A favorite from my Mom-in-law. Very Addicting! You can also use premade guacamole for the avocado mixture. Use more or less of the tomatoes, onions, olives, and cheese according to your personal tastes.

2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces sour cream
1 1/4 ounces taco seasoning mix
1/2 cup mayonnaise
2 (16 ounce) cans refried beans
3 tomatoes, chopped
1 cup onion, chopped
1 cup black olives, sliced
3 cups cheddar cheese, shredded
1 (16 ounce) bag tortilla chips

Steps:

  • Mash avocadoes and mix with lemon juice, salt and pepper - set aside.
  • Mix sour cream, mayonnaise and taco seasoning - set aside.
  • Layer: refried beans, avocado mixture, sour cream mixture, onions, tomatoes, cheese and olives.
  • Serve chilled or at room temperature with tortilla chips.

8 ounces guacamole
16 ounces light sour cream
1 (1 1/4 ounce) package taco seasoning mix
2 tomatoes, seeded and chopped
1/2 cup green onion, chopped
2 cups cheddar cheese, shredded

Steps:

  • Spread beans in bottom of serving dish.
  • Top with guacamole. You can use any recipe you like or even use a good guacamole dip.
  • Mix sour cream and taco seasoning and spread over guacamole.
  • Sprinkle cheese on top of the sour cream layer.
  • Garnish with tomatoes and green onions.
  • Serve with tortilla or corn chips.

1 pound ground beef
1 teaspoon chili powder
1 (16 ounce) can vegetarian refried beans
1 yellow onion, chopped
2 (4 ounce) cans chopped green chile peppers, drained
1 (16 ounce) jar picante sauce
½ pound Muenster cheese, cubed
½ pound Monterey Jack cheese, cubed
1 (16 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain well, stir in chili powder and continue cooking 5 minutes.
  • In a 8x8 inch baking dish, spread the refried beans. Layer beans with ground beef and chili powder mixture. Top with layers of onion, green chile peppers, picante sauce, Muenster cheese and Monterey Jack cheese.
  • Bake in the preheated oven 35 to 45 minutes, until cheese is melted and lightly browned. Top with sour cream before serving.

2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) sour cream
1/2 cup mayonnaise
1 (1/4-1 1/8 ounce) package taco seasoning mix
2 (10 1/2 ounce) cans bean dip
1 bunch green onions with top, chopped (1 cup)
3 medium tomatoes, cored, halved, seeded and coarsely chopped (2 cups)
2 (3 1/2 ounce) cans pitted ripe olives, drained, coarsely chopped
1 (8 ounce) package sharp cheddar cheese, shredded
tortilla chips

Steps:

  • Peel, pit and mash avocados in a medium-size bowl with lemon juice, salt and pepper.
  • Combine sour cream, mayonnaise, and taco seasoning mix in a bowl.
  • To assemble: Spread bean dip on a large shallow serving platter; top with seasoned avocado mixture; layer with sour cream-taco mixture.
  • Sprinkle with chopped onions, tomatoes and olives; cover with shredded cheese.
  • Serve chilled or at room temperature with round tortilla chips.
