This is another VERY QUICK and EASY, yet VERY TASTY soup. This recipe was handed down to me by my mother (who would usually rather eat out than cook). My family loves this with a salad and bread. It is comforting on a cold winter day.

2 tablespoons butter
1/2 cup shredded carrot
1/2 cup frozen onion
3 cups frozen southern style hash brown potatoes
1 (14 ounce) can chicken broth
1 teaspoon salt
1/8 teaspoon pepper
2 cups half-and-half (1 pint carton)

Steps:

  • Melt butter in large sauce pan.
  • Sauté carrots and onion until soft, not brown.
  • Stir in potatoes, broth, salt and pepper.
  • Bring to a boil, simmer 10 minutes or until potatoes are tender.
  • Stir in cream and heat through.
  • Thicken with flour water.

2 ½ cups shredded Cheddar cheese

Steps:

  • Place potatoes, carrots, celery, onion and salt in a large pot with water to cover. Bring to a boil, reduce heat and simmer 20 minutes.
  • Meanwhile, combine butter, milk and flour in a small saucepan over medium-low heat. Stir constantly until smooth and thick.
  • Pour milk mixture into cooked vegetables. Stir in corn and cheese until cheese is melted. Serve.

This recipe is my tribute to James Crockett, the host of 'Crockett's Victory Garden' on PBS in the 1970's. Jim would raise leeks the size of baseball bats and brag about leek and potato soup. His skill in teaching gardening inspired me to pursue a career in horticulture. This version of your soup is my tribute to you.

3 leeks
6 tablespoons butter, divided
¼ cup all-purpose flour
2 (15 ounce) cans chicken broth
5 small red potatoes, peeled and diced
2 slices crispy cooked bacon, chopped
salt and ground black pepper to taste
½ cup water as needed
1 cup half-and-half

Steps:

  • Clean leeks by cutting off the roots and the tips of the leaves. Make a vertical cut from the root end to the tops, being careful to not cut through completely. The leeks will now open like the pages of a book, and any mud can be cleaned out between the leaves under the faucet. Slice the cleaned leeks into quarter-inch strips.
  • Melt half the butter in a skillet over medium-high heat. Saute leeks in hot butter until wilted, 3 to 5 minutes; transfer to a slow cooker.
  • Melt remaining butter in the same skillet over low heat. Gradually whisk flour into the melted butter until the mixture forms a clump of dough. Slowly stream chicken broth into the skillet, continually whisking until the broth is entirely incorporated; pour over the mixture in the slow cooker. Add bacon and potatoes to the slow cooker. Season mixture with salt and pepper; stir.
  • Cook on Low until the potatoes are soft, stirring water into the mixture if it gets too thick, at least 2 hours. Stir half-and-half into the mixture and continue cooking for 1 hour more.

2 cups diced potatoes
1 tablespoon butter
1/4 cup onion, diced

1 tablespoon water

Steps:

  • Combine, in a large pot,all ingredients except milk and flour/water.
  • Cook until potatoes are fork tender.

  • Bring to a boil and allow to cook for 10 minutes.
  • Serve with chopped green onion and shredded cheese as a garnish.

1 tablespoon butter
1/4 pound bacon, diced
1 cup chopped onion
3/4 cup chopped green pepper
Kosher salt and black pepper
1 tablespoon minced garlic
2 tablespoons flour
4 cups chicken broth or stock
4 cups peeled, finely diced all-purpose potato
1 1/2 cups shredded carrot
2 cups fresh or frozen corn kernels
1 cup half-and-half
1/2 teaspoon dried thyme
Pinch of cayenne pepper
2 tablespoons chopped fresh Italian parsley

Steps:

  • Sling the butter into a soup kettle and melt over medium-high heat. Add the bacon and cook till crisp. Scoop out the bacon and drain on paper towels. Save for later--don't nibble too much.
  • Pour off all but 1/4 cup of fat from the pot. Toss in the onions and peppers, seasoning them with a pinch of salt and pepper. Cook till soft and then throw in the garlic, cooking it all for 1 minute more. Sprinkle on the flour and mix into the veggies. Dump in the broth and potatoes. Cover the pot and bring to a boil; then lower the heat and simmer for 10 to 12 minutes, or till the potatoes are tender. Add the shredded carrots and corn. Cover and simmer everything 5 to 6 minutes longer to blend the flavors.

Steps:

1 large yellow onion
2 celery ribs
1 carrot
2 medium russet potatoes
1 red pepper

1 medium zucchini
1 yellow squash
4 cups vegetable broth
1/2 cup roasted corn kernel

Steps:

  • Medium dice onions, celery, carrots and potatoes, placing them in one bowl.
  • Medium dice bell pepper, zucchini and yellow squash; mince garlic and jalapenos, and place in second bowl.
  • Heat the oil over medium high heat until hot but not smoking and sauté onion mixture, stirring till onions are translucent. Add pepper mixture and sauté, stirring, about 2 minutes. Stir in corn, bouillon, marjoram, parsley, a generous amount of salt, and pepper; cover and cook until corn is warmed through, about 2 minutes. Stir in flour; cover and cook 2 minutes more.

