chilling time - chill in fridge for at least 2 hours to let the flavors meld.

I have tried a few Copycat Creamy Tomatillo Recipes, and this is by far the best and closest to the original. It make a FABULOUS wrap for a quick healthy meal (tortilla, precooked and seasoned meat, lettuce, tomatoes, cucumbers, dressing, and maybe cheese and sour cream if you like). Absolutely delicious and a quick meal in a pinch as long as you have some pre-cooked and seasoned meat on hand! 1 (1 1/4 ounce) package buttermilk ranch salad dressing mix
1 cup mayonnaise (may use 1/2 mayo and 1/2 sour cream)
1/2 cup buttermilk
1 -3 tablespoon lime juice, to taste
1 cup cilantro, packed
2 garlic cloves, crushed
3 tomatillos, quartered
1/4 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 tablespoon sugar
Tabasco jalapeno sauce, to taste

Steps:

  • Combine all ingredients in blender.
  • Refrigerate one hour (I have tried it immediately and it's delicious, but it's always best to have time for flavors to blend).
