Golden and crisp on the outside, soft and fluffy inside. There are other recipes posted on Recipezaar, but I've checked them and these directions are different! Obviously it helps if you use a variety of potato that is especially suitable for roasting (such as Maris Piper, King Edward or Desiree), but this recipe really will give you beautifully roasted potatoes that don't stick to the pan - the secret to success is in step 2.

4 lbs potatoes (chose the best variety you can get for roasting)
4 ounces vegetable shortening (such as Trex or Crisco vegetable shortening)
3 -4 bay leaves (optional)

Steps:

  • Preheat the oven to 400 F, 200 C, gas mark 6; peel the potatoes and cut them into evenly sized halves or chunks.
  • Put the potatoes into a large saucepan, cover with cold salted water and bring to the boil; drain the water off as soon as it comes to the boil - this step isn't to cook the potatoes: it heats them through so they start roasting more quickly - return the potatoes to the hot pan and dry them over the heat (it is important that the potatoes are dry for roasting, otherwise they are likely to stick to the baking tray).
  • Slide a large baking tray into the oven to heat up for a few minutes, add the vegetable fat to the potatoes in the hot pan and let it melt; turn the potatoes in the melted fat until they are shiny and well coated, then tip them onto the hot baking tray.
  • Place the tray in the oven for about 45 minutes; add the bay leaves, if using, 15 minutes into the cooking time; turn and baste the potatoes a few times during cooking.
  • To serve, lift the potatoes from the baking tray with a slotted spoon, sprinkle with sea salt if desired: NOTE - if you are unable to serve the potatoes immediately, do not cover them (they'll loose their crispiness); instead keep them warm in the oven until you are ready.

1/4 teaspoon baking soda

Steps:

  • Pre-heat oven to 425° F (215 degrees C).
  • Peel and chop potatoes into 1" to 2" chunks.
  • Fill a medium pot halfway with water and set it on medium heat. Add 1 tsp salt (reserving the rest) and baking soda to the water. Add the potato chunks to the pot. Boil for 6-8 minutes or until just slightly tender.

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.

  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

  • Nicely wash the potatoes. Peel them if desired, and cut them into cubes.
  • Now boil the potatoes in water till they are cooked and drain them. To speed up the process, you can even microwave the potatoes for 5 minutes. Boiling gives the extra crispy crust to the potatoes.
  • While the potatoes are boiling, in a bowl add dill leaves, oil, garlic powder, garlic cloves, salt to taste, and mix well.
  • Once the potatoes are boiled and drained, nicely toss them with the garlic-herb mixture and let this stand for 10 minutes so that the hot potatoes absorb the flavors from garlic, herb, and oil.
  • Preheat the oven to 425 degrees F. Line the baking sheet with parchment paper or use a nonstick baking pan. Use cooking spray to grease the surface if needed. Place this in the oven while preheating so that the pan gets extremely hot and potatoes will not stick.
  • Add the potatoes in a single layer in the preheated baking pan.
  • Bake this for 30 minutes or until crisp and golden brown turning halfway at 15 minutes so that both sides get that crispy golden brown texture.
  • Spray the air fryer basket once at the beginning with any cooking spray of your choice.

  • Grease pan with oil. Once the pan or grill is hot, add the boiled or microwaved and seasoned potatoes in a single layer within the pan. Cover with lid and cook on a medium flame for 8 minutes.
  • Once it becomes golden brown, flip and cook on the other side for an additional 6 to 8 minutes. You may drizzle oil if needed. For the best result cook this on medium to medium-low flame.
  • Here the exact time may vary depending on the pan you use and the intensity of the flame.
  • Add 1 cup of water along with the chopped potatoes to your instant pot.
  • Secure the lid and pressure cook on HIGH for 12 to 13 minutes and quick release.
  • Drain the water and immediately toss pressure-cooked potatoes with the garlic herb mixture. Let this sit for 10 to 15 minutes. This will allow the potatoes to absorb the flavors.
  • Set the instant pot to SAUTE mode.
  • Drizzle 1 or 2 tsp of oil if needed. Once hot, add the seasoned and cooked potatoes and leave it undisturbed for 3 to 5 minutes. Once the bottom becomes golden brown, carefully flip using a spoon or tongs and cook on the other side till it's browned and crisp. You may drizzle oil during this cooking process if needed.

