SHRIMP SPRING ROLLS

These crunchy, delicate spring rolls can be fried and frozen for up to 2 weeks. Just let them come to room temperature, then reheat in a 400 degree F oven. The sweet-and-spicy sauce can be used for other fried goodies, like shrimp or chicken tenders. Look for spring roll pastry wrappers, which are slightly different from eggroll and wonton wrappers, in the freezer section of Asian specialty markets.

1/3 cup sugar
1 1/2 teaspoons ketchup
1 1/2 teaspoons rice wine vinegar
1 1/2 teaspoons Sriracha
3/4 teaspoon cornstarch
1 tablespoons vegetable oil
2 teaspoons grated ginger
2 cloves garlic, minced
1 cup finely chopped green cabbage
1/2 carrot, shredded (about 1/2 cup packed)
6 ounces small shrimp, finely chopped
3 scallions, thinly sliced on the diagonal
2 tablespoons mirin
1 tablespoons soy sauce
Kosher salt and freshly ground black pepper
1/2 teaspoon toasted sesame oil
1/2 cup mung bean sprouts
9 large sheets spring roll pastry wrappers, cut into quarters (See Cook's Note)
1 large egg, beaten
Peanut or canola oil, for frying

Steps:

  • For the sauce: Whisk together 1/3 cup water, the sugar, ketchup, vinegar, Sriracha and cornstarch in a small saucepan over medium-high heat, and bring to a boil. Remove from the heat when the sauce begins to thicken, 30 to 45 seconds. Let cool.
  • For the spring rolls: Meanwhile, heat a large skillet or wok over medium-high heat. Add the oil, ginger and garlic, and cook, stirring constantly, until aromatic, about 30 seconds. Add the cabbage and carrots, and cook, stirring, until wilted, about 1 minute. Add the shrimp, scallions, mirin, soy sauce, 1/4 teaspoons salt and a few cracks of black pepper, and cook, stirring, until the shrimp turn pink, about 2 minutes. Remove from the heat, and stir in the sesame oil. Let the mixture cool for 15 minutes. Fold in the bean sprouts. When completely cool, roughly chop the mixture and set aside.
  • Put 1 spring roll wrapper on a work surface with a point facing you (it should be a diamond shape). Put about 1 tablespoon of the shrimp mixture in the center of the wrapper, and spread to make a 1-inch log. Fold the bottom of the wrapper over the filling, rolling tightly to keep the spring rolls firm. Fold the sides of the wrapper over the filling. Brush the top edge of the wrapper with egg. Roll up tightly, pressing to seal the edge. Put finished rolls, seam-side down, on a plate or baking sheet until ready to fry. Repeat with the remaining wrappers and filling.
  • Fill a large heavy-bottomed pot or Dutch oven with 3 inches of oil, and attach a deep-fry thermometer to the side. Heat the pot over medium-high heat to 375 degrees F. Fry the spring rolls in batches, 4 or 5 at a time, until lightly golden, about 2 minutes. Remove with a slotted spoon to a paper towel-lined plate to absorb excess oil. Serve with the dipping sauce.

12 small, round rice wrappers, dried
For the Filling
2 tablespoons soy sauce, or wheat-free soy sauce for gluten-free diets
1 tablespoon rice vinegar
1 tablespoon fish sauce , or another tablespoon soy sauce, if vegetarian
1 teaspoon brown sugar
1 to 1 1/2 cups thin vermicelli rice noodles , cooked, rinsed in cold water and drained
3/4 to 1 cup cooked shrimp
1 to 2 cups bean sprouts
1/2 cup fresh Thai basil, roughly chopped
1/2 cup fresh coriander , roughly chopped
1/4 cup carrot, shredded
3 to 4 spring onions, cut into matchstick pieces
For the Optional Tamarind Dipping Sauce
1/2 cup water
1/2 teaspoon tamarind paste
2 teaspoons sugar
1 tablespoon soy sauce, or wheat-free soy sauce for gluten-free diets
1 tablespoon fish sauce, or vegetarian fish sauce
1 heaping teaspoon arrowroot powder , or cornstarch
3 tablespoons water
1 clove garlic, minced

Steps:

