1 cup ketchup
2 tablespoons lemon juice
2 tablespoons cider vinegar
1/4 cup packed brown sugar
2 teaspoons prepared mustard
1 teaspoon salt
1/2 to 1 teaspoon hot pepper sauce
1 bay leaf
1 garlic clove, minced
1/2 cup water
2 teaspoons Worcestershire sauce

Steps:

  • Combine all of the ingredients in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 30 minutes., Discard bay leaf. Use as a basting sauce when grilling chicken, pork or beef.

FRIED CALAMARI WITH SWEET ORANGE SAUCE

2 cups orange juice
1 1/2 tablespoons honey
2 tablespoons canola oil
1 tablespoon lemon juice
2 teaspoons finely chopped fresh parsley
Pinch crushed red pepper flakes
Vegetable oil, for frying
1 cup all-purpose flour
1/2 cup cornstarch
1 1/2 teaspoons paprika
Kosher salt and freshly ground black pepper
1 pound small squid bodies and tentacles, bodies cut into 1/3-inch-thick rounds
1 jalapeno, thinly sliced
1 Fresno chile, thinly sliced
1 tablespoon finely chopped fresh parsley
Orange and lemon wedges, for serving

Steps:

  • For the sweet orange sauce: Combine the orange juice and honey in a medium saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and cook at a very brisk simmer until the mixture is syrupy and reduced to a little less than 1/2 cup, 15 to 20 minutes. Remove from the heat. Let cool slightly, then whisk in the oil, lemon juice, parsley and crushed red pepper. Transfer to a ramekin or small bowl.
  • For the fried calamari: Fill a large, wide pot with 1 1/2 inches oil and heat over medium-high heat until it registers 350 degrees F on a deep-frying thermometer. Line a tray with paper towels. Meanwhile, whisk together the flour, cornstarch, paprika, 2 teaspoons salt and 1 teaspoon pepper in a wide, shallow bowl.
  • Toss the squid and chiles with the flour mixture, making sure all the squid rings are separated and everything is thoroughly coated. Transfer about a third of the squid and chile mixture to a kitchen spider or slotted spoon and shake to remove the excess flour. Carefully add the squid and chiles to the hot oil and fry until crisp and just barely golden, 1 to 1 1/2 minutes. Transfer to the prepared tray with a slotted spoon and sprinkle generously with salt. Repeat the sifting and frying process with the remaining squid, making sure to return the oil to 350 degrees F between batches.
  • Transfer to the fried squid to a plate and sprinkle with the parsley. Serve with the lemon and orange wedges and the sweet orange sauce for dipping.

Tangy and sweet, this sauce is a great compliment for grilled chicken or ribs. The longer you let it simmer, the spicier it will taste. The trick to this sauce is to start with the basic ingredients and then gradually add more of your favorite spice until you reach YOUR desired taste. I like it spicy but you might prefer it sweet. Be careful with the orange zest because it will overwhelm the other flavors if you use to much.

1/8 cup honey
1/8 cup brown sugar
1/8 cup butter
3/4 cup Worcestershire sauce (start with 1/4 cup. Add rest gradually stop when you reach your desired taste.)
1 small orange, zest of
1/4 cup diced onion
2 whole bay leaves
1 teaspoon oregano
1 teaspoon basil
1 teaspoon garlic (minced)

1 tablespoon coarse black pepper

Steps:

  • In a med. saucepan over med. heat. Simmer Ketchup, honey, sugar and butter.
  • Stir constantly until butter is completely melted - Do not boil!
  • Add other ingredients- simmer 10 minutes and taste.
  • Gradually add additional seasoning until desired flavor is reached. (ie. Spicier- more pepper, sweeter- more honey.)
  • IMPORTANT.
  • When adding ingredients do not exceed 1/8 teaspoons at a time. After you add, let it simmer for at least five minutes This will bring the flavors and give you a more honest taste.
  • Also if you boil it you'll most likely burn it, so stir constantly.

FAST AND EASY TANGERINE SAUCE

Easy sauce for vegetables, chicken, or fish. I originally developed this recipe as a topping for fresh steamed broccoli but found it works well with a variety of foods. I get the tangerine juice from Walmart but other large grocery stores and natural food markets should carry it. For a slightly different flavor try mandarin orange juice.

