APPLE STREUSEL CHEESECAKE
This is an apple-lovers dream cheesecake, oh so decident and absolutly out-of-this-world tasting! I made this cake for my Thanksgiving dinner, and my guests just went wild over the taste...this is a definate must-make! (note: prep time includes the refrigeration time for the crust)

Steps:
- Set oven to 350 degrees.
- For the crust: In a food processor, mix together flour, icing sugar and ginger.
- Using on/off motion, cut in butter until dough starts to come together in clumps.
- Using hands, press mixture evenly into bottom and up sides of a 10-inch springform pan.
- Refrigerate for 1 hour.
- Using a fork, prick bottom all over.
- Bake in oven for about 20 minutes, or until golden brown.
- Let cool on rack.
- For filling: In bowl, beat together cream cheese and sugar until fluffy.
- Beat in sour cream and vanilla.
- Beat in eggs 1 at a time, until well combined.
- Pour into cooled crust.
- Bake in 300 degree oven for 45 minutes, or until center is just slightly wobbly and indented.
- Transfer to rack.
- For topping: Meanwhile, in a small bowl, mix together sugar, rolled oats, flour, 3 tbsp of the butter, and cinnamon until crumbly; set aside.
- In a large skillet, melt remaining butter over medium-high heat; cook apples, turning once, for about 5 minutes or until golden brown, and slightly softened.
- Arrange apples and any pan juices decoratively over cake.
- Sprinkle with rolled oats mixture.
- Bake in 350 degree oven for 10-15 minutes, or until golden brown.
- Transfer cake to rack; let cool to room temperature.
- Refrigerate for at least 6 hours, or overnight.

ORANGE DREAM CHEESECAKE
This is a very tasty cheesecake, I am a total lover of cheesecake and something different is always a pleasure.

Steps:
- Sprinkle graham crumbs onto bottom of 8 or 9-inch springform pan sprayed with cooking spray. Stir boiling water into dry jelly powder in large bowl 2 minutes until completely dissolved. Cool 5 minutes; pour into blender. Add cheeses; cover. Blend well, stopping occasionally to scrape sides of blender container; pour into large bowl, Gently stir in whipped topping.
- Spread onto bottom of pan.
- Refrigerate 4 hours or until set. Run knife or metal spatula around rim of pan to loosen cake; remove rim. Store leftovers in refrigerators.
- JAZZ IT UP: Garnish with fresh mint sprigs or thin peeled orange slices.

With so many people counting carbs these days, this is a wonderful dessert which is low in carbs. I got this from a pamphlet put out by Kraft Foods ! Try it... delicious!

Steps:
- Sprinkle the graham wafer crumbs onto the bottom of an 8" or 9" springform pan, or a 9" pie plate sprayed with no stick cooking spray.
- Stir boiling water into orange jelly powder in a large bowl, stirring for at least 2 minutes until the powder is completely dissolved.
- Cool for 5 minutes.
- Pour this into a blender, then add cheeses.
- Cover and blend on medium speed until well blended.
- (Scrape down sides of the blender occasionally).
- Pour into a large bowl.
- Add whipped topping and stir gently until well blended.
- Pour into the prepared pan and smooth the top with a spatula.
- Refrigerate for four hours or until set.
- If using a springform pan, remove side of pan just before serving.
TEENAGERS DREAM CHEESECAKE
This is a family favorite. New York style cheesecake with a yummy Oreo cookie crust. Found this recipe in Sunset around 30 years ago. TIP: If you whirl the cream cheese mixture in a food processor, the filling will be thin enough to allow the cookies to float to the top. If prepared with a mixer, filling will keep the cookies in place.

Steps:
- For the crust:.
- In a food processor whirl 1/2 package of the cookies, including the filing, until they form fine crumbs.
- Mix in melted butter.
- Scoop crumb/butter mixture into the bottom of a 9 inch cheesecake pan with removable bottom and press crumbs evenly over bottom of pan and about 1/2 inch up sides.
- Chill crust to firm, about 20 minutes.
- For Filing:.
- Mix cream cheese, sugar and whipping cream at medium speed until smooth.
- Add eggs, flour and vanilla. Beat again to blend.
- Pour 1/2 the cream cheese mixture into chilled crust.
- Break remaining cookies in half and scatter over mixture, overlapping cookies, if necessary, to use all.
- Pour remaining cream cheese mixture over the cookie layer.
- Bake cake in a 300 degree oven until cheesecake is golden on top and jiggles only slightly in center when gently shaken, about 1 hour and 20 minutes
- Take cake from oven a let cool on a rack. Cover and chill until cold, at least 4 hours to overnight.
- Before serving, run a knife between cake and pan sides; remove rim.

LEMON DREAM CHEESECAKE
Divine! Times do not include overnight chilling. Think leftovers could be frozen. And could sub lime juice and zest for lemon, with orange extract instead of lemon extract. If reducing amount, timing needs reducing-4 portions for about 25 minutes.

- Preheat oven to 325 degrees.
- Grease 10 inch springform pan and wrap foil on bottom.
- In a small bowl, combine the cracker crumbs, butter, and sugar.
- Press onto bottom and 2 inches up sides of pan.
- Place pan on a baking sheet.
- Bake for 10 minutes.
- Cool on wire rack.
- In large bowl, beat cream cheese and sugar until smooth.
- Beat in cream, juice, flour, zest, extracts, and food coloring if desired.

JUNIOR'S MOST FAMOUS CHEESECAKE

- Mix 7/8 cup sugar with 3 tablespoons corn starch. Add to 1 pound and 14 ounces cream cheese and mix. Add 1 extra large egg and blend. Then add 1/2 cup heavy cream a little at a time and mix. Then add 3/4 teaspoons vanilla and mix.
- Add ingredients to well greased 7-inch pan with sponge cake on bottom of pan. Bake at 450 degrees for approximately 40 to 45 minutes until top is golden brown. Cool for about 3 hours. To simplify removal from cake pan, allow to fully cool overnight if possible, then reheat in 200 degree oven for 1 or 2 minutes, turn cake upside down and the cake will just slide out.
OREO COOKIE CHEESECAKE
This recipe comes from 'Take 3 Cooks' cookbook. I've always been meaning to make it myself, because the pic looks heavenly, but have not yet gotten around to it. I'm posting this in response to a request, so let me know what you think! It suggests to use chocolate bourbon biscuits instead of Oreo cookies if you can't find them. Don't look at the calories! ;)

- Preheat oven to 190°C/375°F/Gas 5.
- For the base mix the crushed oreos with the melted butter and press firmly into a 14inch (12inch would also work) spring-form cake tin.
- For the filling, whisk the cream cheese, eggs, and sugar until smooth.
- Mix in the cream.
- Pour half of the mixture onto the cake base.
- Add the broken cookies and press down into the mixture.
- Pour the rest of the filling on top.
- Bake in the middle of the oven for approx 25 minutes, the cake edges should look quite set.
- Take it out of the oven and increase the temperature to 240°C/475°F/Gas 9.
- Mix the sour cream with the remaining 2 tbsp of sugar and cover the top of the cake with the mixture.
- Make sure the oven has reached the new higher temperature and then return to bake for exactly 5 more minutes.
- Take it out of the oven and allow it to cool completely, before spreading the remaining 4 tbsp of sour cream over the top and topping it off by sprinkling on chocolate curls.
