SWEET POTATO, APPLE AND LEEK CASSEROLE



Sweet Potato, Apple and Leek Casserole image

Number Of Ingredients 8

2 tablespoons olive oil
2 medium leeks, white and light green parts sliced lengthwise and thinly sliced crosswise
Salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 large sweet potato (about 1 pound), peeled and sliced into 1/2-inch-thick rounds
1 large or 2 medium red skinned apples, such as Gala or Honeycrisp (about 12 ounces), halved, cored and cut into 1/4-inch slices
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
  • In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

I found this in an ABC Delicious magazine a few years ago and have been serving it as part of Christmas dinner since. This is a lovely Special Occasion dish for vegetarians, or a nice side dish for meat-eaters. You can make the roulade the day before; just wrap in foil and pop into the oven to heat through before serving. Prep/Cooking times are estimates.

1 tablespoon olive oil
1 leek, finely chopped
60 g butter
1/3 cup plain flour
300 ml milk
4 eggs, separated
1/2 cup grated cheddar cheese
1/4 cup grated parmesan cheese
500 g sweet potatoes, peeled, chopped
15 g unsalted butter
100 ml light cream
1/2 teaspoon freshly grated nutmeg
30 g unsalted butter
1 brown onion, finely chopped
2 garlic cloves, crushed
1 3/4 cups fresh white breadcrumbs
1 tablespoon chopped fresh sage
1 tablespoon chopped flat leaf parsley

Steps:

  • Preheat oven to 180°C.
  • Grease and line a 39 x 26cm Swiss roll pan.
  • To make roulade, heat the oil in a large saucepan over low-medium heat.
  • Add the leek and cook gently for five minutes until soft.
  • Wipe pan, then add the butter. When it has melted, add the flour and cook 1 - 2 minutes, stirring constantly. Start adding the milk, a little at a time, whisking until milk is combined and sauce has thickened. Remove from heat, beat in egg yolks one at a time, then season.
  • In a separate, clean bowl, beat egg whites until stiff (great job for the bench mixer). Add 1/4 of the egg whites to the roux, then gently fold in remaining egg whites.
  • Fold in the leeks and cheddar until just combined, then pour into prepared pan and bake in oven for 20-25 minutes or until puffed and golden.
  • For the filling, boil, steam or microwave sweet potato until tender. Drain and mash with butter, cream and nutmeg. Season to taste and set aside.
  • To make stuffing, melt butter in frypan over medium heat. Add onion, cook for five minutes or until soft. Add garlic and breadcrumbs and cook for further 3 - 4 minutes. Stir in herbs and season with salt and pepper.
  • When roulade is cooked, place clean tea towel on the workbench and sprinkle with parmesan. Turn the roulade out onto the tea towel and peel off baking paper. Allow to cool for 2 minutes, then spread the sweet potato over the roulade.
  • Sprinkle the stuffing over the sweet potato, then using the edge of the tea towel, carefully roll up the roulade from the longest side, finishing with the seam down.
  • Slice and serve warm with salad and crusty bread, or anything else you desire!

A delicious non-traditional sweet potato pie from famous vegetarian restaurant Greens, in San Fran. Great for the holidays!

1 1/2 lbs sweet potatoes
2 medium leeks (4-5 oz)
2 eggs
1/3 cup heavy cream
1/2 cup milk
3 ounces grated gruyere cheese
1/2 teaspoon thyme, finely chopped
1 teaspoon parsley
1 dash nutmeg

Steps:

  • Preheat the oven to 400 degrees.
  • Bake the potatoes until the center is tender when you stick a knife in it.
  • Prepare tart dough. (Use your preferred pie crust. I use 1c flour, 1/3c oil, 1/6 c water, 1/4t salt and blend in food processor, then mold it to the pie dish with the palm of my hand.).
  • Trim the leeks, and cook 7-10 minutes on medium heat in butter until tender. Add dash of water 3-4 mins into cooking to keep them from burning.
  • Place all tart ingredients into food processor and blend. Mash the potatoes (skins excluded) and add to the mix.
  • Cook tart shell for 10 mins at 400.
  • Pour the tart mix into the shell and bake at 375 for 45-40 minutes or until golden. Gently shake the dish, and if the center giggles loosely, it needs more time.
  • Note: I made this with evaporated milk instead of cream, and didn't have gruyere so used parmesan and goats cheese. I also didn't have parsley, so added more thyme. I doubled the recipe and used an 11x14 dish. It came out great!
