Naturally Sweetened Lemon Gelatin Recipe (Copycat Jello) image

Tart and sweet, this lemon jello is irresistibly jiggly and easy to make.

Number Of Ingredients 5

½ cup fresh lemon juice
1¼ cups water ((Divided))
¼ cup light colored honey ((Or more to taste))
7 tsp grass-fed unflavored gelatin
¼ tsp lemon extract

Steps:

  • In a small bowl mix together the lemon juice, 1/4 cup water and gelatin powder. Set aside.
  • In a small saucepan combine 1 cup water and honey.
  • Heat over medium-low heat until the mixture is hot but not boiling.
  • Whisk in the gelatin mixture until completely it is dissolved. Taste and add more honey if needed. For extra lemon flavor, I recommend adding 1/4 teaspoon lemon extract if you have it on hand.

Tangy Lemon Curd that is smooth and perfectly lemony. Make sure to use gelatin sheets and make sure to bloom for 20 minutes.

1/2 ounce gelatin sheets
4 ounces ice water (used to bloom gelatin)
16 ounces lemon juice
2 ounces lemon zest
24 ounces sugar
12 ounces eggs
3 ounces egg yolks
1/2 ounce butter, Melted

Steps:

  • Bloom gelatin in ice water.
  • Heat lemon juice, zest, and half of sugar.
  • Mix together remaining sugar, eggs, and egg yolks.
  • Temper in hot lemon juice into sugar and egg mixture.
  • Place mixture back onto stove.
  • Continue cooking, whisking continuously until the mixture reaches 195°F.
  • Remove from heat; Add butter and bloomed gelatin leaves (make sure to squeeze excess water out of gelatin sheets before putting in).
  • Strain through fine sieve into bowl.
  • Cover directly with plastic wrap (to prevent skin) and chill.

1-1/4 cups water, divided

2 packages (3 ounces each) lemon gelatin
1/2 cup lemon juice
1 teaspoon grated lemon zest
1/4 cup clear edible glitter

Steps:

  • Line an 8-inch square pan with foil and spray foil with cooking spray; set aside., In a small bowl, sprinkle unflavored gelatin over 1/3 cup water; set aside., In a small saucepan, combine 2 cups sugar and remaining water. Bring to a boil over medium heat. Cook and stir until the sugar dissolves. Cook, without stirring, until candy thermometer reads 260° (hard-ball stage). Remove from the heat., Stir lemon gelatin and unflavored gelatin mixture into hot syrup; stir until sugar dissolves. Stir in lemon juice and zest. Pour into prepared pan. Cover and refrigerate overnight or until candy is set., Combine edible glitter and remaining sugar; spread half of mixture over a 14x12-in. piece of paper. Invert candy onto the parchment. Cut candy into 48 triangles and coat with remaining glitter mixture. Store candy in an airtight container at room temperature for up to 1 week.

1 envelope unflavored gelatin
1/4 cup water
1 cup sugar, divided
1/4 teaspoon salt
5 egg yolks
1/2 cup lemon juice
2 cups heavy whipping cream
3 to 4 drops yellow food coloring, optional
1/3 cup semi-sweet chocolate morsels
2 teaspoons shortening
1 pastry shell (9 inches), baked
Fresh raspberries and mint leaves
Lemon slices

Steps:

  • In a small saucepan, sprinkle gelatin over water; let stand 2 minutes to soften. Add 1/2 cup sugar and salt. Cook and stir over low heat until sugar is dissolved., In a medium bowl, beat egg yolks on high speed about 5 minutes or until pale yellow. Gradually drizzle hot gelatin mixture into yolks, beating constantly. Return yolk mixture to same saucepan. Stir in lemon juice. Cook over low heat until mixture thickens and bubbles around the edges, stirring constantly. Cool to room temperature. In a large bowl, combine cream, food coloring if desired and remaining sugar. Beat a high speed until soft peaks form. Add cooled lemon mixture. Continue beating at high speed until stiff peaks form., Microwave chocolate and shortening in a small resealable plastic bag on high for 30 seconds. Knead bag to mix. If necessary, microwave at additional 10-15-second intervals until melted. Spoon half of lemon filling into pastry shell. Cut a small hole from corner of bag and drizzle half of chocolate over filling. Top with remaining filling. Drizzle remaining chocolate over pie. Chill pie at least 2 hours before serving. Garnish with raspberries, mint and lemon.

1 baked 10 inch angel food cake
6 eggs, separated
1 1/4 cups white sugar, divided
3/4 cup lemon juice
1 tablespoon unflavored gelatin
1/4 cup water

Steps:

  • Bake angel food cake as per directions.
  • Trim off the crusts and break into bite size pieces.
  • Combine 6 egg yolks, 3/4 cup sugar and 3/4 cup of lemon juice.
  • Cook in double boiler until thickened (coats spoon).
  • Remove from heat and add 1 tbsp.
  • unflavored gelatin softened in 1/4 cup of water to mixture and cool.
  • Beat 6 egg whites till stiff and add 1/2 cup sugar.
  • Fold whites into egg yolk mixture.
  • Arrange 1/3 of cake pieces loosely in bottom of tube pan.
  • Pour 1/3 of lemon custard mixture over cake.
  • Continue until there are 3 layers ending with the custard mixture.
  • Refrigerate overnight.
  • Loosen and remove from pan.
  • Frost with whipped cream.
  • An alternative method to assembling this cake would be to mix the angel food pieces with the custard mixture and put in a spring form pan. Make it the day before. When released from the pan frost with whipped cream or Cool Whip. This works wonderfully.

3 3/4 cups cold water, divided
3 (1/4 ounce) envelopes unflavored gelatin
1 1/2 cups sugar, plus
3 tablespoons sugar, divided
1 1/2 cups fresh lemon juice (from about 9 lemons)
1 teaspoon grated lemon zest
yellow food coloring (optional)
3/4 cup heavy cream
1 sprig of fresh mint (to garnish) (optional)
lemon zest, curls (to garnish) (optional)
lemon slice (to garnish) (optional)

Steps:

  • Put 1/2 cup of the water in a small bowl, sprinkle the gelatin over it and stir. Let soften for 2 minutes. Meanwhile, in a medium saucepan combine the remaining 3 1/4 cups of water, 1 1/2 cups of the sugar, the lemon juice and the lemon zest and bring to a boil. Remove from heat and add the softened gelatin, stirring for 1 minute or more to dissolve all lumps. Stir in a few drops of food coloring, if desired.
  • Pour into a heat-safe medium-size bowl, let cool, cover with plastic wrap and refrigerate until firm (at least 6 hours).
  • Just before serving, whip the cream with the remaining 3 tablespoons of sugar, until it holds stiff peaks.
  • Fill goblets or sundae glasses halfway with gelatin, top with half of the whipped cream, then fill with more gelatin and top with remaining whipped cream. Garnish with mint sprigs, lemon zest curls or slices and serve.
