2 1/2 pounds sweet potatoes
1 tablespoon light margarine
1/3 cup evaporated skimmed milk
1/4 cup sugar
1 teaspoon vanilla extract
Marshmallow Creme Sauce
4 tablespoons light margarine
1/4 cup all-purpose flour
3/4 cup light brown sugar
1/2 cup water
1 cup miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F. Place the sweet potatoes in a large pot. Add enough water to cover the sweet potatoes and bring to a boil over medium-high heat. Reduce the heat to medium and cook until the sweet potatoes are tender when pierced with a fork. Drain the water and let the potatoes cool enough until they can be handled. Peel the potatoes and place in a mixing bowl. Add the margarine, evaporated milk, sugar, and vanilla extract. Beat with a mixer on low speed until smooth. Spoon the mixture into a 2-quart casserole dish. In a small saucepan, melt the margarine for the creme sauce over medium heat. When melted, whisk in the flour and cook, stirring constantly, for 1 minute. Add the brown sugar and water and mix well until the brown sugar dissolves. Stir in the marshmallows and cook over medium heat until the marshmallows are melted and the sauce is thickened. Pour the marshmallow sauce evenly over the sweet potatoes. Cover the casserole dish with foil and place in the oven. Bake at 350 degrees F for 20 minutes or until bubbly. cook's notes You can substitute 3 cans (15 oz. size) sweet potatoes, drained and mashed, in place of fresh. Canned sweet potatoes are already cooked so you can skip that process. Proceed as recipe directs.

1 tablespoon butter
1/3 cup evaporated skim milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
4 tablespoons butter
1/4 cup flour
3/4 cup light brown sugar
1/2 cup water
1 cup miniature marshmallow

Steps:

  • Place sweet potatoes in a large pot, cover with water and bring to boil.
  • Reduce heat and cook until tender.
  • Peel potatoes and place in mixing bowl.
  • Add butter, evaporated milk, sugar and vanilla extract.
  • Beat until smooth.
  • Spoon into 2-quart casserole dish.
  • Make Marshmallow Sauce:
  • In small saucepan, melt butter.
  • Stir in flour and cook for 1 minute, stirring constantly.
  • Add brown sugar and water, mixing well.
  • Add marshmallows and continue cooking over medium heat until marshmallows melt and sauce thickens.
  • Pour marshmallow sauce over sweet potato mixture.
  • Cover and bake at 350° for 20 minutes.

2 tablespoons unsalted butter, plus more for the baking dish
1 cup packed light brown sugar
3 1/2 pounds sweet potatoes
1 lemon, sliced and seeded
1/2 cup chopped pecans
3 cups marshmallows

Steps:

  • Preheat the oven to 350 degrees F. Melt the butter in a large pot. Stir in the brown sugar and 1/2 cup water. Bring to a boil, then reduce the heat to medium and simmer, stirring, until reduced and thickened, about 10 minutes.
  • Bring a large pot of water to a boil. Meanwhile, peel the potatoes and cut them lengthwise, then lengthwise again, making long quarters. Cut the quarters into 1-inch pieces. Boil the potatoes until they give a bit when poked with a fork, about 5 minutes.
  • Drain the potatoes and arrange in a single layer in a buttered 3-quart baking dish. Pour the syrup on top, making sure it covers the potatoes. Place the lemon slices on top and bake 35 minutes, spooning the syrup over the potatoes twice during that time. The potatoes are done when they are fork-tender.
  • Remove from the oven, discard the lemon slices and stir in the pecans. Top with the marshmallows. Turn the oven up to 400 degrees F, place the baking dish back in the oven, and cook until the marshmallows puff and turn brown, about 10 more minutes.

2/3 cup apple cider

1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/4 teaspoon salt
4 cups apple cider
1 vanilla bean, split lengthwise
2 ounces salted butter (1/2 stick)
1/2 cup light brown sugar
16 ounces unsalted butter (4 sticks)
12 tablespoons Cider Caramel Reduction
16 ounces marshmallow creme (recommended: Marshmallow Fluff)
1 cup pecans, coarsely chopped
2 tablespoons salted butter
1/2 teaspoon salt

  • For the cupcakes: Preheat the oven to 350 degrees F. Line regular sized cupcake pans with 24 liners. Beat the butter and sugar at medium speed with an electric mixer fitted with a whisk attachment until light and fluffy. Add the eggs, 1 at a time, beating after each addition. In a food processor, combine the sweet potatoes, apple cider, and vanilla. Blend until smooth. Put aside. In a bowl, combine flour with remaining dry ingredients. Whisk until blended. Add the flour mixture to the sugar mixture, alternating with the sweet potato mixture. Beat at low speed just until blended after each addition. Fill the cupcake liners three-quarters full with batter. Bake until golden brown, 22 to 24 minutes. Remove from the pan immediately. Cool completely. For the cider reduction: In a medium saucepan, bring the cider to a boil, add the vanilla bean, and cook until the cider reduces to about 2 cups, 20 to 25 minutes. Add the butter and sugar. Cook until the cider reduces to about 1 1/2 cups, stirring occasionally, about 10 minutes. Transfer the mixture to glass bowl. Cover. Refrigerate for at least 3 hours, or until reduction is cooled completely. Can be made up to 3 days in advance. Reserve half for the Marshmallow Cream Frosting and half for assembling the cupcakes. For the marshmallow frosting: In a mixer fitted with a paddle attachment, beat the butter until smooth and creamy, scraping down the bowl occasionally, about 2 minutes. Add the Caramel Cider Reduction and beat until incorporated. Remove the bowl from the mixer and fold in the marshmallow creme until incorporated. For the pecans: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Melt the butter in a bowl in the microwave. Coat the chopped pecan with butter. Pour onto the prepared baking sheet and toast in the oven for 5 minutes. Sprinkle with salt while warm and toss. Cool completely. To assemble: Drizzle a small amount of Caramel Cider Reduction over the top of each cupcake. 1 c white sugar
1/2 c melted butter
3 eggs, large
1/3 c milk
1 1/2 tsp vanilla extract
1 jar(s) marshmallow cream or regular mini-marshmallows

  • 1. Preheat oven to 350 degrees
  • 2. Grease an 8x8 baking dish
  • 3. Run the 3 cups of cooked sweet potatoes through a ricer, food mill or fine mesh sieve or colander.
  • 4. Stir in the rest of the ingredients by hand.
  • 5. Pour into baking dish.
  • 6. Top with Marshmallow cream or mini marshmallow. * The marshmallow cream will come out of the jar easier if you microwave it for just a couple of seconds. NO longer or you will have a marshmallow volcano ! lol
