Easy Beef Pot Pie image

Easy beef pot pie is a whole new level of comfort food. Rich, meaty beef stew is topped with crispy, golden puff pastry. *insert heart eye emoji*

1.5 kg (3lbs) chuck steak (sliced into 2cm/1 inch chunks)
2 onions (finely chopped)
4 celery sticks (finely chopped)
2 carrots (peeled and finely chopped)
1 sprigs fresh rosemary
4 garlic cloves (crushed/minced)
2 tbsp flour
400 g (14oz) chopped tomatoes
2 cups beef stock
2 tsp mustard
1 tsp sugar
salt and pepper (to taste )
400 g (14oz) frozen puff pastry (thawed)
1 egg (beaten)

Steps:

  • Heat a large pot or Dutch oven over high heat and add a few tablespoons of olive oil.
  • Dry the meat with paper towels then add to the pot. Cook in batches until the beef is browned all over. Remove from the pot and set aside.
  • In the same pot, add the onion, celery and carrots. Cook for 5-7 minutes until the vegetables start to soften and turn golden brown. Add the garlic and rosemary and cook until fragrant.
  • Stir the flour into the vegetables then add the meat back into the pot and combine.
  • Pour in the tomatoes, beef stock, mustard and sugar. Season with salt and pepper, stir to combine then cover with a lid.
  • Reduce the heat and allow to simmer for 90 minutes or until the beef is almost completely soft. Remove the lid and allow to simmer for another 30 minutes until the beef is very tender and the sauce has reduced and thickened slightly.
  • Preheat the oven to 180°C/350°F.
  • Transfer the stew to a deep casserole dish. If there's a lot of sauce, feel free to only use half of it.
  • Top the pie with a sheet of puff pastry. Crimp the edges, make a few slits into the top of the pastry to act as vents and brush with beaten egg.
  • Place in the preheated oven and bake for 20-25 minutes until the pastry is golden brown, puffed and cooked through.
  • Remove from the oven, allow to rest for 10 minutes then serve.

This Steak Pie recipe has everything you need in a comfort food pie. Tasty home cooked meat, delicious gravy and light fluffy pastry topping.

1 tbsp Oil (See Note 1.)
700 g Stewing beef (See Note 2.)
2 Large onion (Peeled and chopped into big chunks (See Note 3).)
4 Carrots (Peeled and chopped (See note 4).)
50 g Plain flour
2 tbsp Tomato puree
Salt and black pepper
600 ml Beef stock ((See note 5))
320 g Puff pastry sheet ((See note 6))
1 Egg (Beaten)

Steps:

  • Heat your oil in a large frying pan or saucepan and add the beef. Cook for about 5 - 10 minutes until just starting to turn brown.
  • Add in the vegetables and cook for a further 5 minutes until they start to soften.
  • Add the flour and stir through everything, cook for 5 minutes.
  • Add the tomato puree, salt and pepper and stock. Pop the lid on and cook on a very low heat for about 2 hours or until the beef is very soft.
  • NB: Keep an eye on the beef as it cooked, stir it well occassionally and if it looks like there is not enough liquid, don't be afraid to add a little more stock or water.
  • Spoon into a pie dish and leave to cool for at least 30 minutes if you have time.
  • Smooth the pastry over the top of the filling.
  • Decorate the pie with cut out shapes if you feel that way inclined and brush with the beaten egg.
  • When you are ready to bake the pie, preheat the oven to 220C and bake for about 30 minutes until the filling is hot throughout and the pastry is crisp and golden.

1 package (15 ounces) refrigerated beef roast au jus
1 tablespoon canola oil
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1 garlic clove, minced
2 sheets refrigerated pie crust
1 cup shredded Mexican cheese blend
Salsa con queso dip, optional

Steps:

  • Preheat oven to 425°. Drain beef, reserving 1/4 cup juices; shred meat with 2 forks. In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender, 1-2 minutes. Add garlic; cook 30 seconds longer. Remove from heat; stir in beef and reserved juices., Unroll 1 pie crust; cut in half. Layer 1/4 cup shredded cheese and about 1/3 cup beef mixture over each crust half to within 1/2 in. of edge. Fold crusts over filling; press edges with a fork to seal. Place on a greased baking sheet. Repeat with remaining crust and filling., Bake until golden brown, 15-18 minutes. If desired, serve with queso dip. Freeze option: Freeze cooled pies in a freezer container. To use, reheat pies on a greased baking sheet in a preheated 350° oven until heated through.

1/4 pound sliced bacon, diced
3 pounds beef stew meat, cut into 1-inch cubes
1 cup chopped onion
1-1/2 cups halved fresh baby carrots
6 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 package (10 ounces) frozen peas
1/2 teaspoon salt
1/2 teaspoon pepper
1 sheet refrigerated pie crust
1 large egg, lightly beaten, optional

Steps:

  • Preheat oven to 375°. In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain. Brown the beef in drippings in batches; drain and set beef aside. Add onion to the pan; saute until crisp-tender. Add carrots, bacon and beef. , Meanwhile, in a small bowl, combine the flour, broth and Worcestershire sauce until smooth; add to beef mixture. Bring to a boil. Reduce heat; cover and simmer until meat is tender, 1 to 1-1/2 hours. Stir in peas, salt and pepper. Transfer to an ungreased 11x7-in. baking dish. , On a lightly floured surface, roll out crust into a 12x8-in. rectangle. Cut slits in crust. Place over filling; trim and seal edges. If desired, brush with beaten egg. Bake until crust is golden and filling is bubbly, 35-40 minutes. Let stand for 15 minutes before serving. Refrigerate leftovers.

