Make hard-cooked eggs to start preparing your Pickled Eggs! For spicier Pickled Eggs, add some jalapeño peppers to the jar of Pickled Eggs ingredients.

Number Of Ingredients 7

1 cup HEINZ Apple Cider Vinegar
1/2 cup HEINZ Tarragon Vinegar
1/2 cup water
1/3 cup sugar
1/2 tsp. salt
12 small hard-cooked eggs, peeled
1 small red onion, thinly sliced, separated into rings

Steps:

  • Bring vinegars, water, sugar and salt to boil in medium saucepan, stirring occasionally. Cool 15 min.
  • Layer eggs in sterilized 1-qt. wide-mouth jar alternately with onions. Add vinegar mixture. (Note: Eggs and onions should be completely covered with vinegar mixture. If not, add more water.) Cover with lid.
  • Refrigerate 3 weeks. Remove eggs and onions from marinade just before serving; discard marinade. Slice eggs; top with onions.

Russian Tarragon Pickles image

I adapted this from a cookbook posted by MIR in the 1970's. I am not a big fan of tarragon, so I prefer dill pickles, but if you are a fan of tarragon, give these a try! Like dill pickles, these are very simple to make.

2 quarts pickling cucumbers
4 cups vinegar
3 1/2 cups water
2 tablespoons pickling salt
4 -8 fresh tarragon sprigs
8 -12 cloves garlic
2 -4 mild red chile peppers

Steps:

  • Scrub the cucumbers very well.
  • Put the jars in a canner, add water to cover them by 1", and bring them to a boil; boil for 10 minutes.
  • Pack the jars with cucumbers, putting a good sprig or two of tarragon in each jar.
  • Add 2-3 cloves of garlic and the pepper; half of one if they are on the large side.
  • Make a brine of the vinegar, salt and water and pour over the cucumbers.
  • Seal with sterilized lids.
  • Set aside for 6 weeks in a cool dark spot before trying.

TARRAGON DEVILED EGGS

6 large eggs
Kosher salt and freshly cracked black pepper
1 tablespoon Dijon mustard
1 tablespoon minced shallot
1 tablespoon finely chopped sweet gherkins, plus 1 teaspoon brine
2 teaspoons finely chopped tarragon, plus 12 tarragon leaves, for garnish

Steps:

  • Put the eggs in a small saucepot. Add cold water to cover by about 1-inch. Bring the water to a boil over medium-low heat, then turn off the heat, cover and let sit for about 12 minutes.
  • Cool the eggs down in cold water, then peel and split lengthwise. Remove the yolks to a bowl and reserve the whites. Using a fork, mash the yolks with salt, pepper, to taste, and Dijon until smooth. Add the shallot, gherkins, brine and tarragon and stir to combine. If too thick, add a teaspoon more of gherkin brine liquid. Spoon into a resealable plastic bag and cut off a corner. Pipe the yolk mixture into the egg white halves. Top each half with a tarragon leaf. Arrange on a serving platter and serve.

Use this recipe as a last minute side dish. These lightly spiced pickled eggs are always a treat, especially served with breads and cheeses.

12 eggs
1 cup tarragon vinegar
1 cup water
2 tablespoons white sugar
1 teaspoon salt
½ teaspoon celery seed
1 clove garlic, minced
2 bay leaves

Steps:

  • Place eggs in a large saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  • In a medium saucepan over medium heat, mix the tarragon vinegar, water, sugar, salt, celery seed, garlic and bay leaves. Bring to a boil, then simmer 30 minutes. Set aside to cool.
  • Pour mixture over eggs; cover and refrigerate for 2 to 3 days.
