This is a simple yet delicious recipe. For extra richness, mayonnaise may be substituted for the yogurt and salt.

Ingredients

½ cup raisins
2 cups pineapple tidbits, drained
1 pound carrots, grated
1 cup pineapple yogurt
2 tablespoons white sugar
⅛ teaspoon salt

Steps:

Soak raisins in hot water for 30 minutes. Drain and dry.
In a mixing bowl, combine the raisins, pineapple and carrots.
Mix together the yogurt, sugar and salt. Add to carrot mixture; mix well, cover and refrigerate.

Ingredients

3 large pineapple
2/3 cup cashew nuts
1/2 cup coconut, slivers
1 cup cream
4 tablespoons honey
1 1/2-3 ounces white rum (to taste, 1-2 shots)

Steps:

Peel the pineapples and cut the flesh into cubes.
In a dry frying pan, toast separately the cashews and coconut until lightly browned, then set aside to cool.
Mix together the cream, honey and rum to taste and pour this mixture over the pineapple cubes.
Reserve some of the toasted cashews and coconut to use a garnish, then add the remainder to the pineapple.
Mix well and place in the refrigerator to chill.
Before serving, garnish with the reserved cashews and coconut slivers.

1 large can of chunk pineapple, drained and reserved
1/2 c sugar
1 Tbsp flour
1 large egg
1/2 lb cheese, shredded
1/2 pkg marshmallows, mini

Steps:

1. Take reserved pineapple juice, 1/2 cup sugar, flour and egg.Cook until thick then cool. Dice pineapple. When mixture cool then combine with pineapple, cheese and marshmallows.