3 tbsp sunflower oil
1kg braising steak, diced
2 onions, roughly chopped
3 tbsp plain flour
1 tbsp tomato ketchup
2 beef stock cubes mixed with 600ml boiling water
375g sheet of ready-rolled puff pastry
1 egg yolk, beaten

Steps:

  • To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.
  • Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.
  • To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

This is not really a pie in the traditional sense of the term as it is only topped with pastry rather than being encased in it. We have been trying to watch our carbs but my hubby loves his meat pie so this way he can enjoy it without total guilt. Both my hubby and my son love this one and feel free to make it as a pie if you want. You will have to cook the pastry shell off first though as it is not cooked long in the oven, as I cook the meat on the stove to make it tender.

olive oil
1 onion, chopped finely
180 g mushrooms, sliced thinly
450 g beef steaks, cubed
1 small carrot, diced
1 teaspoon garlic powder
1/2 cup corn kernel
1 cup Guinness stout (or other dark stout)
3/4 cup peas
1 tablespoon tomato paste
1 tablespoon tomato sauce
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
1 cup water
2 teaspoons beef stock granules
1 tablespoon cornflour, mixed with a little water
1 egg, slightly beaten
1 sheet puff pastry

Steps:

  • Heat a small amount of olive oil in a pan over a medium heat, add onion and mushrooms cook until soft and mushrooms slightly browned, set to one side.
  • In the same pan add a little extra oil, add beef, cook turning meat to brown beef, return onion and mushroom mix.
  • Add the remaining ingredients except for egg and puff pastry, stir to combine everything, turn heat down, simmer covered for about 35-45 Min's, stirring occasionally to tenderize meat. While meat is cooking pre-heat oven to 180 degrees celsius.
  • Roll out pastry sheet, I make mine in 2 individual pie dishes but you can make yours in one if you wish. I do usually have left over pastry which I make either a fruit or jam tart out of.
  • Divide meat mix between 2 oven proof dishes, place pastry over the top, trim edges and brush with egg.
  • Place pies in oven and bake for approx 20 Min's until pastry top is browned.
  • Serve immediately.

1 recipe pastry for a 9 inch single crust pie
3 tablespoons margarine
½ cup chopped onion
1 potato, diced
⅓ cup all-purpose flour
½ teaspoon dried oregano
½ teaspoon garlic powder
¼ teaspoon black pepper
1 ¼ cups beef broth
1 carrot, chopped
1 cup frozen green peas
2 cups cubed cooked or leftover beef

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
  • Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
  • Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

1 1/2 lbs thick-cut round steaks, cut into 1 1/2-inch cubes, fat trimmed
1 (10 3/4 ounce) can beef broth
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon seasoning salt (I use Johnnie's)
1 large onion, coarsely chopped
2 tablespoons butter
1/4 teaspoon thyme, crushed with fingers
3 -4 medium red potatoes, not small ones
1 cup sliced fresh baby carrots, measure after slicing
1 (7 ounce) can corn, drained
1 (14 1/2 ounce) can green beans, drained
1 (4 ounce) can sliced mushrooms, drained (optional)
2 cups beef gravy, homemade or packet kind
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 1/2 cups flour
1 cup cold butter, cut up
1 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/4-1/2 cup ice water
1 tablespoon milk
pepper
thyme

Steps:

  • Pastry:.
  • In food processor, place flour, butter, salt, thyme and pepper.
  • Mix for a few seconds.
  • Then slowly add ice water, pulsing, til mixture forms into a ball.
  • Divide dough in half, wrap each tightly in plastic wrap, and chill in fridge.
  • For filling:.
  • Place first 9 ingredients into pressure cooker. Place on lid.
  • Heat over medium heat til regulator starts rocking.
  • Adjust heat to a gentle rock, and cook for 15 minutes. Let pressure drop on it's own accord. (*Can also simmer in a pot for 45 minutes *or til tender, if desired to do it that way.).
  • Meanwhile, cut up potatoes and carrots and boil til tender, about 10 minutes. Drain.
  • Make 2 cups brown gravy and pour into large bowl.
  • Add potatoes, carrots and rest of vegetables.
  • Carefully open pressure cooker when safe, drain meat and onion, and add to gravy/veggie mixture.
  • Stir in a 1/4 teaspoons each of garlic powder and pepper *or to taste.
  • Roll out 1 ball of chilled pastry to fit a 9" deepdish pie shell and place into dish.
  • Fill with meat mixture.
  • Roll out other ball of dough and cover pie, sealing edges well.
  • *You can do a lattice top, or cut slits to vent in solid top.
  • Brush top and edge with milk, sprinkle with pepper and dried thyme. Just a light sprinkling of each.
  • Bake in 400º oven for 35-40 minutes.
  • Let cool 20-30 minutes before slicing.
