SWEET & SOUR RAINBOW COLE SLAW

Sweet & Sour Rainbow Cole Slaw image

I created this slaw with ingredients I had on hand that I thought would compliment my husbands Fish Dinner. I am allergic to the fish but could eat the http://www.justapinch.com/recipes/breads/savory-bread/southern-jalapeno-hush-puppies-lady-rose.html and the slaw. He loved the fish, but the pieces were small, but he didn't...

SWEET-AND-SOUR COLESLAW

Sweet-and-Sour Coleslaw image

Pack in antioxidants. The ultimate in simplicity and refreshing taste, this coleslaw is flecked with green, red and yellow vegetables, the colors signifying the presence of antioxidants (cabbage is thought to have anti-cancer activity). I like its crispy, sweet-and-sour taste, unlike that of a creamy coleslaw.

SWEET AND SOUR SLAW

Sweet and sour slaw image

Here is an exercise in chopping meditation for you! There is much to slice, but you end up with a bright tangle of slaw that feeds a crowd and has enough zing in it to bring a table of cold cuts to life.

Provided by Nigella Lawson

Categories     Side dishes

Yield Serves 10-12

Number Of Ingredients 12

1 red cabbage (approx. 800g/1lb 12oz), halved
4 fat or 6 skinny spring onions, trimmed
2 red peppers, membranes and seeds removed
1 yellow pepper, membranes and seeds removed
1 orange pepper, membranes and seeds removed
1 red chilli, seeds removed
large bunch (approx. 100g/3½oz) fresh coriander
250ml/9fl oz pineapple juice, from a carton
2 limes, preferably unwaxed
1½ tbsp sea salt flakes, or to taste
2 tsp toasted sesame oil
2 tsp maple syrup

Steps:

  • Shred the cabbage thinly and put into the largest bowl you have. It may be easier to use a huge saucepan as you need to toss all the ingredients together later, and even my largest mixing bowl isn't big enough.
  • Slice the spring onions into batons and then cut each baton into thin slices lengthways, so that you, again, have shreds. Add to the cabbage.
  • Cut the peppers into very thin slices. Add to the cabbage and spring onions.
  • Finely chop the red chilli, and do the same with the coriander - stalks and leaves. Add the chilli and all but a tablespoon of the chopped coriander to the cabbage bowl.
  • In a bowl or measuring jug, mix together the pineapple juice, the zest and juice of 1 lime and the juice of half of the second. Sprinkle in the salt, add the sesame oil and maple syrup, and whisk together before pouring over the prepared vegetables. Toss to mix, then leave to stand for at least 15 minutes, and up to 2 hours, before serving. Sprinkle the reserved tablespoonful of chopped coriander over the finished slaw.

SWEET AND SOUR COLESLAW RECIPE

Sweet And Sour Coleslaw Recipe image

Looking to step up your slaw game? Here is a sweet-sour cole slaw recipe that is sure to impress your guests. Plus, the recipe is super easy to make.

Provided by Dave Joachim

Categories     Dinner     Lunch     Salad     Side Dish     Vegetable

Number Of Ingredients 12

2 tablespoons brown sugar
2 tablespoon white sugar
1 teaspoon mustard powder
1 teaspoon Morton Coarse Kosher Salt
½ teaspoon ground black pepper
½ teaspoon whole celery seeds ((not celery salt))
2 tablespoons vegetable oil ((corn oil or salad oil mix are good choices))
¼ cup distilled white vinegar ((not cider vinegar))
1 pound green cabbage ((about half a medium cabbage))
1 large carrot, peeled
1 small white onion
½ bell pepper, any color

Steps:

  • Prep. For the dressing, whisk all of the ingredients together in a bowl. Don't skip the mustard. It's the secret ingredient that gives it life. And make sure all the lumps are whisked out.
  • Read my article on The Science of Slawsome Slaw. Decide how you want to cut the cabbage, carrots, pepper, and onions: Chopped, grated, or hashed and have at it. I like this recipe best when chopped or grated. Now that you've decided, do it. Add the cabbage, carrots, pepper, and onions to the bowl with the dressing.
  • Chill. Cover and chill for at least 1 hour if possible to extract the flavors from the celery seeds and the vegetables. They will give up some water, so don't worry if the mix seems a bit dry and strong at first. Mix it up occasionally so the dressing doesn't pool at the bottom. Taste the slaw and add more of the seasonings to your preference.
  • Serve. When you serve it, mix thoroughly and scoop from the bottom so the veggies have dressing on them.