6 slices bacon
6 cups fresh corn kernels
2 leeks, chopped (enough for two cups)
2 minced garlic cloves
1/2 cup diced onion
1 zucchini, chopped (enough for about 1 cup)
3 potatoes, chopped (enough for about 2 cups)
3 cups chicken broth
1/2 cup whipping cream
1/4 teaspoon cayenne pepper
fresh chives, chopped (about 2 tbsp.)
5 roma tomatoes

Steps:

  • Saute the bacon in a large pot or deep skillet over medium-high heat until crisp and brown. Transfer bacon (using slotted spoon) to paper towels to drain. Once the bacon cools, chop the bacon (or chop before cooking - up to you).
  • Add corn, leeks, garlic cloves, onion, zucchini, potatoes to the bacon drippings and saute for about 5 minutes.
  • Add the 3 cups of chicken broth to the sauteed vegetables and simmer uncovered over medium heat until vegetables are tender - about 20 minutes.
  • Transfer 3 cups of the soup to a blender and puree until smooth.
  • Return the puree to the soup in the pot/skillet. Stir in cream and cayenne pepper.
  • Bring the chowder to a simmer and thin it with more broth if it's too thick.
  • Season to taste with salt and pepper. Ladle the chowder into bowls and sprinkle with chopped tomatoes, bacon and chives.

After trying the most wonderful potato soup at a local market I tried to come home and duplicate it. It didn't turn out exactly the way I wanted but I found my version better. I got the name Potato Chowder soup because when my husband tried it he thought it tasted like a chowder. Also a can of corn could be added as a quick variation. Very tasty and warms the soul on a dreary damp day.

1 1/2 pounds Yukon gold potatoes, peeled and cut into 3/4-inch dice

  • Place clams and water in a medium saucepan over medium-high heat. Cover, and bring the water to a boil. Cook, stirring occasionally, until the clams have opened, 5 to 8 minutes. Remove clams, discard shells, and pass the broth through a cheesecloth-lined sieve, reserving the broth and clams separately. Set both aside.
  • Melt butter in a medium stockpot over medium heat. Add onion and celery, and cook, stirring frequently, until onion is translucent, about 4 minutes. Add flour, and cook, stirring, for 30 seconds. Add the reserved clam broth and the potatoes, bay leaf, and thyme. Cover, and bring to a boil. Reduce heat to medium-low, and simmer until the potatoes are tender, 10 to 12 minutes. Uncover, and add fish and shrimp. Cover, and simmer until cooked through, about 3 minutes. Add half-and-half and the reserved clams; season with salt and pepper. Heat through, but do not return to a boil.

2 cups diced unpeeled red potatoes
1 cup diced carrot
1/2 cup diced celery
1/4 cup chopped onion
1 teaspoon salt

1/4 cup all-purpose flour
2 cups 2% milk
2 cups shredded reduced-fat cheddar cheese
1 cup cubed fully cooked ham

Steps:

  • In a Dutch oven, combine the first 7 ingredients. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until tender., Meanwhile, place flour in a large saucepan; gradually whisk in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Add cheese; stir until melted. Stir the ham and the cheese sauce into undrained vegetables; stir until combined.

One of my goals in life is to make as many delicious things from potatoes as possible...They're so CHEAP! I absolutely could not believe how good this was. I'm a beginning cook, so it was a little intimidating how attentive I had to be to the chowder-making process, but that's just the way chowders are--and this was SO worth it. I've cooked it for everyone I know, so they think I'm some kind of fancy kitchen goddess. It's simply lovely to make on a chilly night (isn't it pleasant to huddle near delicious-smelling steam rising off of yummy food when it's cold out there?), and I like to serve it with beer bread. I often add more veggies than the recipes calls for, and have used all different kinds of cheeses as well.

1 1/2 cups water or 1 1/2 cups vegetable broth
3 medium potatoes, peeled and cubed
1 stalk celery
1 medium carrot, chopped
1/4 cup butter
1 medium onion, chopped
1/4 cup all-purpose flour
1 teaspoon salt (or to taste)
1/8 teaspoon pepper (or to taste)
1/8 teaspoon cayenne pepper (optional)
4 cups milk
8 ounces shredded mild cheddar cheese
4 ounces swiss cheese
1/2 teaspoon caraway seed

Steps:

  • Combine water, potatoes, celery and carrot in medium saucepan. Bring to boil. Reduce heat and simmer uncovered until veggies are tender (about 10 minutes).
  • Meanwhile, melt butter in a large saucepan over medium heat.
  • Cook and stir onions in butter until onions are tender but not brown (about 2 minutes).
  • Stir in flour, salt and pepper (and cayenne if using). Cook and stir about 1 minute.
  • Stir in milk and potato mix.
  • Cook and stir over medium heat until bubbly.
  • Stir in cheeses and caraway seeds.
  • Reduce heat to low and simmer uncovered until cheeses are melted and mixture is hot, stirring constantly.
