CRAB & ASPARAGUS RISOTTO

Crab & asparagus risotto image

There's something so comforting about a good risotto, but the addition of crab and asparagus brings some spring freshness to this version.

Provided by Clare Knivett

Categories     Rice Recipes     Jamie Magazine     Seafood

Time 45m

Yield 4

Number Of Ingredients 14

2 sticks of celery
3 medium banana shallots
1 clove of garlic
olive oil
30 g unsalted butter
300 g arborio rice
200 ml white wine
1 litre organic vegetable stock
1 lemon
1 x 220g dressed crab, from sustainable sources
15 g Parmesan cheese, plus extra to serve
8 thin asparagus spears
½ a bunch of fresh flat-leaf parsley, (15g)
extra virgin olive oil

Steps:

  • Trim and finely chop the celery, then peel and finely slice the shallots and garlic.
  • Place a large, deep frying pan over a medium heat, with 2 tablespoons of oil and 20g of the butter. Stir in the celery, shallot and garlic and fry for 10 to 15 minutes, or until softened and translucent.
  • Turn the heat up and stir in the rice. After 1 to 2 minutes, pour in the wine and allow it to bubble away.
  • Have your stock hot, ready to go. Once the wine has been absorbed, reduce the heat to medium-low and stir in a ladleful of stock; keep the rice moving to help it release the starch, which gives risotto its signature creaminess.
  • Keep adding stock, a ladleful at a time, until the rice is al dente.
  • Finely grate in half the lemon zest, stir through the brown crabmeat, then add the remaining butter. Finely grate in the Parmesan, season, beat everything together, then leave it off the heat with the lid on for a couple of minutes.
  • Meanwhile, remove the woody ends from your asparagus and halve the spears lengthways. Toss with a drizzle of oil, a squeeze of lemon juice and a pinch of sea salt.
  • Stir the white crabmeat through the risotto. Pick and finely chop the parsley leaves and stir through, along with a squeeze of lemon juice.
  • Divide between bowls and top with the asparagus, a drizzle of extra virgin olive oil, an extra grating of parmesan and freshly ground black pepper.

GOURMET MUSHROOM RISOTTO

Gourmet Mushroom Risotto image

Authentic Italian-style risotto cooked the slow and painful way, but oh so worth it. Complements grilled meats and chicken dishes very well. Check the rice by biting into it. It should be slightly al dente (or resist slightly to the tooth but not be hard in the center).

Provided by Myleen Sagrado Sjödin

Categories     Main Dish Recipes     Rice     Risotto Recipes

Time 50m

Yield 6

Number Of Ingredients 12

6 cups chicken broth, divided
3 tablespoons olive oil, divided
1 pound portobello mushrooms, thinly sliced
1 pound white mushrooms, thinly sliced
2 shallots, diced
1 ½ cups Arborio rice
½ cup dry white wine
sea salt to taste
freshly ground black pepper to taste
3 tablespoons finely chopped chives
4 tablespoons butter
⅓ cup freshly grated Parmesan cheese

Steps:

  • In a saucepan, warm the broth over low heat.
  • Warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 3 minutes. Remove mushrooms and their liquid, and set aside.
  • Add 1 tablespoon olive oil to skillet, and stir in the shallots. Cook 1 minute. Add rice, stirring to coat with oil, about 2 minutes. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed. Add 1/2 cup broth to the rice, and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.
  • Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan. Season with salt and pepper to taste.

1l hot vegetable or fish stock
25g unsalted butter , plus an extra knob

CRAB RISOTTO

Crab Risotto image

This decadent Crab Risotto is a delicious way to serve up a hearty and amazingly flavorful crab dinner! The creamy texture of the risotto is studded with tender chunks of crab meat for an absolutely rich and tasty appetizer, side, or main dish!