SWEET AND SOUR COLE SLAW

Sweet and Sour Cole Slaw image

Ever since she was a child, Maribeth couldn't stand the sight of mayonaisse, and mommy went to great lengths to hide it in recipes where it was required - but there was simply no hiding it in cole slaw. So she turned to a local cookbook at the time - the old River Road Recipes II - A second Helping - put out by the Junior League of Baton Rouge, Louisiana. Here is a GREAT tasting, non-creamy cole slaw - particuarily good with barbequed chicken. Notice that this recipe is made the night before - and also, as it contains no eggs or dairy, it would be perfectly safe for travel on picnics. This recipe is credited to Mrs. Ben Miller, Jr.

CONFETTI SWEET & SOUR CABBAGE SLAW

A version of this recipe was found in a Southern cookbook from Louisiana called "BIG MAMA'S OLD BLACK POT, and was recommended to me by my sister a few years ago. 1 large red bell pepper, chopped
1 large green bell pepper, chopped
1 bunch green onions, chopped

  • 2. Chop Red bell peppers & add to bowl, toss to mix.

  • 6. Gradually and carefully pour hot mixture over the cabbage, and toss to coat, turning with tongs as you go to assure all is mixed together. Refrigerate until slaw is completely cooled for better flavor.

SWEET & TANGY ASIAN SLAW

Sweet & Tangy Asian Slaw image

A delicious sweet and tangy slaw recipe. It pairs perfectly with grilled fish, adds crunch and flavor to sandwiches, and gives salads that extra flavor punch.

Provided by Laurel

Categories     Sides

Time 30m

Number Of Ingredients 14

1/4 cup olive oil
2 tablespoons rice vinegar
1 1/2 tablespoons gluten-free soy sauce or tamari
2 teaspoons sesame oil
2 teaspoons unrefined sucanat sugar
1 clove garlic
1 tablespoon minced ginger
1/4 teaspoon red pepper flakes ((more or less to taste))
1 large or 2 medium carrots
1/2 medium kohlrabi
1 medium granny smith apple
3 scallions
1 1/2 cups shredded purple cabbage
1/4 cup cilantro (, loosely packed)

Steps:

  • To prepare the dressing combine the olive oil, rice vinegar, soy sauce, sesame oil, sucanat sugar, garlic, ginger, and red pepper flakes in a jar with a screw top lid. Shake vigorously to combine. Set aside.
  • To prepare the carrots slice them into thirds widthwise. Slice each third into 1/8 inch strips. Next, slice these strips into 1/8 inch match sticks. Repeat with the remaining carrots. The end result should be long and skinny strips of carrot. Add to a large bowl.
  • Next, slice the kohlrabi in half. Reserve the other half for another use. Using a paring knife, peel the kohlrabi half needed for this recipe. Lay the kohlrabi cut side down and slice it into 1/8 inch thick slices. Slice these pieces into 1/8 inch matchsticks. The kohlrabi should end up being a similar shape and size as the carrots. Add to the bowl with the carrots.
  • For the apple will want to cut each side off the core. Discard the core and lay each piece cut side down. Cut the apple pieces into 1/8 inch slices. Cut each of these slices into 1/8 inch matchsticks. The apple should look like the carrot and kohlrabi strips. Place into the bowl with the carrot and kohlrabi.
  • Slice the scallions into thin rounds on the bias (which simply means on an angle) and add them to the bowl. Add in the shredded purple cabbage and the dressing. Toss to combine. Serve immediately or allow the flavors to develop by leaving the slaw in the fridge for 1-4 hours before serving.
