COFFEE-INFUSED TEXAS BROWNIES



Coffee-Infused Texas Brownies image

Texas brownies are known to be sweet, rich, and soft. This version offers and extra jolt from the strong brewed coffee.

For the Brownies:
2 cups flour
2 cups sugar
1/2 cup unsalted butter
1/2 cup shortening
1 cup brewed strong coffee
1/4 cup unsweetened cocoa powder
1/2 cup buttermilk
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
For the Frosting:
1/2 cup unsalted butter
2 tablespoon unsweetened cocoa powder
1/4 cup milk
1 1/2 cups powdered sugar
1 teaspoon vanilla extract

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F and lightly grease an 11 by 17-inch sheet pan.
  • In a large mixing bowl, combine the flour and sugar.
  • In a heavy saucepan over medium heat, combine the butter, shortening, coffee, and cocoa. Stir constantly until heated to a boil.
  • Pour boiling mixture over the flour and sugar.
  • Add the buttermilk, eggs, baking soda, and vanilla. Mix well, using a wooden spoon or high-speed mixer.
  • Pour the batter into the prepared baking pan.
  • Bake for about 20 minutes, or until a cake tester comes out clean.
  • Meanwhile, prepare the frosting by combining the butter, cocoa, and milk in a saucepan over medium heat.
  • Stir frequently until heated to a boil.
  • Mix in the powdered sugar and vanilla and stir until smooth.
  • Pour the warm frosting over the brownies as soon as they come out of the oven.
  • Cool and cut into squares.

1/2 cup shortening
1 cup water or 1 cup strongly brewed coffee
1/4 cup cocoa
1/2 cup buttermilk (or 1/2 C milk with 2 tsp lemon juice)
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup butter or 1/2 cup margarine
2 tablespoons cocoa
1/4 cup milk
3 1/2 cups powdered sugar or 3 1/2 cups icing sugar
1 teaspoon vanilla

Steps:

  • In a large mixing bowl, combine the flour and the sugar.
  • In heavy saucepan, combine butter, shortening, coffee or water and cocoa.
  • Stir and heat to boiling.
  • Pour boiling mixture over the flour and sugar in te bowl.
  • Add the buttermilk, eggs baking soda and vanilla.
  • Mix well, using a wooden spoon or high speed on an electric mixer.
  • Pour into a well buttered 17 1/2 by 11 inch jelly roll pan.
  • Bake at 400F for 20 minutes or until brownies are done in the center.
  • While brownies bake, prepare the frosting.
  • In a saucepan, combine the butter, cocoa and milk.
  • Heat to boiling, stirring constantly.
  • Remove from heat and mix in the powdered sugar and vanilla, beat until frosting is smooth.
  • Pour warm frosting over brownies as soon as you take them out of the oven.
  • Cool.
  • Cut into 48 bars.

  • Mix well and heat to boiling.
  • Pour into the flour and sugar; mix well.
  • Add the buttermilk, baking soda, eggs, and vanilla.
  • Mix well.
  • Pour into a well-greased 11x17 1/2 cookie sheet and bake at 400 degrees for 20 minutes or till done.
  • While brownies bake make the frosting.
  • In a large saucepan combine the butter, cocoa, and milk; heat to boiling and mix well.
  • Mix in the confectioners sugar and vanilla and mix till smooth.
  • Pour warm frosting over the brownies as soon as you take them out of the oven.
  • Cool; cut into 48 bars.

2 cups sugar
2 cups flour
1/2 cup butter
1/2 cup shortening
1 cup water
1/4 cup unsweetened cocoa
1 dash salt
1/2 cup buttermilk
1 teaspoon baking soda
2 eggs, beaten
4 teaspoons vanilla
1/2 cup butter
6 tablespoons milk
1/4 cup unsweetened cocoa
3 1/2 cups confectioners' sugar
1 teaspoon vanilla

Steps:

  • Brownie: Preheat oven to 400°; grease an 11" x 17" jelly roll pan.
  • Mix sugar and flour in a bowl; in a saucepan bring to boil the butter, shortening, water, cocoa and salt; pour cocoa mixture over flour mixture and stir until combined.
  • Beat in buttermilk, baking soda, eggs and vanilla; pour into baking pan and bake for 15 minutes, until center is barely set; DO NOT OVERBAKE; the center of the brownie will be slightly puffed but, if not overbaked, will fall when cool.
  • Frosting: Prepare the frosting while the brownie bakes; in same saucepan, bring to boil the butter, milk and cocoa; remove from heat and stir in confectioners' sugar and vanilla; stir until smooth.
  • Pour and spread over the brownie immediately after removing it from the oven; cool and refrigerate.

3 cups white sugar
¾ teaspoon salt
1 ½ cups margarine
1 ½ cups water
4 ½ tablespoons unsweetened cocoa powder
1 cup buttermilk
3 eggs
1 ½ teaspoons baking soda
1 teaspoon vanilla extract
½ cup margarine
6 teaspoons milk
3 tablespoons unsweetened cocoa powder
4 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x18-inch jelly roll pan.
  • Sift flour, white sugar, and salt together in a large bowl.
  • Combine 1 1/2 cups margarine, water, and 4 1/2 tablespoons cocoa, together in a saucepan; bring to a boil. Pour margarine mixture over flour mixture; stir to combine.
  • Beat buttermilk, eggs, baking soda, and vanilla extract together in a bowl; add to margarine mixture and stir until batter is combined. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the brownies comes out clean, about 20 minutes. Cool completely.
  • Heat 1/2 cup margarine, milk, and 3 tablespoons cocoa powder together in a small saucepan over low heat until margarine melts and mixture is combined; remove from heat. Beat confectioners' sugar into margarine mixture until frosting is smooth and creamy. Spread frosting over cooled brownies and cut into squares.
