Ingredients

1 -2 egg
1 cup milk
1 tablespoon melted butter or 1 tablespoon oil
1/2 cup maple syrup, honey or 1/2 cup unsulphured molasses
3 cups whole wheat flour (or a mixture of whole wheat flour and rye, or whole wheat pastry flour)
2 teaspoons baking powder
1 teaspoon salt
12 raisins (or any chopped dried fruits, or nuts, or seeds)

Steps:

Beat egg/s, milk, butter and syrup together.
Sift flour, baking powder and salt and stir into the liquids. Fold in fruit/nuts.
Pour into oiled 9" x 5" loaf pan and bake at 350 F for 50-60 minutes. Cool on rack.

Ingredients

1 cup oats (NOT instant)
1 cup boiling water
2 1/4 cups whole wheat pastry flour
2 1/2 teaspoons baking powder
1 teaspoon sea salt
5 tablespoons powdered milk (non-instant)
1/4 cup melted butter or 1/4 cup oil
3 tablespoons honey
1 egg
2/3 cup water

Steps:

In large bowl combine oats and boiling water; stir until mixed. Let sit 2 hours; add butter and honey.
Sift together flour, baking powder and salt; add milk powder.
Beat egg and water. Add flour mixture; add this mixture to the oatmeal and mix well (do NOT overmix).
Turn into an oiled 9" x 5" loaf pan and bake at 350 F for 60-70 minutes, until crust is golden. Turn onto rack to cool.
