This is a fabulous baked rice pudding, it can be doubled and use all full-fat milk if desired. To achieve the best results only use aborio or any short grain white rice, and bake a low temperature oven.

- Set oven to 300 degrees.
- Butter a baking dish with a lid, large enough to hold the mixture (I use my White Corning ware oval baking dish for this).
- Place all the ingredients (except raisins) in a baking dish; mix to combine.
- To speed the oven cooking time up, you can bring to a simmer on top of the stove if desired over medium heat.
- Cover with a lid and place in the oven to bake for about 2 hours (could take more or less time) stirring a couple of times while cooking.
- Add in raisins the last 30 minutes of cooking.
- *NOTE* the mixture will thicken even more after cooking.

- Place rice in a bowl and rinse with water by stirring in a counter clockwise motion.
- Do this repeatedly until the water is clear and clean, indicating the rice is clean.
- Pick out any odd grains.
- In a medium saucepan, stir rice, salt, sugar and water and bring to a boil.
- Stir well and reduce heat to low.
- Cover and simmer gently for 1 1/2 hours to 2 hours until all of the water has been absorbed and the rice is tender.

TRINIDAD SWEET RICE RECIPE (CARIBBEAN RICE PUDDING)
Rice pudding, referred to as "sweet rice" in Trinidad is another one of our popular desserts. Rice is cooked with ginger and spices and three types of milk to produce a classic, creamy, rice pudding. I recall that "sweet rice" was mostly served and eaten at religious functions including Hindu 'prayers', but there are many of us who enjoy it occasionally at home.

- Wash rice with several changes of water until water is clear. Drain.
- In a medium stock pot, add water, rice, cinnamon stick and ginger (cardamom if using). Bring to a boil over high heat uncovered. Once it comes to a boil, immediately reduce heat to medium. Cook until rice is cooked but still firm, about 15-20 minutes. If it's still not soft and tender after that time, add additional 1 cup of water and continue to cook.
- Add whole milk [and optional ingredients] and cook until most of the milk is absorbed (about 5-10 minutes), stirring constantly to prevent sticking.
- Add evaporated milk and cook, stirring constantly, until that boils down, about 5-10 minutes, maybe more depending on your burner.
- Add condensed milk and cook, stirring constantly, until it thickens but not totally evaporated, another 15-20 minutes. I recommend cooking on a very low heat until the color begins to darken slightly. This way the flavors develop even further. Always check to make sure the bottom is not burning.
- Remove cinnamon stick (and whole cardamoms and cloves if you used those ingredients) before serving.
- Enjoy hot, warm or cold, alone, or with fresh fruit...and if you are a real Trini, eat it with Dhalpourie roti.

HOW TO MAKE THE ABSOLUTE EASIEST RICE PUDDING

- Measure out the rice and milk. Place 1 cup uncooked short-grain or long-grain white rice, or 3 cups cooked rice in a large saucepan. Add 4 cups milk for uncooked rice, 3 cups milk for cooked rice.
- Add the flavorings. Add 1/3 cup granulated sugar and 1/4 teaspoon kosher salt. If using vanilla bean, scrape the seeds from 1/2 vanilla bean and add the seeds and the pod into the saucepan. If using vanilla bean paste, add 1 1/2 teaspoons. Add any desired add-ins.
- Bring to a simmer. Bring the mixture to a vigorous simmer over medium-high heat, stirring frequently and scraping the bottom of the pan with a wooden spoon or rubber spatula so that the rice does not stick.

