2 cups cubed peeled sweet potatoes
2 tablespoons butter
1 tablespoon olive oil
1 medium onion, chopped
1 small sweet red pepper, chopped
3 green onions, chopped
1 red chili pepper, seeded and finely chopped
3 garlic cloves, minced
2 cups cubed fully cooked ham
1/2 teaspoon pepper
1/4 teaspoon salt
4 eggs
1/4 cup shredded white cheddar cheese

Steps:

  • In a large skillet, saute sweet potatoes in butter and oil until crisp-tender. Add the onion, red pepper, green onions and chili pepper. Saute 4-5 minutes longer or until tender. Add garlic; cook 1 minute longer. Stir in the ham, pepper and salt., With the back of a spoon, make four wells in the potato mixture; add an egg to each well. Sprinkle with cheese. Cover and cook for 4-5 minutes or until egg whites are completely set.

1 1/2 cups coarsely chopped cooked and peeled sweet potatoes
2 1/2 cups shredded cooked turkey
1/4 cup low-sodium chicken broth
3 tablespoons chopped fresh cilantro, plus whole leaves for garnish
1 teaspoon minced chipotle chiles in adobo sauce
2 cloves garlic, minced
1 large egg white
12 medium yellow onion, grated
1/2 cup queso fresco or farmer's cheese, crumbled (2 ounces)
Kosher salt and freshly ground black pepper [2 teaspoons]
3 tablespoons unsalted butter
1 teaspoon ground coriander
1 scallion, thinly sliced
23 cup canned whole-berry cranberry sauce
12 teaspoon minced chipotle chiles in adobo sauce
12 teaspoon lime juice
14 teaspoon lime zest
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • For the Hash: Mash 1 cup of the sweet potatoes in a large bowl. Then stir in the turkey, chicken broth, cilantro, chipotles in adobo, garlic, egg white, 1/4 cup of the cheese, the remaining 1/2 cup chopped sweet potatoes, 2 teaspoons of salt and a few grinds of pepper.
  • Heat 2 tablespoons of the butter and 1/2 teaspoon of the coriander in an ovenproof 10-inch nonstick skillet over medium heat. Add the potato mixture and spread it evenly in the skillet, pressing lightly to form a solid cake. Cook, shaking the skillet occasionally, until the bottom is set, about 3 minutes.
  • Put a large plate over the skillet and invert so the hash falls onto the plate. Return the skillet to the heat and melt the remaining 1 tablespoon butter with the remaining 12 teaspoon coriander. Slide the hash back into the skillet cooked side up (if it breaks apart, simply reshape it into a solid cake). Cook, shaking the skillet occasionally, for 2 minutes.
  • Transfer the skillet to the oven and bake the hash until firm, about 10 minutes. Carefully invert or slide the hash onto a serving plate and scatter the remaining 14 cup cheese, the cilantro leaves, and the scallion over the top.
  • Serve with Chipotle Cranberry Sauce (See Below) if using.
  • For Cranberry Sauce: Whisk together the cranberry sauce, chiles, lime juice and lime zest in a small bowl. Season with salt and pepper.

I love this simple sweet potato hash. It's a bit different than regular hashes because it contains spinach and no meat. If you love spinach, you may opt to add more the the 5 ounces, it's up to you! This is a really healthy side dish. I've even made this for my main course. The hardest part of this recipe is grating the sweet potatoes, but you could even put them through the grater attachment on a food processor if you have one! It serves 2 to 4 depending on if you plan this for a side or main dish. Some people like a zing to their hash, so I included hot sauce as an optional ingredient. Enjoy!

2 medium sweet potatoes, peeled (about 1 pound)
1 tablespoon olive oil
2 large shallots, chopped
1 (5 ounce) bag Baby Spinach, chopped
hot sauce, to taste (optional)

Steps:

  • Grate the sweet potatoes (either with a box/hand grater or a food processor fitted with a coarse grating disc).
  • Heat the olive oil in a large non-stick skillet over medium-high heat.
  • Add the shallots and cook, stirring, until beginning to brown, about 2 or 3 minutes.
  • Add the sweet potatoes and cook, tossing occasionally, until tender, about 7 to 9 minutes more (or longer if you like your potatoes crispier).
  • Add the spinach and cook, tossing, until just wilted, about 1 or 2 minutes more.