  • Gather the ingredients.
  • Set rice wrappers aside. In a cup, stir together the soy sauce, vinegar, fish sauce (if using), and brown sugar.
  • Place rice noodles, shrimp, bean sprouts, Thai basil, coriander, carrots, and spring onions in a large mixing bowl and drizzle the soy sauce mixture over. Toss to mix.
  • Then form the rolls.
  • Fill a large bowl with hot water (but not boiling, as you'll be dipping your fingers into it). Start by submerging 1 wrapper into the water. It should soften after 30 seconds.
  • Remove the wrapper and place on a clean surface. Add another wrapper to the hot water as you fill and roll the first one.
  • Place a heaping tablespoon of roll ingredients toward the bottom of the wrapper. Spread out the ingredients horizontally (in the shape of a fresh roll).
  • Fold the sides of the wrapper over the ingredients, then bring up the bottom.
  • Tuck the bottom around the ingredients and roll to the top of the wrapper.
  • To secure the roll: Wet it with a little water on your fingers and press (like sealing an envelope).
  • To serve, place your platter or bowl of rolls on the table along with the dipping sauce.
  • Eat with your fingers; keep lots of napkins nearby.
  • Gather the ingredients.
  • In a saucepan over medium heat, mix together water, tamarind paste, sugar, soy sauce, fish sauce, arrowroot powder dissolved in 3 tablespoons water, 1 clove minced garlic , and dried chile flakes, if desired.
  • When near boiling, reduce heat to low, stirring until sauce thickens.
  • Taste for saltiness, spiciness, and sweetness, adding more fish sauce (instead of salt), more sugar, or more chile flakes as desired.
  • The sauce can be served warm or cold.

3 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon fish sauce
1/8 teaspoon Thai red curry paste
1 ounce uncooked rice noodles
4 medium romaine lettuce leaves
4 sheets round rice paper (8-inch)
8 large fresh basil leaves
8 medium shrimp, peeled,steamed,and halved lengthwise (about 4 ounces)
20 slices cucumbers, seeded,peeled and julienne cut (2-inch)
20 slices green onion tops, julienne cut (2-inch)
20 slices carrots, julienne cut (2-inch)
12 medium fresh mint leaves

Steps:

  • To prepare sauce, combine vinegar, honey, fish sauce, and curry paste, stir well and set aside.
  • To prepare rolls, cook rice sticks according to package directions, drain and rinse under cold water.
  • Drain well.
  • Trim fibrous ribs from lettuce leaves to flatten leaves.
  • Add hot water to a large, shallow dish to a depth of 1 inch.
  • Place 1 rice paper sheet in dish; let stand 30 seconds or until soft.
  • Place sheet on a flat surface.
  • Arrange 1 lettuce leaf over sheet.
  • Top lettuce with 2 basil leaves, 4 shrimp halves, 2 tablespoons noodles, 5 cucumber strips, 5 carrot strips, 5 green onion strips, and 3 mint leaves.
  • Fold sides of sheet over filling, and roll up jelly-roll fashion.
  • Gently press seam to seal.
  • Place roll seam side down on a serving platter (cover to prevent dryin).
  • Repeat procedure with remaining rice sheets.
  • Serve with the sauce.

1 Tbsp. grated fresh ginger
dash crushed red pepper
1/2 lb. frozen uncooked cleaned medium shrimp, thawed, coarsely chopped
4 round rice paper sheets (8-1/2 inch)
1-1/2 cups shredded lettuce
1/2 cup each matchlike English cucumber and red bell pepper sticks
1/4 cup shredded carrots

Steps:

  • Cook dressing, ginger and crushed pepper in medium skillet on medium heat 1 min. or until heated through. Add shrimp; cook and stir 1 to 2 min. or until shrimp turn pink. Cool slightly.
  • Soften 1 rice paper sheet in water 20 sec. or just until pliable; place on work surface. Top with layers of 1/4 of each of the lettuce, shrimp mixture, cucumbers, bell peppers and carrots to within 1 inch of edge of rice paper. Fold in opposite sides of rice paper, then roll up burrito style; place, seam side down, on platter.
  • Repeat with remaining ingredients to make additional spring rolls.

6 spring roll wrappers (available in Asian markets)
12 medium shrimp, cooked and shelled
1 cup shredded leaf lettuce
⅓ cup chopped cilantro
½ cup peeled, seeded, chopped cucumber
1 medium carrot, julienned
1 tablespoon light soy sauce
1 tablespoon white-wine vinegar or rice vinegar
3 tablespoons mirin
¼ teaspoon grated ginger root

Steps:

  • In a bowl of cool water, soak a wrapper until limp. Lay wrapper out flat. Place 1/6 of each ingredient down middle of wrapper, starting with lettuce. Fold over each end and tightly roll the wrapper around the contents, as if making a burrito. Moisten at seam; press to close.
  • Lay on plate, cover with moist paper towel and refrigerate until ready to serve. Then slice in two and serve with Quick Thai Dipping Sauce, below, or peanut sauce.
  • To make the Quick Thai Dipping Sauce, combine all ingredients in a small bowl.
