One 800-gram hogfish, snapper or grouper, gutted and scaled
3 grams fine salt
2 grams black pepper
150 grams achiote paste
150 milliliters sweet orange
120 milliliters sour orange juice
10 milliliters white vinegar
1 banana leaf
120 grams pimiento morron, sliced into strips
165 grams red onion, sliced
75 grams plum tomato, sliced
5 grams garlic, sliced
5 grams dried oregano
100 grams cooked rice, for serving
75 grams refried beans, for serving
5 corn tortillas, for serving

Steps:

  • Prepare a charcoal grill for indirect cooking over medium-high heat.
  • Wash the fish thoroughly and dry with paper towels. Sprinkle inside and out with the salt and pepper.
  • Dissolve the achiote paste in the sweet orange juice, sour orange juice and vinegar. Rub the fish very well, inside and out, with the mixture. Refrigerate for 3 hours.
  • Place the fish on a banana leaf and arrange the pimiento strips, red onions, tomatoes and garlic on top. Sprinkle with the oregano.
  • Transfer the banana leaf to the grill and cook, covered, until the fish is cooked through, about 15 minutes.
  • Serve with rice and refried beans, accompanied by tortillas.

SEA BASS WITH GINGER LEMON PESTO AND JICAMA SALSA

4 cups peeled, diced jicama
4 cups diced papaya
1 cup red bell pepper
1/8 cup diced jalapeno
1 cup finely chopped cilantro
1/4 cup lemon juice
4 (8-ounce) sea bass fillets*
1 package banana leaves
1 cup finely chopped peeled ginger
1 cup finely chopped lemon zest
1/4 cup chopped parsley
1/8 cup olive oil
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • For the ginger lemon pesto: Add ginger, lemon zest, parsley, and olive oil in a food processor. Process until pureed. Season with salt and pepper, to taste.
  • For the jicama salsa: Combine jicama, papaya, pepper, jalapeno, cilantro, and lemon juice and mix well. Set aside.
  • Coat the fish with ginger lemon pesto and wrap in banana leaves. Place on a baking sheet and bake for approximately 10 minutes. Serve with Jicama Salsa.

BLACKENED SEA BASS

4 (7-ounce) sea bass, skinless fillet
Cajun spice mix, recipe follows
1/4 cup vegetable oil
8 slices challah (loaf style, not braided)*
Mayonnaise, as a dressing
Ketchup, as a dressing
Grated horseradish in vinegar, as a dressing
1/4 cup kosher salt
1/4 cup cayenne powder
1/4 cup paprika
1/4 cup garlic granules
1/4 cup black pepper
2 tablespoons onion granules
2 tablespoons dried oregano
2 tablespoons dried thyme

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a skillet over high heat. Dredge fish in spices and saute on both sides. Finish the cooking in the oven, for about 4 or 5 minutes.
  • It is also wise to have all your windows open, and all your smoke alarms disconnected, considering the amount of smoke that this wonderful dish produces.
  • Toast the slices of challah and spread 4 of the slices with mayonnaise. In a small bowl, mix some ketchup with some grated horseradish. Spread this mixture on the other 4 slices of bread.
  • *Cook's Note: if loaf challah cannot be found individual rolls: aqua bread, Kaiser, potato, or egg-bread rolls are all fine. Also, cocktail sauce can be used instead of the ketchup and horseradish mixture.
  • Mix well. Store in glass or plastic container with lid.
  • Yield: about 1 1/2 cups

3 1/2 ounces achiote paste
2 allspice berries
1/4 teaspoon cumin seeds
1/4 teaspoon whole black peppercorns
1/4 teaspoon dried oregano, preferably Mexican
2 garlic cloves
2 tablespoons freshly squeezed lime juice
2 tablespoons freshly squeezed orange juice
1/4 cup white vinegar
1 teaspoon coarse salt
4 skinless red snapper fillets (3 pounds)
Vegetable oil, for brushing
Lemon wedges, for serving
Cebollas Encurtidas

Steps:

  • Puree all ingredients except fish, oil, and lemon in a blender until smooth. Place fish in a nonreactive container, and pour marinade over the fish; turn to coat evenly. Refrigerate, covered, 1 hour.
  • Preheat oven to 400 degrees. Brush a baking sheet with oil. Remove fish, letting excess marinade drip off, and arrange in a single layer on sheet; brush with remaining oil. Bake until fish is firm and cooked through, about 15 minutes. Serve hot, with lemon wedges on the side.

18 ounces achiote paste (recipe immediately following)
2 whole white onions, sliced
2 whole green peppers, sliced
3 tomatoes, sliced
6 sprigs epazote
6 banana leaves

Steps:

  • Serving suggestions:
  • Add a serving of mixed, fresh vegetables on the side of each plate.
  • Marinate the fillet with achiote for about 5 minutes. Put the fillet over the banana leaf, add epazote, onion, green pepper and tomato. Wrap and put it on the grill. Cook each side for 4 minutes. Serve with vegetable on the side.

8 plum tomatoes
1 serrano pepper or small jalapeno
1 small garlic clove
1/2 teaspoon coarse salt, plus more for seasoning

Steps:

  • Heat a small skillet over medium heat. Add tomatoes; roast until softened and charred, about 12 minutes. Transfer to a plate; set aside. In same skillet, roast serrano until charred, about 8 minutes. Transfer to a bowl; cover with plastic wrap, and let stand 10 minutes.
  • Peel tomatoes and pepper. Roughly chop tomatoes; place in a small bowl. Mound pepper, garlic, and salt on a cutting board; chop to form a rough paste. Stir into the tomatoes; season with salt.

  • Toast the guajillo chiles on a pre-heated comal or skillet, set over medium heat, for about 30 seconds per side. Place the toasted chiles in a saucepan, cover with water, and set over medium-high heat. Simmer until chiles rehydrate, soften and plump up, about 10 to 12 minutes.
  • In the jar of a blender, add rehydrated guajillos, plus a couple tablespoons from their simmering liquid, as well as the orange juice, lime juice, vinegar, achiote paste, garlic, onion, cloves, allspice, pepper and salt. Purée until completely smooth.
  • Pour the marinade over the fish, making sure the fish is completely covered in the marinade on both sides. Cover with plastic wrap and let it marinate in the refrigerator anywhere from 30 minutes to 12 hours.
