Chicken Salad with Bacon, Lettuce, and Tomato image

This chicken salad has a creamy dressing and is best served over crisp lettuce leaves.

5 slices bacon
3 cups diced cooked chicken
1 cup chopped fresh tomato
2 stalks celery, thinly sliced
¾ cup mayonnaise
2 tablespoons minced green onion
1 tablespoon chopped parsley
1 teaspoon lemon juice
1 dash Worcestershire sauce
salt and ground black pepper to taste
12 leaves romaine lettuce
1 large avocado, sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Stir chicken, bacon, tomato, and celery together in a bowl.
  • Whisk mayonnaise, parsley, green onions, lemon juice, Worcestershire sauce, salt, and black pepper together in a bowl until dressing is smooth. Pour dressing over chicken mixture; toss to coat. Refrigerate until chilled, at least 30 minutes.
  • Stir chicken mixture and serve over romaine lettuce leaves; garnish with avocado slices.

Any time I have any left over chicken I make this chicken salad. Even if I only have a little bit of Chicken I just scale it down. It's really good!

3 cups cooked diced chicken
4 slices bacon, cooked and crumbled
3/4 cup mayonnaise
1 tablespoon parsley, fresh
2 tablespoons finely minced green onions
1 teaspoon lemon juice
1/4 teaspoon ground cumin (or curry powder)
1 dash Worcestershire sauce
salt and pepper, to taste

Steps:

  • Combine chicken and bacon.
  • In a small bowl, whisk together remaining ingredients to make the dressing. Chill for 20 minutes.
  • Combine dressing with chicken mixture. Add the dressing slowly to make the desired consistency.
  • Chill and stir again before serving.
  • Serve on your favorite bread or top some lettuce greens.

3 tablespoons unsweetened pineapple juice
3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 to 1/2 teaspoon pepper
2 pounds boneless skinless chicken breasts, julienned
8 cups torn mixed salad greens
2 large tomatoes, chopped
3/4 cup pineapple tidbits
4 green onions, sliced
Oil and vinegar salad dressing, optional

Steps:

  • In a large resealable plastic bag, combine the pineapple juice, soy sauce, Worcestershire sauce, garlic powder and pepper. Add chicken strips; seal bag and toss to coat. Cover and refrigerate for 1 hour. Drain and discard marinade. Grill chicken, covered, over medium heat for 8-10 minutes or until juices run clear, turning once. , To serve, arrange greens on four serving plates; top with tomatoes, pineapple, onions and warm chicken. Drizzle with dressing if desired.

1/4 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon Montreal steak seasoning
4 slices Swiss cheese
4 whole wheat hamburger buns, split
2 bacon strips, cooked and crumbled
Lettuce leaves and tomato slices, optional

Steps:

  • In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. 1 package (22 ounces) frozen grilled chicken breast strips
1 cup crumbled blue cheese
3 tablespoons white wine vinegar

Olive oil, for pan
1 cup bacon, cut into 1/4-inch dice
2 cloves garlic, smashed
Pinch crushed red pepper flakes
1 bunch Swiss chard, stems removed and cut into 1/2-inch lengths, leaves cut into 1 1/2-inch lengths
1/2 cup chicken or vegetable stock
Kosher salt

Steps:

  • Coat a large saute pan lightly with olive oil and add the diced bacon, garlic, and crushed red pepper. Bring the pan to medium-high heat. When the garlic has turned a lovely golden brown, remove from the pan and discard. At this point the bacon should start to become brown and crispy. Add the Swiss chard stems and the stock and cook until the stock has mostly evaporated. Add the Swiss chard leaves and saute until they are wilted. Season with salt.

meat from 1 ready-roasted chicken , shredded
6 rashers smoked streaky bacon
1 small red onion , halved, thinly sliced
2 tbsp olive oil
2 tsp white wine vinegar
100g bag watercress
2-3 heads red chicory , separated into leaves and halved if large
¾ cucumber , halved, seeds scooped out, then sliced on the diagonal
200g tub Greek yogurt
4 tbsp mayonnaise
2 tsp wholegrain mustard
1 spring onion , finely chopped
2 tsp chopped tarragon

Steps:

  • Mix the ingredients for the dressing with a little seasoning. Stir in the chicken and loosen with water if necessary.
  • Slowly cook the bacon in a large frying pan until crisp and the fat has run out. Drain on kitchen paper. Meanwhile, mix the onion with the oil, vinegar and seasoning.
  • Toss the onion with the watercress, chicory and cucumber, then pile onto a platter. Spoon the chicken on top, then break or chop the bacon over the top of that. Serve with crusty bread.

1 tablespoon sugar
1/4 teaspoon salt

8 ounces sliced Swiss cheese, julienned
1 pound bacon, cooked and crumbled

Steps:

  • In a small bowl, combine mayonnaise, sugar, salt and pepper. In a large salad bowl, layer a third of the greens and a third of the mayonnaise mixture, onion, peas and cheese. Repeat the layers twice. Cover and refrigerate for at least 2 hours. Just before serving, add the bacon and toss.

Chard is one of the super leafy greens packed with minerals and vitamins as well as a healthy dose of fiber. It tastes a lot like spinach with a slightly stronger taste, depending on the cooking method. Use regular olive oil, not virgin, for best flavor. Reduce the amount of bacon if desired.
