3 corn tortillas (6 inches), cut into thin strips
4 teaspoons olive oil, divided
2 tablespoons chopped onion
1 jalapeno pepper, seeded and chopped
4 eggs, lightly beaten
1 plum tomato, chopped
1/4 cup shredded cooked roast beef
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup shredded Monterey Jack cheese

Steps:

  • In a large nonstick skillet, cook tortilla strips in 2 teaspoons oil for 5 minutes or until lightly golden brown but not crisp. Add the onion, jalapeno and remaining oil; cook 2 minutes longer. , Add the eggs, tomato, beef, salt and pepper; cook and stir until eggs are completely set. Sprinkle with cheese; cover and let stand for 2-3 minutes until cheese is melted.

1 green pepper, chopped
1/2 cup chopped onions
1/2 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese
1/2 cup TACO BELL® Thick & Chunky Salsa

Steps:

  • Beat egg product and cottage cheese with whisk until well blended; set aside.
  • Cook vegetables in medium nonstick skillet sprayed with cooking spray on medium-high heat 2 to 4 min. or until crisp-tender, stirring occasionally.
  • Add egg mixture and cheddar; cook on medium heat 8 to 10 min. or until egg mixture is set, stirring frequently. Serve topped with salsa.

8 ounces chorizo sausage, casing removed
6 -8 green onions, sliced (include some of the green part)
2 cloves garlic, minced
8 large eggs
2 tablespoons water
salt and pepper
1/2-3/4 cup shredded monterey jack cheese
1/4 cup chopped fresh cilantro or 1/4 cup parsley
1/2 cup sour cream

Steps:

  • Cook the chorizo sausage in a big skillet over medium-high heat for about 5 minutes or until browned; break sausage up so that it is crumbled.
  • Add in green onions and garlic; saute/stir for 2 minutes or until vegetables are tender; at this point, I drain some of the excess drippings.
  • In a mixing bowl, add eggs, water, salt, and pepper; whisk to combine.
  • Lower heat to medium; Add egg mixture to skillet; let set for 20 seconds.
  • Cook and stir 3-4 minutes or until light and fluffy.
  • Add cheese and cilantro; stir to blend.
  • Transfer mixture to serving plates or use as filling for a flour tortilla; add a dollop of sour cream on top if desired.

  • 2 tablespoons Canola Oil, divided.

  • Add last tablespoon of oil to hot pan. Allow to heat. Pour in egg mixture.
  • Add spices.
  • Cook until eggs are desired firmness.

1 (10 1/4 ounce) Pillsbury Grands refrigerated buttermilk biscuits (5 to a can)
1/2 lb sausage
1 egg
1 teaspoon milk
1/3 cup salsa (mild or hot)
1/2 cup cheddar cheese, shredded

Steps:

  • Fry sausage and crumble.
  • Generously spray vegetable oil on a muffin tin. Press biscuits into 5 holes to form a cup with edges extending out of top.
  • Evenly divide crumbled sausage to each biscuit-formed cup. Beat egg with milk. Spoon 1 tablespoon of egg mixture over sausage. Add 1 tablespoon of salsa onto sausage. Top each with shredded cheese. To prevent any spills, place muffin tin on top of a cookie sheet pan while baking.
  • Bake in a 350 degree oven for 17 minutes or until done.
  • Note: Can be easily doubled. Purchase another 10.2 oz can of 5 biscuits. (The larger size only has 8 biscuits per can.) For best results use Grands size biscuits only.

2 (15 ounce) cans Rotel Tomatoes (extra hot preferred)
Fritos corn chips

Steps:

  • In a non stick skillet melt butter. Pour eggs into skillet.
  • Cook while stirring from the bottom. When eggs are almost set add cheese dip.
  • Cook for short time and then turn off heat. Let set until cheese is runny and sausage is heated through.

For all you *chorizo* lovers out there!!! While visiting my sister recently we ate at a diner and enjoyed a savory breakfast! While I was enjoying this terrific dish, I thought to myself.... I can make this! Super easy .... got busy and made it at home, my family (boys) Loved it. Asked for it to be a repeat! :) So I'm posting it here, because I am known as losing my recipes if I don't. LOL

12 ounces chorizo sausages
12 slices bacon, crisply cooked, crumbled (I always keep some leftover)
1 small onion, chopped
2 -3 tablespoons oil
8 eggs
2 tablespoons milk
1 pinch kosher salt (my preference)
1 (4 -4 1/2 ounce) can diced green chilies
4 monterey jack cheese, sliced (more to taste -- )
2 cups frozen southern style hash brown potatoes

Steps:

  • Combine eggs and milk in bowl set aside.
  • In large skillet saute onion in oil until translucent.
  • Add frozen potatoes and cook on med-high heat for @ 8 minutes.
  • Push potatoes to side of skillet and add chorizo to other side and continue cooking 8 minutes (spoon as much of the drippings out).
  • flip potatoes while cooking chorizo until lightly browned, add green chile on top pushing (not mixing) chorizo towards potatoes.
  • Add egg mixture to side of skillet and scramble.
  • once scrambled, incorporate into potato and chorizo to combine. With spatula, flip over gently until eggs are cooked, add bacon, and lay sliced jack cheese on top. Cover for 3-5 minutes while heating those flour tortillas!
  • Enjoy!

Steps:

  • Brown sausage in a large skillet over medium heat, stirring occasionally; drain off fat, and crumble.
  • Add all other ingredients except tortillas, chili, and cheese; simmer 20 minutes or until onions and green pepper are tender.
  • Heat chili in a small saucepan over medium heat; keep warm.
  • Warm tortillas in microwave briefly, between paper toweling (times may vary: 10-20 seconds each, on high).
  • Place tortilla on plate, put 1 cup sausage mixture on tortilla and fold up.
  • Top each tortilla with some chili, then a little shredded cheese, and a tbsp of olive slices, if desired; serve hot.
