TRADITIONAL JAPANESE RECIPE: Sweet Soy Glaze is that sticky soy glaze sauce perfect for Dango, Ribs, BBQ, Chicken, Pork and so on. Virtually, it's good for everything. Deliciously sweet. It requires a few ingredients and only 5-10 minutes to make it. You can keep it in the fridge, in a sealed airtight container for 1 week, but we believe it's best when it's consumed within 24 hours. The Sweet Soy Glaze will thicken a bit more as it cools so once you are about to reach the right consistency, turn the heat off and let it cool. The perfect consistency should be like honey at room temperature. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

Steps:

  • 01 - Without turning the heat on, with a whisk combine
  • combine all the ingredients in a saucepan and mix well.
  • Turn the heat on (low) and keep whisking.
  • Wisk until you reach ALMOST the right consistency. Stop a bit earlier as the sauce will thicken once it has cooled down.
  • Transfer to a container or bowl or pour on top of food and serve immediately.
  • You can keep the sauce in the fridge for 24 hours...

  • Preheat oven to 400.
  • Mix glaze ingredients together, stirring until dissolved. Marinate fish filets for at least 30 minutes.

1 1/2 pounds pork belly
Salt and freshly ground black pepper
2 stalks celery, chopped
1 yellow onion, chopped
1 carrot, chopped
2 quarts pork or chicken stock
1 tablespoon minced fresh ginger root
1 tablespoon minced shallot
1 teaspoon olive oil
1 cup bamboo rice (see Cook's Note)
1 teaspoon salt
1/2 teaspoon ground white pepper
10 cloves garlic, sliced thin
2 tablespoons granulated sugar
1 1/4 tablespoons minced fresh ginger
1 1/4 tablespoons Korean red pepper
1 tablespoons Asian fish sauce
1 tablespoons soy sauce
1 1/2 teaspoons salt
1 English cucumber, sliced thin
1 carrot, julienned on a mandolin
1/4 cup fresh cilantro, chopped
1/4 cup chopped fresh ginger
1/4 jalapeno, rough chopped
1/2 cup granulated sugar
5 1/4 ounces red wine vinegar
2 3/4 ounces balsamic vinegar
1 1/3 tablespoons ketchup
1 1/3 tablespoons soy sauce
Zest of 1/3 orange
1 tablespoon cornstarch
1 cup sweet soy sauce
Ground, toasted macadamia nuts, for sprinkling
Sriracha, for serving

Steps:

  • For the pork belly: Preheat the oven to 325 degrees F.
  • Heat the vegetable oil in a Dutch oven or deep saute pan over high heat. Season the pork belly with salt and pepper on all sides and sear until golden brown on all sides, about 8 minutes. Add the celery, onion and carrot around the sides of the pork belly and let them begin to heat for another 2 or 3 minutes. Pour in the pork stock (or chicken stock if you don't have pork), cover, and cook in the oven until the pork is tender, about 2 hours. Let cool in the braising liquid until cold all the way through. When completely cooled, cut into 4 equal rectangular pieces and set aside for plating.
  • For the bamboo rice: Saute the ginger and shallot with the olive oil in a medium saucepan over medium heat until translucent, about 3 minutes. Add the rice and saute for another 30 seconds. Add the salt, pepper and 1 1/4 cups water, bring to a boil, then reduce heat to low and simmer, covered, until the rice is tender, 20 minutes. Fluff with a fork before serving.
  • For the cucumber kimchi: Mix together the garlic, sugar, ginger, red pepper, fish sauce, soy sauce and salt in a large bowl and let sit for 2 hours. Fold in the cucumber, carrot and cilantro.
  • For the sweet soy ginger jus: Saute the ginger and jalapeno in a medium saucepan over medium heat until fragrant, about 2 minutes. Add the sugar, red wine and balsamic vinegars, ketchup, soy sauce and orange zest. Stir to combine and cook until reduced by half. Mix the cornstarch with 1 tablespoon water in a small bowl to make a slurry; whisk it into the reduction. Add the sweet soy and mix thoroughly. Strain through a chinois strainer.
  • To finish the dish: Crisp the pork belly on all sides in a saute pan over medium high-heat, then glaze the belly with the sweet soy ginger jus, adding just enough to coat. Slice the belly in 1/4-inch-thick slices. Place 1/2 cup of the bamboo rice in the middle of each plate. Fan the sliced pork belly on top of the rice and top with a good pinch of the cucumber kimchi. Sprinkle ground, toasted macadamia nuts on top if desired and drizzle the sweet soy ginger jus around the plate. Sriracha can be dotted around the plate to finish if desired.