1 1/2 cups tangerine juice (no pulp)
1 tablespoon fresh lemon juice
1 tablespoon cornstarch
2 tablespoons butter
1/2 teaspoon salt

Steps:

  • Put 1 cup of tangerine juice in sauce pan along with lemon juice, butter, and salt.
  • Put pan on low heat.
  • You want to heat up the mixture without boiling it.
  • The butter should be completely melted and sauce steaming.
  • While the main ingredients are heating up, mix the remaining 1/2 cup of tangerine juice with the corn starch and mix until smooth.
  • Once the sauce is steaming slowly whisk the corn starch mixture into the pan.
  • Keep whisking until sauce thickens.
  • Once sauce has thickened, remove from heat and serve over you favorite steamed vegetables (it is excellent over broccoli), fish, or chicken.

2 tablespoons grated peeled fresh ginger
1 teaspoon toasted sesame oil
1/4 teaspoon sugar
1 fresh red chile, thinly sliced crosswise
2 heads savoy cabbage (1 3/4 pounds total)
12 ounces large shrimp, peeled, deveined, and finely chopped
1/4 teaspoon coarse salt
1/3 cup finely chopped water chestnuts
1 tablespoon minced peeled fresh ginger
1/3 cup finely chopped scallions (about 4), white and pale-green parts only
3 tablespoons chopped fresh cilantro
6 garlic cloves, minced
1 teaspoon finely chopped fresh serrano chile
1 large egg white
2 1/2 teaspoons cornstarch

Steps:

  • Make the dipping sauce: Stir juices, ginger, oil, sugar, and chile in a bowl. Refrigerate until ready to use, up to 1 day.
  • Make the shrimp rolls: Remove 6 of the best whole leaves from each cabbage; set aside. (Reserve remaining cabbage for another use.) Place shrimp in a medium bowl; sprinkle with salt. Stir in water chestnuts, ginger, scallions, cilantro, garlic, and chile. Add egg white and cornstarch; stir until combined. Turn mixture out onto a cutting board. Finely chop all ingredients just until a paste forms.
  • Place 2 tablespoons filling at base of 1 cabbage leaf; shape into a log. Fold leaf's ends in and roll tightly around filling. Place in a bamboo steamer. Repeat with remaining leaves and filling.
  • Fill a wok or large skillet with 1 inch of water; bring to a boil. Place steamer over wok (bottom slats should not touch water); reduce heat to medium. Cover, and steam until cabbage leaves are soft and shrimp are cooked through, 20 to 25 minutes. Halve rolls diagonally, and serve with the dipping sauce.

2 (15-ounce) cans mandarin oranges, drained
Tangy Sabayon Sauce, recipe follows
2 tablespoons brown sugar
2 egg yolks
3 tablespoons sugar
2 tablespoons sweetened wine, such as marsala
1 tablespoon sour cream

Steps:

  • Preheat the broiler on low.
  • Place the oranges in a medium ovenproof dish, or divide among 4 ovenproof custard dishes. Spoon the Tangy Sabayon Sauce over the top (a couple tablespoons over each if using the individual dishes). Sprinkle with brown sugar. Place on a baking sheet, place under the broiler, and cook until golden to dark brown. Watch very closely for burning! Serve immediately.
  • Place the egg yolks, sugar, and wine in a metal bowl. Place the bowl over a saucepan of barely simmering water, making a double boiler. Whisk the mixture constantly until it foams and then becomes creamy and doubles in size, about 5 minutes. Mixture should be uncomfortably warm to the touch, but not burning. Remove the pan from the heat and whisk in the sour cream.

1/2 tsp. sesame oil
2 tsp. cornstarch
1/2 Cup water

Steps:

  • Put all ingredients into a non stick frying pan and boil for a few minutes.
  • Whisk until the sauce reduces enough to begin thickening.
  • Mix the cornstarch and water together and pour half of it into the boiling sauce, whisking until the sauce thickens to your desired consistency.(a syrup consistency works well).
  • Use the remaining cornstarch as necessary.
  • Remove from heat and cool to desired temperature.
  • Store in the fridge covered for up to a week. If it gets too thick warm it a bit and whisk in a little water.

  • In a small sauce pan, add the rest of the ingredients and warm on medium-high heat whisking frequently until you reach a gentle boil (about 3 minutes).
  • Then, add the corn starch mixture to the pot (you will need to mix very well the cornstarch mixture before transferring) and whisk well for about 30-60 seconds, still at medium-high heat, until the sauce thickens.