  • The day before, tip the potatoes into a large pan of salted water and simmer for 10 mins or until just tender, saving a little of the cooking water. Drain the potatoes in a colander and leave to cool. Now here's the trick; choose the two chunks that are most cooked and ready for mashing and push these through a potato ricer, then add a little of the cooking water to make a thick potato batter. Roll the cooled potatoes through the batter then put in the fridge on a tray lined with non-stick paper and chill overnight.
  • The next day, heat the oven to 200C/180C fan/gas 6. Take a large roasting tin and add a good splash of vegetable oil. Simple as roast potatoes are, there's a handful of tiny, but important, details - picked up throughout my cooking career - that when combined give you this ultimate recipe, which I believe creates the perfect roast potato. What a luxury.

2.5 kg medium Maris Piper potatoes
4 tablespoons goose fat or unsalted butter
olive oil
1 bulb of garlic
½ a bunch fresh sage, (15g)

Steps:

  • GET AHEAD
  • 1. Peel the potatoes, keeping them whole, and ideally all about the same size (8cm). Parboil them in a pan of boiling salted water for 15 minutes - this will ensure that the insides become really fluffy.
  • 2. Drain in a colander and leave to steam dry for 2 minutes - this will help the fat to stick to the potatoes. Give the colander a few light shakes to chuff up the edges of the potatoes, giving you maximum surface area for a crispy exterior as they roast.
  • 3. Place the goose fat or butter and 1 tablespoon of oil in your largest roasting tray. Tip in the potatoes, add a good pinch of sea salt and black pepper, then toss to coat, and spread out in one fairly snug, even layer but with small gaps between them.
  • 4. Cover and pop in the fridge overnight.ON THE DAY
  • 1. Preheat the oven to 180°C/350°F/gas 4.
  • 2. Squash the garlic bulbs, then lightly crush each unpeeled clove and add to the tray - this gives you sweet, caramelised garlic and adds a gentle perfume to the potatoes.
  • 3. Roast for 1 hour, or until the potatoes are crisp and golden all over.
  • 4. Remove the tray from the oven. We're nearly there, but we've got one last application of love and care, which is the game-changer. Gently half-squash each potato with a fish slice or masher so they kind of push into each other and fill the tray.
  • 5. Pick the sage leaves and - importantly - toss with a little oil (this will transmit the flavour and make them deliciously crisp). Sprinkle the sage over the potatoes and roast for a further 20 to 25 minutes, or until golden and amazing. Heaven - you could even serve these on their own in a restaurant, they're so good.

3kg Maris Piper potatoes (we've tried lots of potatoes over the years and these are truly the best)
sunflower oil

Steps:

  • A day or two before roasting, prepare the potatoes. You need chunks or whole potatoes roughly the size of a clementine, so peel and leave whole, halve or quarter accordingly. Place the potatoes in a large pan of cold, salted water - salting is important, so don't skip it. Bring the water to the boil and simmer gently for about 15 mins until the potatoes are cooked all the way through but not on the brink of collapse. Gently drain the potatoes in a colander, but do not shake them or ruffle them up - just leave them to drain and cool. Once there is no more steam coming off them, place on a tray in a single layer and put them in the fridge, uncovered, until ready to roast.
  • Heat oven to 200C/180C/gas 6 (or put them in when you turn it up for the turkey). Pour oil into a deep roasting tin to give an even layer of about 0.5cm. Place the tin in the oven for 5 mins to heat the oil, then remove from the oven. One at a time and working methodically (starting at one corner of the roasting tin and lining them up as you go) place each potato in the oil and use a spoon to turn it so it's completely coated. Don't worry about the oil cooling down too much. Once all the potatoes are in the tin in a single layer, not touching, place the tin in the oven and cook for 40 mins, undisturbed.
  • Remove from the oven and - again, meticulously - turn each potato. Return to the oven for 20 mins, then repeat the potato-turning process again. If, at this stage, your other side dishes allow you to, turn the oven up to 220C/200C fan/gas 7 and give the potatoes a final 20 mins. By now you should have potatoes that are everything a roastie should be: deep, golden and crunchy on the outside with an extra-fluffy middle - just sprinkle with a little sea salt to serve.

  • Wash the potatoes and cut into 1-inch chunks with a sharp knife and cutting board. Place in a microwave-safe bowl. Microwave on high for 12-15 minutes, tossing every 5 minutes or so, until the chunks can be pierced easily with a fork, but not falling apart.
  • While the potatoes are in the microwave, preheat your broiler. Place an oven rack on the second position below the broiler - not the top position.
  • Whisk together all the remaining ingredients (from the olive oil to the sea salt) in a separate small bowl to make the sauce. Set aside.
