1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup pepperoni minis
1/4 cup fresh basil leaves
1/2 teaspoon crushed red pepper flakes, optional
1 head cauliflower, chopped
2 large eggs
1/2 cup shredded mozzarella cheese
2 tablespoons freshly grated Parmesan
1 tablespoon Italian seasoning
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside. To make the cauliflower crust, add cauliflower to the bowl of a food processor and pulse until finely ground, yielding about 2-3 cups.* Transfer to a microwave-safe bowl. Cover loosely and place into microwave for 4-5 minutes, or until softened; let cool. Using a clean dish towel or cheese cloth, drain cauliflower completely, removing as much water as possible. Transfer cauliflower to a large bowl. Stir in eggs, mozzarella, Parmesan and Italian seasoning; season with salt and pepper, to taste. Spread cauliflower mixture into a 15- by 10-inch rectangle onto the prepared baking sheet. Spray lightly with nonstick spray and bake for 12-15 minutes, or until golden. Top with pizza sauce, cheeses and pepperoni minis. Place into oven and bake until the cheese has melted, about 3-5 minutes. Serve immediately, sprinkled with basil and red pepper flakes, if desired.

1 head cauliflower, cored and separated into florets
½ cup water
½ teaspoon salt
2 ounces fresh goat cheese
½ ounce finely grated Parmigiano-Reggiano cheese
1 large egg
1 pinch cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Puree cauliflower in a food processor until finely ground.
  • Cook ground cauliflower, water, and salt together in a skillet over medium-high heat until fragrant and most of the water evaporates, 5 to 6 minutes. Cool completely.
  • Transfer cauliflower to the center of a clean dish towel. Wrap and squeeze tightly to remove all excess moisture. You should have about 1 1/2 cups cauliflower pulp.
  • Stir cauliflower, goat cheese, Parmigiano-Reggiano cheese, egg, and cayenne pepper together in a bowl to form a soft dough. Gather dough into a ball and place in the center of the prepared baking sheet. Press dough into circle about 1/4-inch thick.
  • Bake in the preheated oven until golden brown and set, about 40 minutes. Cool and turn crust over before topping.

1/4 cup grated Parmesan
1 teaspoon Italian seasoning
1/4 teaspoon kosher salt
1 large egg
2 cups freshly grated mozzarella
1/4 cup Spicy Pizza Sauce, recipe follows
Fresh basil leaves, for garnish
4 cups baby greens
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper
Parmesan shavings, for topping
1 to 2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, finely chopped
1/2 cup chicken broth
Three 15-ounce cans crushed tomatoes
1 tablespoon brown sugar
1 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • For the pizza: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Pulse the cauliflower florets in a food processor to a fine snowy powder (you should have about 2 1/2 cups). Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes. Transfer to a clean, dry kitchen towel and allow to cool.
  • When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary. In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1 cup of the mozzarella until well combined. Transfer to the prepared baking sheet and press into a 10-inch round. Bake until golden, 10 to 15 minutes.
  • Remove the crust from the oven and top with the Spicy Pizza Sauce and remaining 1 cup mozzarella. Bake until the cheese is melted and bubbly, 10 minutes more. Garnish with fresh basil leaves just before serving.
  • For the salad: Meanwhile, add the greens to a large bowl. Whisk together the olive oil, baslsamic and salt and pepper to taste in a measuring cup. Pour over the greens and toss. Top with Parmesan shavings.
  • Heat a pan over medium-high heat until hot. Add a tablespoon or so of olive oil, throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and stir to combine. Add the brown sugar, red pepper flakes and salt and pepper to taste and stir. Bring to a simmer, reduce the heat to low and simmer for 30 minutes. Let cool, then puree the sauce.

1 large egg
2/3 cup grated Parmesan cheese
2 tablespoons super-fine blanched almond flour (, optional but helps to give the crust a crispier texture)

1 teaspoon dried oregano (, optional)
1/2 teaspoon dried basil (, optional)
¼ cup grated mozzarella
¼ cup sugar-free marinara sauce (Rao's) (or passata sauce)
5 ounces fresh mozzarella slices
2/3 cups arugula
1/2 cup sliced mushrooms
4 sliced cherry tomatoes

Steps:

  • Pre-heat oven to 425° F. (If you're using a pizza stone, place it in the oven now)
  • Place the thawed frozen cauliflower rice in a large microwave safe bowl and microwave on high for 3-5 minutes or line a baking sheet with parchment paper and spread the cauliflower out in a single layer. Bake for 10 minutes, rotating the pan and stirring in between. Remove from oven and allow to cool for at least 10 minutes.
  • In a large bowl, add the cooked riced cauliflower, egg, cheese, almond flour and optional seasonings. Mix to combine and use your hands to knead well until a dough forms.
  • Line a baking sheet with parchment paper and place the dough on top. Place another piece of parchment paper on top and using your hands or a rolling pin, press down to form a crust to about 1/4 inch to 1/2 inch thickness, creating a raised wall around the edges.

1 pound cauliflower florets ((or thawed from frozen; see notes))
1 large egg (, beaten)
1/3 cup soft goat cheese ((or grated Parmesan))
1 teaspoon dried oregano
1/4 teaspoon salt

Steps:

  • Preheat the oven to 400ºF. If the cauliflower isn't already riced, add the cauliflower florets into a food processor and pulse briefly, until it has a rice-like texture. Line a large baking sheet with parchment paper, then spread the cauliflower rice out in a single layer. Bake for 15 minutes, or until the cauliflower is tender.
  • If you're using frozen cauliflower, be sure that it is completely thawed, and process it into a rice-like texture using a food processor. (Alternatively, you can start with frozen cauliflower rice that has been thawed, to skip the food processor step.) There is no need to cook the frozen & thawed caulifower, so it will save you time! Tip: You can use up to 1 1/2 pounds of cauliflower, if you want to use two 12-ounce bags. It still holds together well!
  • Once the riced cauliflower has been cooked (or thawed), transfer it to a clean, thin dishtowel. Wrap up the steamed rice in the dishtowel, twist it up, then SQUEEZE all the excess moisture out! (Be careful if your cauliflower is still hot-- let it cool before handling.) A lot of extra liquid will be released, which will help you avoid a soggy pizza crust.
  • In a large bowl, mix up the squeezed-out rice, egg, cheese, and spices. It won't be like any pizza dough you've ever worked with, but don't worry, it will work!
  • Press the dough out onto a baking sheet lined with parchment paper. (It's important that it's lined with parchment paper, not wax paper, or it will stick.) Keep the dough about 1/4"thick.
  • Bake for 30 to 35 minutes at 400ºF, until dry and golden. Use the parchment paper to flip the crust over, and bake again until the other side is nice and dry, about 10 more minutes.
  • Add your favorite pizza toppings to the crust, such as sauce and cheese, then return the pizza to the 400ºF oven. Bake an additional 5-10 minutes, just until the cheese is hot and bubbly. Slice and serve warm.

2 large eggs
1/2 cup mozzarella cheese shredded
2 tbsp parmesan cheese freshly grated
1 tbsp Italian seasoning

There is only one other recipe for this on this site, mine is a tad different. I am carb concious and this worked perfectly for me. It is delicious, crispy, and cheesy, not exactly low fat, but the use of light cheese helps.. Let me know if you like it; and If you can think of something lighter to substitute for the cheese, (I haven't had any luck), not flour (have to keep it LOW CARB).

1/2 cup light mozzarella cheese
1/2 cup light tasty cheese
