This is a recipe that I picked up on a recent trip to Central Market in Dallas, TX. Sounds like a healthy way to prepare sweet potatoes.

- Preheat oven to 325 degrees.
- Place the sweet potatoes in a shallow roasting pan that has been sprayed with cooking spray.
- Drizzle with the oil, sprinkle with salt and pepper; toss well to coat.
- Place in preheated oven and bake for 30 minutes.
- Add the onions; stirring well.
- Bake an additional 30 minutes; remove from oven.
- Preheat broiler.
- Drizzle the sweet potato mixture with melted butter; stirring to coat.
- Broil 10 minutes or until browned.

When we first got married my husband wouldn't go near sweet potatoes. Now he asks me to specifically make these for him.

- Cut the potatoes into thin wedges.
- Pile them in a bowl and cover them with cold water.
- Let rest 15 minutes.
- Preheat oven to 375 degrees F.
- Coat a baking sheet with vegetable spray.
- Set aside.
- Drain the potatoes and dry them with paper towels.
- Press the potatoes with paper towels to remove all water.
- Transfer the potatoes to a large bowl.
- Sprinkle the potatoes with oil, tossing the potatoes to disburse it.
- Then sprinkle with pepper, salt, paprika and cayenne pepper.
- Bake the potatoes at 375 degrees F for 20 minutes.
- Turn over the potatoes.
- Sprinkle potatoes with garlic and continue cooking for another 15-20 minutes or until crisp and brown.
- Serve immediately.

- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
- Either scrub the sweet potatoes clean and pat dry, or peel them (I generally peel mine). To slice, use a sharp chef's knife to cut them into 1-inch thick rounds. Then, cut up each round to make 1-inch cubes. The "cubes" won't be perfectly even, but that's ok.
- Place the sweet potatoes on the prepared baking sheet. Drizzle the olive oil on top. If using, sprinkle the chili pepper or several twists of freshly ground black pepper on top, followed by the salt. Toss until the sweet potatoes are all evenly coated in oil, and arrange them in a single layer.
- Bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges. Serve while warm. Leftover sweet potatoes will keep in the refrigerator, covered, for about 4 days. Gently reheat in the microwave or oven if desired.

- Preheat your oven to 400 degrees F.
- Trim your Brussels by cutting off the little brown end. If there are any yellow leaves, pull them off. Cut any large ones in half. Add to a large bowl.
- Peel your sweet potato and chop into 1-2 inch pieces. Add to the large bowl.
- Smash 2 cloves of garlic and add it to the bowl.
- Pour 1/3 cup olive oil over the vegetables.
- Add cumin, garlic salt, salt, and pepper to taste. Stir to coat.
- (Line a large sheet pan with foil if you want super easy cleanup)
- Drizzle a little olive oil onto the sheet pan and rub it all over the pan (or foil) with your hand. Or you could spray it really well with nonstick spray.
- Pour the veggies onto the pan.
- Roast at 400 for about 40-45 minutes. The veggies are done when they are brown and a fork slides into them easily.
- Place the veggies in a serving bowl and toss with 1-2 tablespoons red wine vinegar to taste. Garnish with fresh thyme if you want. Eat hot!

- Peel the sweet potatoes and slice into 1/4" thick rounds.

- Heat oven to 425°F. Line a baking sheet with parchment, and if you happen to own a wire cooling rack, you can place it on top of the baking sheet for extra-even baking. (If not, no worries, you can just place the potato directly on the baking sheet.)
- Using a dinner fork or a small paring knife, poke the sweet potato evenly on all sides (about 10 times). Place the potato on the prepared baking sheet.
- If you would like your baked sweet potato to have extra-crispy skin*, use a pastry brush to brush it evenly with melted butter or oil. Sprinkle evenly with a pinch of sea salt and black pepper. Then place the sweet potato back on the baking sheet reverse-side-up, so that it can cook evenly on both sides.