2 large sweet potatoes, peeled and cubed into 1-inch cubes
6 tablespoons olive oil, divided
1/2 red onion, chopped
1 red bell pepper, chopped
1/4 cup green onions
2 cloves garlic, chopped
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Add the potatoes to a large saucepan of salted boiling water and simmer until tender. Drain and dry completely with paper towels.
  • Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat. Add the red onions, bell peppers, green onions, and garlic, and saute until tender and lightly golden, 5 to 6 minutes. Season with salt and pepper and remove to a bowl.
  • Add the remaining 4 tablespoons oil to the skillet, and then add the drained and dried sweet potatoes. Cook in a single layer, stirring occasionally, on medium heat until they are tender, about 6 minutes. 2 1/2 cups peeled and grated (on large holes sweet potatoes (about 1 8-ounce potato))
2 teaspoons chopped fresh thyme leaves
1 teaspoon onion powder
1/2 teaspoon kosher salt (plus more to taste)
1/8 teaspoon black pepper (plus more to taste,)
1 ounce finely grated Pecorino cheese (2 teaspoons reserved)

Steps:

  • Preheat over to 375°F. Spray a 6-cup non-stick muffin tin with oil spray and set aside.

Steps:

  • In a large pot, place peeled and diced sweet potatoes and fill with enough cold water to cover. Bring to a boil, reduce heat to a simmer, and cook the potatoes until soft, about 15 to 20 minutes. Drain and cool potatoes. In a large bowl, combine the cooled potatoes, onion, red pepper, peas, garlic, jalapeno, cilantro, and thyme. Season with salt and pepper and serve cold.

3 cups peeled sweet potato or yams cut into 1/2-inch dice, about 1 1/2 pounds
2 large onions, peeled and cut in 1/2-inch dice
1/4 cup canola oil
3 tablespoons unsalted butter
2 tablespoons maple syrup
2 teaspoons ground cinnamon
Salt and freshly ground pepper to taste

Steps:

  • Parboil the potatoes for approximately 5 to 6 minutes in salted water. Drain and allow to cool to room temperature.
  • Meanwhile, saute the diced onions in the oil plus 1 tablespoon of the butter until richly browned and caramel colored. This step insures that all of the onion's sweetness is developed. Cool the onions, then mix with the cooled potatoes, maple syrup, and cinnamon.
  • Melt the remaining buttter in a 10-inch non-stick saute pan over medium heat and add the potato/onion mixture. Take care to pack the mixture tightly in one neat layer to saute and brown.
  • Using the back of a spoon, form the potato and onion mixture into a rounded cake. When the potatoes and onions begin to adhere and brown, they can be flipped over using a large spatula or the back of a plate. Alternately, they may be simply stirred to crisp evenly. If you've flipped them, brown the second side. Serve hot.

2 large sweet potatoes
2 small onions
2 small apples
2 tablespoons olive oil
2 tablespoons organic maple agave syrup (any syrup is fine but with less digestive healthy)
1 tablespoon braggs apple cider vinegar (off brand is fine)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 375 degrees or 350 if using a convection oven.
  • Line baking sheet with tin foil, this makes for easy clean up and reduced oil usage for sticking.
  • Peel and cut sweet potatoes into about 1" cubes, rinse in water and place on prepared baking pan.
  • Peel and slice onions in half lengthwise and again widthwise to make half moons and place with sweet potatoes.
  • Use an apple corer to core and make first slice in apples, then cut apples once lengthwise and again widthwise ( I do not peel my apples as there are nutrients found in the skin, however the choice is yours alone) place on baking sheet.
  • In a small bowl whisk up remaining 6 ingredients together until combined, then drizzle over mixture on baking sheet.
  • Lightly use clean hand or spatula to toss together and covering mixture with sauce.
  • Cover tented with tin foil and add 2 tablespoons of water to bottom of pan to assist in moisture retention, then place on middle rack of oven.
  • About every 15 minutes, peel back foil, use spatula to toss ingredients around to prevent burning or dry spots, add another 2 tbsps. of water, recover and place back in oven.
  • Before removing from oven check to ensure sweet potatoes are done, this can be done with your finger or fork. Peoples taste vary in respect to doneness so use your own judgement in regards to how your like you sweet potatoes.
  • Serve warm with any meal or cool and bagged as a healthy on the go snack.