Provided by Angela

Categories     Entrees     Seafood

Time 35m

Number Of Ingredients 21

1 Tbsp olive oil
1 medium onion ((peeled and roughly chopped))
1 medium carrot ((sliced))
1 rib celery ((sliced))
1 large tomato ((chopped, or use an 8 ounce can crushed or diced tomatoes))
1 bay leaf
each, salt & pepper ((to taste))
8 cups water
1 1/2 lbs crab shells
1 Tbsp olive oil ((extra virgin))
1 Tbsp shallots ((or white onion - minced))
2 cloves garlic ((minced))
1 1/2 cups Arborio rice
1/4 cup white wine ((dry white wine))
8 cups seafood stock ((quick crab stock instructions are above - may use between 6 to 8 cups))
2 cups crab meat
2 Tbsp butter ((more, as needed))
2 Tbsp mascarpone cheese ((or use softened cream cheese))
zest of 1 whole lemon
each, salt & pepper ((to taste))
parmigiano cheese ((freshly grated, to taste))

Steps:

  • Heat a large stockpot to medium-high, then add olive oil, onion, carrot, celery, tomato, bay leaf as well as salt & pepper. Saute until the onion is translucent.
  • Add in 8 cups of water and crab shells, bring to a boil. Allow to boil for 10 minutes.
  • Reduce heat and simmer for 20 minutes, then strain out the crab shells, vegetables and spices. Reserve broth and keep on medium heat for use in the risotto.
  • Bring a large frying pan to medium heat, add olive oil, shallots (or onion) and garlic. Cook until shallots are softened (1-2 minutes). Add the Arborio rice (or Carnaroli rice), cook (stirring occasionally) for 1-2 minutes before adding dry white wine.
  • Add wine and cook for a minute, keeping the rice moving (stirring frequently). Add one-third to half of the crab stock, cook (stirring occasionally) for 3-5 minutes until the rice has absorbed most of the liquid.
  • Add the remaining crab stock in ladled increments, allowing the rice to slowly absorb the liquid until the arborio rice becomes slightly translucent and is an al dente firmness and the core can still be seen in the center (about 20 minutes total time once broth is added).
  • Add the crab meat, butter, mascarpone cheese, lemon zest and salt & pepper (to taste). Stir vigorously until all ingredients are well combined and a thick, creamy risotto is achieved.
  • Adjust the seasoning (if necessary), serve and garnish with large lump crab, parmigiano and green onions, dill, or parsley (if desired).

CRAB RISOTTO

Crab Risotto image

This was adapted from a Mario Batali Recipe. I've substituted snow crab legs for lobster. If you wish, you can cook a whole crab and use the cooking water for the broth. This is best served with some garlic bread - slice up a baguette, toast it, and rub a cut garlic clove on the warm, toasted bread slices.

Provided by Steve Dunham

Categories     Crab

Time 30m

Yield 2 serving(s)

Number Of Ingredients 11

2 -3 snow crab legs
1/2 small onion, chopped
1/4-1/2 carrot, chopped
1/2 bay leaf
3 -4 cups water
1/2 small onion, minced
1 tablespoon tomato paste
1/2 cup arborio rice
1/2 cup dry white wine
1 tablespoon butter
1 teaspoon Italian parsley, minced

Steps:

  • Make the broth:.
  • Remove the meat from the crab legs. Usually, I'll break the legs at the joints, and use a pair of kitchen shears to cut them open.
  • Put the shells in the water with the carrots, chopped onions, and bay leaf. Bring to a simmer and simmer for 5-10 minutes. (If you have some extra crab, shrimp, or lobster shells in the freezer, you can throw some in.) If you don't have the carrots, you can leave them out - sometimes I add a wee bit of celery or a few whole peppercorns.
  • Strain the broth and put it back in the pan, on low heat.
  • Make the risotto:.
  • Heat up a small skillet on medium heat, add the oil, and onions. Soften then onions. Add the rice and stir till it's a little toasted/opaque. Add the tomato paste and allow it to cook a little. Before it burns, add the wine, deglaze, let it simmer a little. Add enough broth to cover rice. Simmer, stirring or shaking the pan as necessary (probably every 30-60 seconds, try to keep the rice from sticking to the bottom), topping off broth as necessary. After 15 minutes or so, it should be close to done, taste the rice to check the texture. (I cook it al dente - a little bit of texture left, if you prefer mushier, go for it.) Season to taste with salt and pepper.
  • Add the crab meat. Cook for another minute to warm the meat. Remove from heat, add the butter and parsley, and stir to melt. Go easy on the parsley, but don't leave it out. If the rice is a little drier than you like, add a little more broth, but check the seasoning afterwards.
  • If you run low on broth, you can top it off with water. If you have a lot left over, use less water next time.

