SPICY SZECHUAN BEEF

Spicy Szechuan Beef. Tender steak sliced thin and coated in an amazing sweet and spicy Szechuan sauce!

2 tablespoons oil (divided)
1 medium red bell pepper (sliced thin)
1 teaspoon ginger (minced)
1 teaspoon garlic (minced)
green onions for garnish (if desired)
sesame seeds for garnish (if desired)
1 pound strip steak or flank steak (sliced thin)
2 tablespoons cornstarch
2 tablespoons mirin
1 tablespoon low sodium soy sauce
3 tablespoons low sodium soy sauce
1/2 teaspoon chili oil
1 tablespoons water
1/2 teaspoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon hoisin
1 tablespoon light brown sugar

Steps:

  • Add the steak and the marinade ingredients to a large ziplock bag. Toss to coat and let the beef marinate for 15 minutes or while you are getting the sauce ingredients together.
  • Meanwhile in a small bowl combine the sauce ingredients, set aside.
  • When you are ready to cook heat 1 tablespoon oil in a large skillet over medium high heat.Add in beef (discard marinade). Sear beef for 2-3 on both sides. Just until the beef is browned on the outside. Remove from the pan and set aside.
  • Add the remaining tablespoon of oil to the pan. Add in bell pepper, ginger, and garlic, and sauté for 3-4 minutes or until the pepper is tender.
  • Add the beef back to the pan along with the sauce. Simmer for 1-2 minutes or until the sauce is thickened.
  • Serve immediately with green onions and sesame seeds for garnish, if desired

2 tablespoons water
1/4 cup julienned carrots
1/4 cup julienned celery
1/4 cup julienned red bell pepper
1/4 cup julienned yellow bell pepper
2 tablespoons toasted peanuts
1/2 teaspoon chopped fresh garlic
1 teaspoon hot pepper flakes
Salt and freshly ground black pepper

Steps:

  • Spray a large skillet with cooking spray, and add water. Add the carrots, celery, red bell peppers, yellow bell peppers, peanuts, garlic, and hot pepper flakes and saute until tender, but still crisp. Season, to taste, with salt and pepper.

Zesty burgers are served atop fried rice, and garnished with an apricot and plum sweet and sour sauce.

1 teaspoon finely grated fresh ginger
1 tablespoon soy sauce
2 tablespoons water
¼ cup Jif® Extra Crunchy Peanut Butter
1 ¼ pounds ground beef chuck
½ cup Smucker's® Apricot Preserves
¼ cup Smucker's® Red Plum Jam
2 teaspoons white vinegar
½ teaspoon finely grated fresh ginger
1 teaspoon Crushed red pepper flakes to taste
1 serving CRISCO® Original No-Stick Cooking Spray
2 cups prepared fried rice, warmed
1 tablespoon Cilantro, chopped for garnish

Steps:

  • Combine Szechwan Seasoning, ginger, soy sauce, water and peanut butter in a medium bowl. Crumble ground beef over mixture. Gently combine the ingredients. Shape meat into eight (4-inch) patties. Refrigerate.
  • Combine apricot preserves, plum jam, vinegar, ginger and pepper flakes in small mixing bowl.
  • Coat unheated grill grate with no-stick cooking spray. Heat grill to medium-high (350 to 400 degrees F). Grill patties 3 to 5 minutes per side or until juices run clear. To serve, place 1/2 cup of warm fried rice onto each plate. Top with 2 burgers, garnish with sweet and hot sauce and cilantro.

  • In a medium bowl, mix the ground beef with the hoisin, peanut butter, soy sauce and sriracha by hand, until smooth. Form into 6 patties that are just larger than the buns. Refrigerate until ready to grill.
  • Preheat the grill to high heat. Slice all the veggies into thin even julienne-style pieces. Mix the soy sauce, sherry, black vinegar, garlic, ginger and Sriracha together in a small bowl. Whisk in the cornstarch and have another 1/2 cup of water ready on the side.
  • Preheat a wok (or large skillet) on high heat. Add a scant amount of sesame oil, and stir fry the veggies in small batches for 30-60 seconds until just barely cooked and slightly charred. (You won't get char marks if you use too much oil or add all the veggies at once.) Turn off the heat and add the liquid mixture. Whisk to thicken. If the sauce is too thick, add a little water until you reach your preferred thickness. Mix in the stir fried veggies and peanuts.
