4 cups mashed potato, leftover/cold - prepared to your liking
½ cup green onion, sliced
¾ cup cooked bacon, chopped
1 teaspoon garlic powder
½ teaspoon black pepper
2 eggs
cheddar cheese, block - cut into small cubes
1 cup flour
1 cup bread crumbs
oil, for frying
salt, to taste

Steps:

  • Cut cheddar cheese block into small cubes.
  • Place cold mashed potatoes into a large mixing bowl. Add green onion, chopped bacon, garlic powder, black pepper, and 1 egg - mix well.
  • With lightly floured hands - pick up a tablespoon sized ball of potato mixture and flatten into a small pancake. Place a cube of cheddar in the center and wrap the potato mixture around the cheese. Repeat.
  • In three separate bowls, add flour, remaining egg (whisked) and breadcrumbs. Coat the potato ball in flour, then egg, then breadcrumbs. Coat once more with egg and once more with bread crumbs. Set aside - store in fridge while you wait to fry.
  • In a medium pan heat oil over medium/high heat (to approximately 350˚F (180˚C). Fry the potatoes in batches until browned on all sides.
  • Transfer fried potato balls to paper towels to drain excess oil. Sprinkle with salt.
  • Transfer to a baking tray and bake in a preheated oven for 5 minutes at 400˚F (200˚C).

1 - 8 oz cream cheese
1 1/2 c sharp cheddar cheese ( sometimes i use extra sharp, such as today ) i used white and shred my own
1/4 c each - shredded, swiss cheese & shredded mild cheddar
1 Tbsp worcestershire sauce
2 1/2 Tbsp minced onion
1/8 tsp garlic powder or more to taste
1 clove minced garlic, if not using, up the garlic powder
1 c chopped, walnuts
chili powder & smoked paprika - i combine them, can use just chili powder
crackers to spread

Steps:

  • 1. Place all ingredients in a large bowl, except for the chili powder. Note: You can change the cheeses to your liking....I like the combination of the three, especially the sharp cheddar. Also, if you're not into chili powder, roll in nuts. The chili powder is tasty though!
  • 2. Mix well, until everything is thoroughly incorporated.
  • 3. Shape into a ball or log shape. Roll into chili powder, or if easier sprinkle it on...I used a combo of chili powder and smoked paprika....
  • 4. Cover and refrigerate until time to serve. Serve with your favorite crackers. Yum!

2 (8-ounce) packages reduced-fat cream cheese (at room temperature)
1/3 cup strawberry preserves
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
6-10 dashes hot sauce
1 cup freshly shredded extra-sharp cheddar cheese
1 cup raw pecan pieces
2 tablespoons chopped fresh parsley
Crackers or baguette slices ((I like buttery Ritz-type crackers or town house crackers))

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and preserves until smooth and creamy. Scrape down the bowl, then beat in the garlic powder, salt, and hot sauce, and then the cheddar cheese.
  • Lay a large sheet of plastic wrap on the counter. Scrape the cheese mixture into the center in as circle-like of a mound as you can. It will not be a perfect ball at this point. Wrap the edges of the plastic around it to seal and encourage it to form a round ball. Place the wrapped cream cheese in a bowl and refrigerate for at least 1 hour or overnight.
  • Toast the pecans: Preheat the oven to 350 degrees and spread the pecans onto an ungreased baking sheet. Bake for 7 to 9 minutes, stirring once or twice, until they are deeply toasted and fragrant. Watch very carefully toward the end of the baking time to ensure the pecans do not burn. Transfer to a cutting board and chop into small bits. Let cool completely to room temperature.
  • When ready to serve, remove the cheese ball from the refrigerator. Place the chopped pecans on a plate. (I find it's easiest to use a plate with edges that curve up a little. A pie dish works well too.) Add the parsley and lightly mix with your fingers to combine. Unwrap the cheese ball and place it on the plate with the parsley and pecans, coating well. The cheese ball won't roll like a true ball. Gently lift and turn it, patting the pecans and parsley all over the outside. Carefully lift it onto a serving plate. Serve with crackers or baguette slices.

  • Place the cream cheese in a large mixing bowl and beat with an electric mixer until smooth, about 1 minute. Scrape the sides of the bowl and sprinkle garlic powder over the cream cheese. Add the Worcestershire sauce. Mix again until well combined, about 1 minute.