- At least one hour prior to making rice pudding, soak the raisins in the vanilla. A longer soak of over 24 hours is optimal.
- In a medium-sized, heavy-bottomed saucepan, bring the milk, heavy cream, uncooked rice, and salt to a boil over high heat. As soon as it starts to simmer around the edge of the pan, reduce heat to the lowest temperature where you can maintain a simmer, partially covered, until the rice is tender, about 20-25 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan. Taste the rice to ensure it is done. You want it tender but still firm.
- In a separate bowl, whisk together eggs and sugar. Add a ladel of the hot milk mixture to the egg mixture, whisking while pouring it in a very slow steady stream. Your goal is to bring the temperature of the egg up without curdling the egg.
- Continue to add more of the hot milk mixture to the egg mixture, whisking continually, until the egg mixture is warm.
- Add tempered egg mixture back into the saucepan of rice and milk and stir over low heat for 5 to 10 minutes, until thickened. This rice pudding can go from thin to too thick rather quickly, so don't leave it unattended. Also keep in mind that it will thicken even more as it cools. A temperature of 160°F will ensure the eggs are cooked all the way through.
- When done, remove from heat and stir in the pumpkin pie spice and soaked raisins.
- Serve warm or cold.

- Place the rice in a medium-sized bowl. Fill the bowl with cold water and swirl the rice around to help remove the starch.
- Carefully pour off the water, making sure not to pour out the rice that has settled to the bottom. Repeat this step 7-8 times, or until the water is clear.
- Fill the bowl with enough cold water to cover the rice by 2 inches. Let the rice soak for 30 minutes.
- Drain the rice and set aside.
- Place the milk in a 6-8- quart pan over medium heat, uncovered, and bring to a boil. This will take about 10-12 minutes. Watch it carefully so it does not boil over, and stir frequently to prevent scorching.
- Add the drained rice. Return it to a boil. This will take 1-2 minutes.
- Reduce to a simmer and cook, uncovered, for 30-35 minutes. The rice will absorb the milk as it cooks and thickens. Stir frequently, occasionally mashing the rice with a whisk.
- If the rice sticks, lower the heat.
- After almost all the milk has been absorbed and the rice is very tender, add the sugar and ground cardamom. Stir well to combine all the ingredients.
- Pour the rice into a heat-proof bowl. Let it cool for 10-15 minutes. Cover and chill completely.
- When ready to serve, spoon the chilled dessert into individual serving dishes and garnish with the pistachios, raisins, and sliced almonds.

- Gather the ingredients.
- Place the rice in a large pot and add 2 cups of the water. Allow it to soak for 10 to 30 minutes.
- Once this time has passed, add the remaining 1 1/2 cups of water and the salt. Stir well.

- In the following step, you have two options: add coconut milk to the entire batch to make a thinner pudding that can be easily scooped into bowls, or serve the thick pudding in individual serving bowls and pour coconut milk , cream, or the milk of your choice around it.
- Garnish each serving by sprinkling extra cinnamon or nutmeg on top. Decorate it with cinnamon sticks, whole star anise, crushed peanuts, or toasted coconut if desired.

- Heat milk in 2 1/2 quart saucepan over medium-high heat until little bubbles form around the edges and the milk starts to steam.
- In a separate pan, add rice and salt. Add enough water to just cover the rice, and place the pan over medium-high heat, cover,and bring to a boil.
- Reduce the heat to medium-low and stirring constantly, cook the rice until the water evaporates, being careful not to burn it.
- Stir the scalded milk into the rice and add the orange peel, cover and simmer the rice for another 20 to 25 minutes, until it is almost done.
- When the rice is tender, remove the orange peel and stir in the sugar, continue to simmer for 5 more minutes until the sugar is dissolved.
- The pudding should be somewhat thick, like oatmeal. It will continue to thicken as it cools.

- Garnish with cinnamon in the Portuguese style: pinching some cinnamon between the index finger and thumb, dropping it close to the surface of the rice by rubbing the finger and thmb together, in a design or intials of the guest of honor and chill.

- Preheat oven to 450°F. Cut sweet potato into quarters and wrap each piece in foil. Place pieces on baking sheet and bake for 30-35 mins until fully cooked.

Cook for approximately 15-20 more mins, or until rice is tender. Once rice has finished cooking, turn burner off. The pot should have approximately 1-2 cups of almond milk left in it.
- Sweet potatoes should finish cooking while rice is simmering. Remove from oven, unwrap and use a fork to mash the flesh before scooping into a medium-sized bowl.
