Soft and chewy healthy oatmeal cookies are made with oats, honey, coconut oil, chopped nuts, raisins, chocolate chips, and much more! They're super nutritious and make a great snack or even breakfast.

1/3 cup honey or maple syrup (can use 1/2 cup for sweeter cookies)
1/4 cup coconut oil or unsalted butter ((melted))
1 large egg
1 tsp vanilla extract
1 cup instant oats
1/2 cup whole wheat flour ((or all-purpose flour))
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup chocolate chips ((optional))
1/4 cup raisins

Steps:

  • Preheat oven to 350F. Line a baking sheet with parchment paper, foil or silicone baking mat and set aside.
  • In a large bowl, whisk the honey, coconut oil, egg, and vanilla. In a medium bowl whisk, all the dry ingredients then stir them into the wet mixture.
  • Drop cookie dough onto the prepared baking sheet using a medium-large cookie scoop and flatten to about ¾'' thickness. Bake 10 minutes then allow in the pan for at least 5-10 minutes and enjoy!

Sweet and slightly chewy, these Healthy Oatmeal Cookies taste just as good as the classic. With better ingredients such as coconut oil and maple syrup instead of sugar, these cookies have a healthier nutrition label than others.

1/3 cup Maple Syrup (or honey)
1/4 cup Coconut Oil (melted)
1 large Egg (room temperature)
1 teaspoon Vanilla Extract
1 cup Quick Oats
1/2 cup Whole Wheat Flour
1 teaspoon Baking Powder
1 teaspoon Cinnamon
1/4 teaspoon Salt
1/4 cup Raisins

Steps:

  • Preheat the oven to 350ºF and line a rimmed baking sheet with parchment paper or use a silicone baking mat.
  • Whisk the maple syrup, coconut oil, egg, and vanilla extract together in a large bowl until smooth. To keep the coconut oil from solidifying when you add it to the bowl making sure the other ingredients are at room temperature.
  • In a separate medium bowl mix the instant oats, flour, baking powder, cinnamon, salt, and raisins together.
  • Use a wooden spoon to mix the dry ingredients into the wet until fully combined. Using a cookie scoop or the same spoon scoop out the dough and place it on the prepared baking sheet. The dough will be crumbly and you can use your hands to shape them and misplace any dough pieces.
  • Flatten the tops of the cookies with the back of the spoon or cookie scoop to about 3/4-inch in thickness.
  • Bake for 10 minutes and then let the cookies cool on the baking sheet for an additional 10 minutes before moving them to a baking rack.

3 eggs, beaten
1 cup raisins
1 teaspoon vanilla extract
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
¾ cup chopped pecans

Steps:

  • In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

1 1/4 teaspoons kosher salt
1 teaspoon baking soda

Steps:

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. This is a family favorite that I have been making for years. It's the most requested oatmeal cookie recipe I've ever made. I found it somewhere years ago, but have lost the source. The secret is soaking the raisins which makes all the difference.

1 teaspoon vanilla
1 cup butter

Steps:

  • This is a very important first step that makes the cookie: combine eggs, raisins and vanilla and let stand for one hour.

1 cup granulated sugar
2 large eggs, beaten
1 teaspoon vanilla

1/2 cup chopped nuts (optional)
1/2 cup semi-sweet chocolate chips (optional)
1/2 cup raisins (optional)

Steps:

  • Preheat oven to 350°F.
  • Cream together shortening and sugars.
  • Add eggs and vanilla, beat well.
  • Sift together flour, salt and soda.
  • Add to creamed mixture.
  • Stir in oats slowly.
  • Mix well. Add nuts, chips or raisins, if desired. Dough will be fairly stiff.
  • Drop by heaping tablespoon on lightly greased cookie sheet. (I use a 4 teaspoon cookie scoop and press them down slightly before baking).
  • Bake for 8-10 minutes.
