SERIOUSLY, THE BEST HEALTHY TURKEY CHILI
Healthy turkey chili made with lean ground turkey, kidney beans and corn. This version is simply the BEST! Perfectly spiced and packed with plenty of protein and fiber. Can be made on the stovetop or in your slow cooker.

Steps:
- Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and saute for 5-7 minutes, stirring frequently.
- Add in ground turkey and break up the meat; cooking until no longer pink. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.
- Next add in tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.
- Garnish with anything you'd like. Makes 6 servings, about 1 1/2 cups each.

THICK GROUND TURKEY CHILI
This is a flavorful thick chili made with ground turkey and slow simmered vegetables. A perfect meal on a cold Northwest day while watching Sunday football.

Steps:
- Chop all vegetables into small pieces.
- In a large soup style pot saute all the vegetables in olive oil until soft. 15 minutes.
- Add ground turkey to sauteed vegetable and stir until well cooked.
- Stir in all seasonings; cumin, oregano, paprika, chili powder, black pepper, celery salt, kosher salt. Mix well to incorporate all the seasonings.
- Dump in tomato paste, Rotel tomatoes, and pinto beans.
- Mix all ingredients well.
- Reduce your heat to low and let simmer for 1 hour to meld all the flavors and thicken the chili. Stir often. Be sure to taste the mixture to see if it needs more salt, pepper or chili powder to your liking.
- Put chili into large bowls and garnish with shredded cheddar cheese (Tillamook), finely chopped jalapeno and fresh onion.
- Pair the chili with a local pale ale beer.

TURKEY CHILI

- In a large skillet, cook and crumble turkey with celery, onion and pepper over medium-high heat until turkey is no longer pink, 6-8 minutes. Transfer to a 5-qt. slow cooker. Stir in seasonings, tomatoes, pasta sauce, chili beans, water and corn., Cook, covered, on high 1 hour. Reduce setting to low; cook, covered, until flavors are blended, 5-6 hours., Stir in kidney and pinto beans; cook, covered, on low 30 minutes longer. If desired, serve with sour cream, avocado and jalapeno.

- Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown; drain.
- Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.

- First ground turkey, I add the onion and the yellow pepper to it, you can season it with crushed red pepper if you like it spicy, this cuts stew time.
- While turkey is browning, I put the tomatoes, beans, and seasoning in another pot. Make sure it's large enough to fit everything in! Put on medium to low heat.
- When turkey is finished I add that to the tomato/bean mixture and let it get nice and toasty. Should stew for about ~20 minutes.
- Top with cheese and sour cream.

- Roughly chop the onions, bell pepper, and garlic and place in the bowl of a food processor fitted with the steel blade.
