Sticky Thai Chicken Wings image

Sticky Thai Chicken Wings glazed with a sticky sauce infused with authentic Thai flavours you most probably already have on hand in the kitchen! Weight Watchers Smart Points; 8 per generous serve

1 1/2 kg (3 pounds) chicken wings/nibbles ((tip removed, drumettes and flats separated))
1/2 - 1 tablespoon sea salt flakes ((adjust to your taste))
3/4 cup Thai sweet chili sauce
4 tablespoons coconut sugar, (or brown sugar)
1/4 cup soy sauce
4 tablespoons rice wine vinegar ((or white vinegar))
3 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon minced lemongrass
1 tablespoon minced garlic
2 teaspoons sesame ((or peanut) oil)
1/4 cup fresh cilantro, (chopped)
2 green onions, (thinly sliced to serve)
Red chilli flakes
Generous pinch of salt

Steps:

  • Preheat oven to 400°F (200°C). Lightly spray a large baking tray with cooking oil spray; set aside.
  • To prepare the glaze, combine all of the glaze ingredients in a small bowl or jug; whisk until combined. Pour half of the sauce into a small saucepan and reserve for later.
  • Trim any excess skin off of the wing edges. Season with salt to taste. Place the wings on the prepared baking tray; pour the sauce over the wings and toss to coat evenly. Arrange the wings in a single layer and bake for 10-15 minutes.
  • While the wings are in the oven, bring the remaining glaze to a simmer on low-medium heat, until the sauce bubbles up and begins to thicken (it should take about 5 minutes).
  • Once the chicken wings are cooked on the one side, rotate each piece and bake again for an extra 10 minutes. Change oven settings to grill (or broil) on a medium-high heat setting; baste wings with half of the ready-made glaze and allow to crisp up for a further 5 minutes. They will look golden and shiny from the glaze.
  • Once the wings are golden, remove them from the oven and baste again with glaze. Garnish with the cilantro, onion slices, chilli flakes and sprinkle with salt (if needed). Serve with any remaining glaze for dipping!

5 pounds frozen chicken wings
1 cup chicken broth
½ cup white sugar
¼ cup fish sauce
¼ cup crushed garlic
¼ cup finely chopped jalapeno chile peppers
2 tablespoons cornstarch
3 teaspoons paprika
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken wings on a non-greased cookie sheet. Bake in the preheated oven for 45 minutes to 1 hour, turning once, until golden brown. Move to serving dish/platter.
  • In a medium skillet saute garlic and jalapeno peppers in olive oil until soft. Add chicken broth, fish sauce, paprika and sugar. Add cornstarch and let thicken. Stir all together and pour over crispy chicken wings. Enjoy!

3 lb chicken wings, wings and drumettes separated
¼ cup fish sauce
¼ cup low sodium soy sauce
¼ cup dark soy sauce
½ cup palm sugar
2 stalks lemongrass, split in half and cracked to release aromatics
½ cup fresh cilantro leaves, torn
1 teaspoon freshly ground black pepper
20 cloves garlic, peeled and smashed
thai chili-lime sauce, store bought
sticky rice, and assorted crunchy vegetables, for serving

Steps:

  • Add the chicken wings, lemongrass, cilantro, garlic, pepper, soy sauce, fish sauce, low-sodium soy sauce, and palm sugar to a large zip-top bag. Seal the bag and massage the chicken to coat. Marinate in the refrigerator for at least 2 hours, up to overnight.
  • Preheat the oven to 350°F (180°C). Place your oven rack on the upper third of the oven and place a metal cooling rack inside a rimmed baking sheet.
  • Arrange the marinated chicken wings on the rack. Transfer to the oven and bake for 15 minutes, until browned and the internal temperature reaches 165°F (75°C). Turn the oven to broil and broil the wings until the skin starts to char slightly, about 2 minutes. Transfer to a platter and serve immediately with sticky rice and crunchy vegetables.

This came across my email today from a grilling website. Think it sounds delightful and easy too...so I am posting it for the Zaar World Tour to Asia. Give it a try!

1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon hot chili-garlic sauce, such as sriracha
2 teaspoons dark sesame oil
1 teaspoon grated fresh ginger
16 chicken wings, wing tips removed
vegetable oil
kosher salt
fresh ground black pepper

Steps:

  • Make the glaze, in a small bowl, whisk the sauces, sesame oil and ginger together.
  • Trim excess skin from the edges of the wings.
  • Lightly brush or spray with the oil, and season with salt and pepper to taste.
  • Grill the chicken wings over Direct Medium heat until the skin begins to crisp, about 10 minutes, turning once or twice.
  • Brush the wings with the glaze and continue to grill until the meat is no longer pink at the bone, 8 to 10 minutes, turning and brushing with the glaze 2 or 3 times.
  • Serve warm.

3 tablespoons peanut oil
1/4 cup rice vinegar
1 tablespoon soy sauce, divided
2 garlic cloves, minced
1/2 teaspoon minced fresh ginger
1 teaspoon chili oil (optional)
1 1/4 lbs chicken wings, tips trimmed and cut at the joint
1/4 cup sweet Thai sweet chili sauce
1 tablespoon hot sauce (siracha)

Steps:

  • In a bowl whisk together peanut oil, rice vinegar, 2 teaspoons soy sauce, garlic, ginger and chili oil (if using). Place chicken wings in marinade and toss to coat. Cover and refrigerate for at least 1 hour.
  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place marinated chicken wings on top, cook 20 - 25 minutes or until chicken is cooked through and skin has darkened. Turning once.
  • In another bowl whisk together sweet Thai chili sauce, 1 teaspoon of sriracha and remaining teaspoon of soy sauce. Taste and add more sriracha if desired.
  • Transfer hot wings to the bowl and toss to coat.
  • Serve with plenty of napkins.

Put the chicken in a large freezer bag. Place all of the marinade ingredients in a large bowl. Reserve 1/2 cup for brushing on wings while they are grilling.
