1 lb boneless skinless chicken breast (sliced into small chunks)
2 tablespoons olive oil
1/4 cup stir-fry sauce
1/2 cup asian toasted sesame dressing (for marinade)
2 tablespoons asian toasted sesame dressing (for coleslaw)
2 tablespoons soy sauce
2 tablespoons teriyaki sauce
1 cup coleslaw mix
10 wonton wrappers
oil (for frying)
1/4 cup green onion (sliced)
1/4 cup cilantro (chopped)
1/4 cup red onion (diced)

Steps:

  • Step 1: In a bowl or seal-able plastic bag. Combine stir fry sauce, Asian toasted sesame dressing, soy sauce, and teriyaki sauce. Add chicken and mix well with the sauce. Cover and refrigerate for 1 hour.
  • Step 2: In a medium bowl toss coleslaw mix with 2 tablespoons of Asian sesame dressing. Set aside.
  • Step 3: Heat olive oil in a wok over high heat. Add chicken with the marinade and stir fry until the chicken is fully cooked. Remove from the wok and transfer to a bowl. Add about 1/2 inch of oil to the wok over medium high. Fold the wonton wrappers into a triangle formation but do not seal. Place into the hot oil and fry until golden brown on one side. Turn once and fry until golden brown on the other side. Drain on paper towels.
  • Step 4: To make tacos- place a small amount of the chicken mixture into the bottom of the fried wonton. Top with coleslaw mixture, green onion, cilantro and red onion.

2 tablespoons salted butter, melted
12 wonton wrappers
One 15-ounce can black beans, drained and rinsed
One 4-ounce can diced green chiles, drained
2 teaspoons chili powder
Juice of 1/2 lime
1/2 cup grated Monterey Jack cheese
1/2 small avocado, diced
1/3 cup pico de gallo
1/4 cup sour cream
Hot sauce, if desired
1/4 cup fresh cilantro leaves

Steps:

  • For the wonton cups: Preheat the oven to 375 degrees F.
  • Brush 12 cups of a mini muffin pan with the butter. Fit 1 wonton wrapper into each cup, folding the sides as needed.
  • In a small bowl, toss together the beans, green chiles, chili powder and lime juice. Spoon some of the bean mixture into each cup, about a heaping tablespoon each. Bake until the filling is warmed through, about 12 minutes. Remove the pan and top each cup with a pinch of cheese. Return the pan to the oven and continue to bake until the cheese is melted and the wontons are golden, another 5 minutes.
  • For the toppings: Let the taco cups cool in the pan for a minute or two. Transfer the taco cups to a platter and top each with some avocado, pico de gallo, a small dollop of sour cream, hot sauce, if using, and cilantro.

These wonton cups have all the flavors of a taco salad in one bite! Customize your taco cups with your favorite salsas and toppings!

Nonstick cooking spray, for greasing
Twenty-four 3.5-by-3.5-inch square wonton skins
1 tablespoon olive oil
1 small yellow onion, diced (about 1 cup)
2 cloves garlic, peeled and grated
1/2 pound ground turkey, preferably dark meat
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
Heaping 1/2 cup grated Cheddar
Assorted toppings, such as shredded lettuce, diced avocado, salsa, sour cream, pickled jalapeños, and chopped cilantro, for serving

Steps:

  • Preheat the oven to 400 degrees F and spray a 24-cup mini muffin tin with nonstick cooking spray.
  • Delicately press the wonton skins into the mini muffin tin, being sure to make the base of the wonton skin is flat (this will ensure that the taco cup will stand flat when you remove them from the pan). Spray the wontons lightly with nonstick cooking spray and transfer them to the oven to bake until they are golden brown and crisp, 7 to 10 minutes.
  • In the meantime, heat a nonstick pan over medium-high heat. Add the olive oil and swirl to coat the pan. Add in the onion and sauté until translucent, about 4 minutes. Add in the garlic and stir to combine. Add in the turkey, breaking up with a wooden spoon. Next add in the chili powder, cumin, dried oregano, smoked paprika, and salt. Cook, stirring frequently, until the turkey is cooked through, about 5 to 7 minutes.
  • To assemble, keep the taco cups in the mini muffin tin (this will help with any unstable taco cups). Add a little cheese to each of the taco cups, then top them with the ground turkey mixture. Next add your desired toppings such as shredded lettuce, diced avocado, salsa, sour cream, pickled jalapeños, and chopped cilantro.
  • Transfer the taco cups to a platter and serve.

It's a mini taco! Spiced ground beef & cheese enclosed in a crunchy shell. Use whatever combination of meat & cheese you like. This is what I had on hand. Filling to wrapper ratio is not approximate. If you have extra of either just freeze for later use. Prep time includes refrigeration.

1 lb lean ground beef
1 (1 1/4 ounce) packet taco seasoning
1/2 cup chunky salsa
green onion, finely chopped (optional)
1/2-1 cup shredded low-fat Mexican cheese blend
wonton wrapper
oil (for frying)

Steps:

  • Brown ground beef & drain.
  • Add taco seasoning & salsa. Simmer for 5 minutes. Remove from heat & let cool. Refrigerate for 30 minutes (mixture is easier to work with after being refrigerated). Not necessary, but works for me.
  • Add shredded cheese & green onion. Mix well.
  • Lay out six wrappers at a time & keep the rest under a damp paper towel to prevent from drying out.
  • Fill each wrapper with about a tablespoon of filling (don't overstuff).
  • Dampen the edges of wrapper with water or egg wash. Fold over forming a triangle.
  • Push out any air and pinch edges to properly seal.
  • These may be frozen at this point. Lay on a tray in a single layer. Freeze. Then transfer to a freezer bag. When ready fry from frozen.
  • Heat oil in deep fryer or can shallow fry in skillet until golden brown and crisp.
  • Serve immediately with extra salsa & sour cream for dipping.

  • Preheat oven to 375ºF and spray 8 standard muffin tins with non-stick cooking spray. Place 1 wonton wrappers in each muffin tin.
  • Heat a medium skillet over medium heat and add ground beef. Brown for 5 minutes. Stir in chili powder, cumin and sea salt. Continue to cook for 3 minutes longer. Turn heat off and stir beans and salsa into ground beef.
  • Spoon half of the beef mixture on top of the wontons and sprinkle with half the cheese. Place another wonton on top and repeat with another layer of the ground beef mixture and sprinkle with cheese. Bake for 10-12 minutes, until wontons are crisp and golden around the edges.
  • While taco wontons bake, combine ingredients for cilantro-lime slaw in a medium mixing bowl and stir well to combine. Refrigerate.