THE BEST RISOTTO

The Best Risotto image

With relatively few ingredients (none of them being cream), the success of a classic creamy risotto depends largely on technique. We've tested all the methods and narrowed it down to a few easy-to-follow steps that will help you achieve perfectly cooked Italian-style rice every time. This basic recipe is delicious on its own and makes a wonderful base to add your favorite vegetables or protein.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 10

7 cups homemade chicken stock (see Cook's Note)
2 tablespoons olive oil
1 large shallot, finely chopped (about 1/4 cup)
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
2 bay leaves
5 tablespoons unsalted butter
2 cups arborio rice (see Cook's Note)
1 cup dry white wine
3/4 cup freshly grated Parmesan, plus more for garnish

Steps:

  • Warm the chicken stock in a medium saucepan over medium-low heat, cover and keep warm while you make the risotto.
  • Heat the olive oil in another medium saucepan over medium heat until shimmering. Add the shallot, garlic, 1/2 teaspoon salt and about 10 grinds of black pepper and cook, stirring occasionally, until the vegetables are softened, 3 to 4 minutes. Add the bay leaves and 3 tablespoons butter, stirring until the butter has melted, about 1 minute.
  • Add the rice and toast, stirring only once, until it smells nutty and starts to turn light golden brown, 3 to 4 minutes.
  • Pour in the wine and simmer, stirring occasionally, until it has evaporated completely, 2 to 3 minutes.
  • Ladle one cup of the warm stock into the rice and cook, stirring gently without stopping, until the rice has absorbed the liquid, 2 to 3 minutes (you will know it's time to add more stock when you move the rice aside and no liquid pools in the center).
  • Repeat this process, adding more stock a ladleful at a time, until the rice is al dente, 17 to 19 minutes. Discard the bay leaves. (You may have a little stock left over. If so, refrigerate in an airtight container for up to 1 week.) If you prefer your risotto on the saucier side, add more stock 1/4 cup at a time until the desired consistency is reached.
  • Stir in the Parmesan, the remaining 2 tablespoons butter, 1 teaspoon salt and a few more grinds of black pepper and serve with more Parmesan, if desired.

  • The first thing you’ll want to do is to have your stock of choice warmed to a bare simmer in a small pot; you can bring it to a boil first, then turn down the heat. Using hot, as opposed to a room temp or chilled stock, will help keep your risotto cooking as efficiently as possible.
  • While your stock is warming, coat the bottom of your risotto pan with extra-virgin olive oil and warm the oil over medium heat. While that’s heating up, dice up your onion if you haven’t already.
  • As soon as your pan is hot, add the onion to the pan. Saute the onions for a few minutes until they’re translucent, no longer raw; you’re not looking to caramelize the onions, but rather to simply cook them enough to release some of their sugars.
  • Once the onions are translucent, add all of your rice to the pan. If the pan is looking a bit dry, add more olive oil so that there’s enough to coat the risotto rice in a light sheen. Take a few minutes here to toast your risotto rice until the grains begin to pick up just a bit of color.

  • Heat the olive oil in another pot over medium-high heat for a minute or two. Add the garlic, rice and tomato paste and stir-fry them until the garlic just begins to turn golden.
  • Pour in the Marsala and stir vigorously. It will combine with the tomato paste to make a thick slurry, so start pouring in your crab stock. Start with 1/2 cup. Stir well to combine. Sprinkle a little salt over everything now -- unless your stock is already salty.
  • Stirring constantly, let the liquid evaporate. When the pot is nearly dry, add another half cup of hot stock. Keep doing this for about 20 to 25 minutes, until the rice is fully cooked but still firm.

  • In a large saucepan, heat the olive oil. Add the onion, season with salt and pepper and cook over moderate heat, stirring, until softened, about 5 minutes. Add the rice and cook for 1 minute, stirring to thoroughly coat. Crumble the saffron into the wine and add it to the rice. Cook, stirring until the wine is absorbed. Add 1 cup of the warm clam juice and cook over moderate heat, stirring constantly, until nearly absorbed. Continue adding the juice 1/2 cup at a time, and stirring constantly until it is nearly absorbed between additions. The risotto is done when the rice is al dente and suspended in a thick, creamy sauce, about 20 minutes total. Season with salt and pepper.
  • Melt the butter in a large skillet. Add the shallot and cook over moderate heat until softened, about 2 minutes. Add the shrimp and crab and cook until just heated through. Scrape the seafood into the risotto and stir in the parsley and mascarpone. Serve immediately.