3 lbs chicken wings, separated into 2 pieces, wing tips removed and discarded
1/4 cup packed dark brown sugar
1/4 cup soy sauce
2 tablespoons finely chopped fresh pineapple
2 tablespoons sake or 2 tablespoons dry sherry
1 tablespoon white wine vinegar
1 tablespoon naturally sweetened pineapple juice
1 medium garlic clove, minced
1 tablespoon cornstarch dissolved in 1 tablespoon cold water
1 teaspoon toasted sesame seeds, for garnish

Steps:

  • For the chicken:.
  • Place brown sugar, soy sauce, sake or sherry, and garlic in a large resealable plastic bag and stir to combine.
  • Add chicken, seal (pressing out excess air), and turn the bag to coat the chicken evenly.
  • Place in the refrigerator and marinate, turning occasionally, for at least 2 hours or up to 12 hours.
  • Heat the broiler to high and arrange a rack in the middle of the oven. Line a baking sheet with aluminum foil and set a wire rack over the foil.
  • Remove the chicken from the marinade, letting any excess drip off, and arrange in a single layer on the rack. (Try not to let the wings touch.) Discard the marinade.
  • Broil the chicken until the meat starts to pull away from the bones and the skin is a deep golden brown, bubbling, and crisped, about 12 minutes. Remove from the oven and, using tongs, flip the wings over. Return to the oven and continue broiling until the skin is a deep golden brown, bubbling, and crisped on the second side, about 12 minutes more.
  • Meanwhile, prepare the sauce.
  • For the sauce:.
  • Place all ingredients except cornstarch-water mixture in a small saucepan and stir to combine.
  • Bring to a boil over medium-high heat.
  • Reduce heat to low and simmer until sauce has reduced to about 1/2 cup, about 10 minutes.
  • Add cornstarch mixture, whisk to combine, and cook until sauce has thickened, about 1 minute.
  • Transfer to a large heatproof bowl.
  • To serve:.
  • Add cooked wings to the sauce and toss to combine.

2 cups frozen edamame in their shell
1 teaspoon canola oil
1/2 teaspoon garlic, finely minced (about 1 clove)
1/2 teaspoon fresh ginger, skin removed, finely minced
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon rice vinegar
1 1/2 tablespoons brown sugar
1/2 teaspoon crushed red pepper flakes

Steps:

  • Cook the edamame according to package directions.
  • In a small bowl, mix together the soy sauce, water, rice vinegar, brown sugar, and red pepper flakes.
  • Heat canola oil in a small saucepan over medium-low heat. Once heated, add the garlic and ginger. Let cook for one to two minutes, stirring to avoid garlic from burning.
  • Add in the soy sauce mixture and raise the heat to medium. Let cook, stirring frequently, until the sauce reduces to a glaze, about 5-7 minutes. Once you reach the desired glaze consistency, add in the cooked edamame and toss well.
  • Use tongs to plate edamame. Pour any glaze left in the saucepan into a small dipping bowl alongside the edamame. Devour immediately.
  • *I've made this without rice vinegar when I looked in the pantry and we didn't have any. It still came out great.
  • **If you have a micrograter, you can grate the garlic and ginger if you want. That way it it dissolves into the glaze instead of having little finely minced chunks. If you try it this way, only cook the ginger and garlic for about 30 seconds. I've done it both ways. Totally your call, just wanted to give you the option ????

1/2 cup sweet soy glaze (such as Kikkoman)
2 tablespoons rice vinegar
2 cloves garlic, grated
8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
6 cups pre-cut vegetables, such as broccoli florets, red bell peppers and/or carrots (about 14 ounces)
Cooked white rice, for serving

Steps:

  • Preheat the oven to 450 degrees F. Mix the soy glaze with the rice vinegar and garlic. Divide the sauce between 2 small bowls and add 2 tablespoons water to one bowl; set aside.
  • Season the chicken with salt and pepper. Heat the vegetable oil in a large ovenproof nonstick skillet over medium-high heat. Add the chicken skin-side down and cook until the skin is golden and crisp, about 6 minutes. Flip and cook until golden on the other side, about 4 more minutes. Pour the thinned soy glaze mixture over the chicken. Transfer to the oven and bake, 10 minutes.
  • Meanwhile, combine the vegetables, 2 tablespoons water and 1/2 teaspoon salt in a microwave-safe bowl; cover loosely with plastic wrap. Microwave until tender, about 4 minutes. Stir in 1 tablespoon of the remaining soy glaze mixture.
  • Remove the chicken from the oven; brush with the remaining soy glaze mixture. Return to the oven and bake until the chicken is cooked through, about 5 minutes. Serve with the vegetables and rice.
